Thanks so much for you reply...Just got back from the Indian market with a couple of kilos of meat and bones....Nearly came back empty handed thou...told the guy I wanted some meat to make Nihari...clutching Spice box in one hand...and he told me he was all out..and did I know you had to cook this for hours, etc. Lucky for me my husband said I made excellent curry, my Haleem was fantastic but had just heard about this one and was rather excited to try it out...He then remembered that he did have some that I could have and went and cut it. I guess the thought of the meat being ruined was too much for him. :) So looking forward to cooking and tasting this dish...

I wonder if you have any comments on making this in a slow cooker? My thoughts would be to make the recipe and then throw it into a slow cooker? I know you would not get a major reduction in the liquid so maybe that would not concentrate the flavours? Would the temperature be too low that after adding the flour you would have a pasty taste? Any thoughts on this would be most appreciated?

To add cider vinegar and salt to shredded iceberg lettuce....Makes a huge difference. Makes a really nice contrast to plated Empanadas or on tacos...

Yes handmade and cooked right away...In the videos I have watched they puff up...not as much as Indian Puri or Pita bread.. And yes your explanation sounds quite logical! Thanks for replying...:)

Just started making them and am having a problem with them puffing up..I have used both a cast iron skillet and a big non stick griddle. Out of the 16 made only ONE puffed.. and that was one in the middle of the batch so I don't think the heat level is the issue? Anyone have any clues?

Cooking pasta for a crowd or in a restaurant setting?

Here is my question. I will be cooking for a group of people that will need service in a 4 hour span. The only thing I have to cook to order is the pasta and I was curious if you can keep pot ( 8 quart or so ) of water boiling and reuse the water? I would imagine it would get very starchy? Any suggestions? How do restaurants do this? Thanks!

Four of us stopped in today for lunch and also found the food to be fantastic! Ordered were....seafood ceviche tostado, Chicken Burrito, Chorizo tacos, Chile Rellenos and Carnitas tacos...the latter two coming with rice, beans and guacamole. Also, Complimentary Chips and salsa. The corn tortillas are home made...chips freshly fried...really good stuff folks!

Ok... finally stopped in today and I must say I am kicking myself for driving by so many times without doing so! This is the real deal for Italian food in the area people! I have not eaten pizza this good since the last time I was in the North End. A simple cheese and pepperoni was amazing. The pepperoni was very finely diced instead of sliced and my first impression was being a little perplexed, my second was glee. Pepperoni pieces on the entire pie. It was a perfect balance of crust, sauce and toppings. Very good! Ditto for the Calzones...15 different combo choices ( I had the Italian cold cut ) very tasty and I agree it's quite the bargain at $7.95 as it easily feeds two.
I think the wine and beer offerings may be new? I ordered a glass of chardonnay and it was quite reasonably priced at 5 bucks. My only complaint was it could have been a wee bit colder...but apart from that iirc 3 choices on white/4 on red, nothing more than 25.00 a bottle and bottled beer was 2 imports and 3 domestic. And a couple of boozy coffee drinks too.

Apparently they are considering doing some alfresco dining when the weather gets better which would be nice. Cool spot to watch the odd plane take off or land ( I digress here :) )

It was slow when I was there so I got to chat with the owner and learnt that everything is fresh and cooked to order. An example of this if you order the chicken parm...the chicken is fresh and breaded to order..no portion controlled/frozen/prepackaged short cuts here....This chef takes pride in what he serves. Lots of interesting dinners on his menu that I look forward to sampling as my finances allow.
So peeps...Do yourself a favour, bypass the crappy poor excuses for food ( Yeah I am talking Olive garden for one !) eat some great food here and help keep a fantastic, hardworking local restaurant in business! my 2c

Ok guys heres the scoop. Back in March or so I stocked up on cornbeef that was on sale. I used most of them up fairly quickly but had one hanging around in the fridge with a exp. date of June 02/09. It being rainy and cold I thought it would be a plan to cook it up. Well when I opened it there was a "off" odor. I rinsed the little guy off and it seemed to smell cornbeefy again. It is simmering in a pot at the moment but should I eat it? Really don't want to harm the hubby so what do you think? tia

BYOB Tex-Mex Bristol, NH. Awesome food

So and myself happened to be in Bristol NH recently and hungry. We spotted "Ivy's spice of life" in the downtown and stopped in and we are so glad we did. First plus for us is that it is BYOB..As you all know the booze bill can really add up and very often is more than food bill. We simply walked around the corner and got some coronas Had we known we would have brought it from home and saved even more. Their was no corkage charge which was nice.

The food was outstanding! Started with the Reverend's Hellfire Chili.. well Amen brother!! Really good and I love it when it lives up to the name.... it really is spicy ..We also had stuffed Jalapenos and these are not the standard pre packaged ( BJ or Sams club ? ) you get elsewhere...these are fresh stuffed and fried. Delish. So had the brisket and reported it was moist and flavorful. After learning that they were also open for breakfast I asked if it was possible to get Huevos Rancheros and was accommodated. Yum..complex sauce, chorizo and eggs cooked as requested. I had an awesome slice of pecan pie and found out all the deserts are made in-house. Looking forward to returning and exploring the menu further.

The atmosphere is pretty much no frills but the food more than makes up for it and they have "all you can surf wifi" for free too.

Too lazy to cook dinner tonight we stopped in and are SO glad we did. I ordered the salmon with pesto topping, broccoli and spinach risotto. It was absolutely fantastic, center cut piece of fresh fish, veg perfectly cooked, risotto ...creamy cheesy and awesome!! I highly recommend it if you are in the area. DC had the pot roast which was served in a bowl with the braising liquid, potatoes and carrots and he also had a bowl of fagoli (sp?) soup which he said was tasty too. Both of us had salads....and again the high quality of the ingredients is clear. The fish was $14.95 and worth every penny ..Pot roast $9.95 and was on the special 3 course meal menu. I think they only run these specials Friday/Sat but I am not sure. Not a whole bunch of atmosphere but the chef/owner sure knows his stuff. I was told that having 3 young children and wanting to see them grow up he got out of the rat race and opened this place and that's a good reason to go too!!
Oh nearly forgot that in part they have Ny style Pizza, an extensive pasta and sauce menu and the best pastrami sandwich I have eaten in NE.

I saved and froze the leftover sauce when I made Pork Deshebrada, a mexican braised pork shoulder, and was wondering if can be re-used to braise another one. The original base was dried chilies soaked and then blended in a food processor. Onions, cumin, garlic, oregano and chix broth were added along with the pork. I am not sure if this is a really great idea or the flavour will be really muted and muddy? Tia for your opinions!

I am wondering if I can sub dried ancho chili peppers for dried New Mexico peppers? Looking in the pantry thats all I have, along with a pack of dried chili Negro. I was planning on using them in the braisng sauce for a slow cooked pork shoulder to be shredded for tacos.
