All Clad frying pan impossibly stained after frying something I suggest getting some cast iron and carbon steel fry pans, where that brown stain will be welcomed as another layer on the non-stick patina. I like stainless, but for frying applications, it just doesn't work. Just my opinion. |

I assume you are talking about mexican [in quotes] restaurants? If you are talking more broadly about restaurants and ingredients beyond a 30 minute drive not being worthwhile, well don't complain about the state of Calgary's restaurant and ingredient scene. |

Paring knife (curve edge or straight edge). I really like this paring knife. Carbon steel clad with stainless, so you have to wash and dry more promptly than with stainless. It holds a great edge. It appears to be backordered right now. |

I picked up some veggies samosas recently, and they were very good. Fried to order, and the filling had nice heat and spicing. In the past I tried the chole [chick pea curry], but found it a bit too salty for my taste. There is a new Bangladeshi market called Shewdesi Bazaar next door to the Samosa Factory that has a butcher, spices, pulses, and lots of freezers with various meats and fish. It is worth checking out next time you are getting samosas next door. Their website is shewdesibazaar.ca, but it is pretty rudimentary. |
