Which restaurants should I cut from my last minute 4 day weekend in Mexico City?

Since you're going to be in la Condessa, Xel-Ha seems like an obvious include. I think their Cochinita is fine, never understood burying the wonderful orange flavors under habanero salsa, fine to include on the side, but not overwhelming the subtleties of other seasonings.

Since you'll be there for a while, do hit Bar Opera as well, not for the food, but perhaps after dinner drinks. Don't believe folks who think the dent in the ceiling right inside the door is Villa's gunshot, that's more towards the back where the bathrooms are.

El Tajín in the Centro Cultural Veracruzana in Coyoacan is well worth a visit.

Do I need a pressure cooker?

I recently replaced a 30+ y/o PC with a Magefesa--love it. Kuhn Rikon and Fagor get a lot of mentions here, I chose Magefesa since it's the underdog against Kuhn Rikon (Swiss) and Fagor (also Spanish, but doing quite well.) I don't really see that much difference among them in general terms.

I guess it's about building relationships with the vendors. I shopped there 3-4 times a week for about 3 years, so folks knew me pretty well and would get them or help me find things if they didn't have them. It was on the way home, so the easiest place to shop. I always found that for fruits and veggies, from common to uncommon, it was pretty much the best place to go (but have to get there early while all the stalls are still well stocked). For spices, the best place I know is on Buen Tono around the corner, Molino de [no sé de que].

Angulas, baby eels. About as expensive as cavier, butnot at all worth the price of 100$ an ounce, considering it's just opening a tin.

Best Tapas in Boston (with super good Paella) :)

Not to pick nits, will, ok, it is, but Tapas and Paella are two WAY different things. Tapas are "covers" i.e. little nibbles that cover one's drink to keep out the flies (even if today's multiple takes on nibbles couldn't function as literal "tapas"). Paella is a HUGE pan of food to serve the entire extended family. Seems like you are asking for the best Spanish restaurant, not the best Tapas.

What are these eggs?

High volume egg places (100+ scrambles or omelets) don't crack the eggs to order, they crack 300+ eggs into a strainer, then whisk or blend (as another poster suggested). A 4oz ladle is a 3 egg omelet. So, it's not necessarily powdered/liquid eggs that you're craving.

I'm confused by your reference to "The hill" since Alforno isn't really in the College Hill neighborhood nor is it anywhere near Federal Hill, or any other hill, for that matter, being in the bottoms.

Yeah, that's what I'm saying, I followed up to their post on permitting, and now I can't find their or my post (even using Chowhound's "my posts"), which has me worried.

Any update on this? The owners posted that they were planning on opening "soon" a couple of weeks ago, now I can't find that post or even my own that followed it.
