How do you use fresh fennel trimmings? Or do you?
Instead of using dill, we use the fronds when we make gravlax - gives it a very distinctive flavor. Quite yummy.

Bernards in Ridgefield (upstairs wine bar)
It's only been open for a bit over a month. I hear it's very good. There is nothing bad about Bernard's, WCG. When did you go? They also have a great $35. prix fixe brunch which is excellent. Who ever gets to Sarah's Wine bar first, please report back!!

Great Restaurant within 2 hours from Stamford
Roger Sherman Inn - best restaurant in 2008 according to New York Times - awesome food. I'd also second Copper Beach - rather chere though - more so I think than Roger Sherman.

Just reading up on all the good luck foods for New Year's - forget the chicken, Idealbaker - something about how chickens scratch and that's associated with needing money. Who knew? Go for pork!! Here it's the thing to do.

Salumi, antipasto salad. Where to get in No. Fairfield Cty?
Want to bring a bunch of antipasti - meats, cheeses and vegies up to a New Year's celebration. Any place in the Wilton/Ridgefield/Danbury area??? I usually have a restaurant source who can get it for me but not this year! Help. Thanks,

Danbury CT and Brewster NY
Raaci's (spelling) on route 6 is pretty good - home made pastas etc. Spazi in Danbury on Mill Plain Road - pretty good in a pinch. Chuck's Steak House - lunch is really reasonable - 12 littleneck clams, steamed in wine, garlic, huge salad bar and breads for $11. - really good and damn cheap. Jaipore is really good - have o agree with Scargod on that one. Rosy's is ok but everything is over salted and not sure why as it's not a chain. Bangkok in Danbury - decent Thai food. Can't think of anything else!

Portland OR - Gift Certificate to a Restaurant
Greetings from CT. We want to give a restaurant gift certificate to my husband's sister and her husband but don't know the area. They like fancy schmancy or casual equally and are pretty into trying anything and everything. We'd like to spend about $100 - maybe up to $125. We've searched your boards but can't make up our minds...Carlyle, Tabla, Jake's...just don't know. We want to wow them with a holiday present that they can really enjoy. Thanks for your help. Rodger Sherman Inn "Excellent"????
Yes, pricing is up there but as I said, it's a great place for a special occasion. Food it top shelf, service also. I agree that PB is known for loving white table cloth restaurants and I believe she lives in NC so....who knows. I've disagreed with many of her reviews - just saying that I happened to agree with her on this one. If you're looking for a less expensive route there, head to the bar - they have a bar menu and it's a beautiful bar - romantic, chic and dark.

it was crazy looking inside last Saturday when we went by. When did you go? Haven't seen a bunch of restaurants full up during the week lately. Their food is as good as it was from day one. They've added specials and "large" plates in order to please more types of palates but still love them small plates...

Rodger Sherman Inn "Excellent"????
jp62, Before you pass judgement, have you been since the new chef and pastry chef came in? Might want to try it as we have. We've been to the new place twice now - once for Sunday lunch and again last night before the review came out. The food was amazing - classic food isn't easy to do and it's got lots of little modern twists. We began with cocktails - no one rushed us into ordering - how refreshing is that? I started with foie gras counter balanced by a sea scallop with a cranberry chutney. My husband started with the lobster ravioli and it was as PB described in today's review - terrific. Our friends started with oysters in a mignonette dressing and an order of the foie gras also. All entrees were super - I had a Berkshire pork chop, husband had prawns and scallops in a balsamic hoisin reduction, friends had bass w/risotto (OMG) and her honey had the duck. Out of the four entrees, all were winners and that rarely happens Desserts were fantastic and we passed them around the table. The Harlequin souffle was brilliant as was the frozen chocolate mousse cake and caramel salted ice cream. Service was impeccable. Gotta agree with PB (who herself is getting up there) that the crowd was much older - made us feel quite young in fact, but with a few more foodies zoning in on this place, it should get to be a nicely balanced crowd. This is definitely a place for a special occasion where they make you feel special - this was a birthday dinner for husband and friend and every one was thrilled with my pick of restaurants. Definitely go. And by the by, it's unfortunate but so many reviewers can make or break a place. Sad but true..on the other hand, PB was right on with this place.

Jfood returns to Osetra (SONO) - Excellent & Thank You
Been on my A list for a long time. I still wonder why so many had problems with the small plate concept to begin with - so disconcerting to some. Food here is 5 star. It will be nice to have a clam shack Sunday now, too. Chowder, lobster rolls, omelets - not sure about pancakes on that new menu but Dave always comes up with a few surprises as you note, Jfood. They're also having a Harpoon beer dinner there on 10/14 - the menu looks divine.

Anchovies and your secret uses for them
I add it to olive oil, garlic when making pasta aglio olio. Love it when I saute cauliflower - just add to olive oil when sauteing - also great with broccoli - it gives it an amazing nearly nutty flavor. Heat oil & anchovy - then cook sunny side up eggs. I guess nearly everything is pretty good with anchovies - they melt and no one even can tell.

An abundance of egg whites
Pavlova - always forget how good it is but just simple meringues with bits of candied orange or lemon - even chocolate chips are great - and they freeze well. What are they called? Forgotten cookies or something. Easy and yummy.

I am a fried chicken failure
I marinate the chix in buttermilk overnight and then blot it dry, season the chicken itself and then flour a few pieces at a time in a plastic bag. Then, let it sit for 30 minutes on a cookie rack to "dry". Then fry in a cast iron pan. Most of this is courtesy of Alton Brown with a few variations. Good stuff.

I brought beets
I don't peel my beets before roasting and depending upon size, can take 30 to 60 minutes in an over of 350F to 400F. I also wrap mine in tin foil to do the steaming thing. It's easy to peel them after roasting. I love slicing them and doing a stack of beet, goat cheese napoleon kind of thing with honeyed walnuts/pecans.

Danbury -- what are the best 3-5 things to eat?
They Sycamore is a must - very few places like this - and real malted milk shakes, too. Root beer floats - just amazing. There used to be a mexican place right across from the Danbury courthouse - was terrific but can't remember the name - authentic - and hard to read the menu. Hanna's is terrific - Great Lebanese food - not a large menu but everything is great. You can also pick up Israeli couscous, all kinds of flours and canned and bottled goods for a song. Ridgefield has better lunch places than Danbury, I think, but Rosy's (food is like a Bennigan's kind of place and way too salty) and Molly Darcy's(Irish food - sort of) - both on Mill Plain Road - have outdoor tables and the weather is supposed to be good. If you get to Ridgefield, check out Luc's( great French bistro food), Caputo'sEast Ridge Cafe (good burger, salads, pastas), The Tavern (at The Elms) for lunch - all three very different from each other - and all three have outdoor dining. Tried it,loved it and as is the case in so many places, wishing (selfishly, I know) that they were still in obscurity. Still, wish them the best because their food is wonderful. End of article made me wipe a few tears off my cheek.

Copper Beach Inn & Environs-one more time
Just got back from Westbrook area... Lunches included both Bill's and Lenny & Joe's Fish Tale -- belly clams at both for me - had to say that Fish Tale was better. Monkey Farm was a dive but the lobster rolls were awesome. Pazzo - great Boom - great Liv's - amazing Thanks to all for helping with the planning - we had a great time. Wanted to get to Gabriellle's but they were only open for dinner - so little time!! Your advise was invaluable - can't wait to go back.

Thank you JeffFitz and thanks for starting this thread again as I missed it back in December -- hope they're open on Sunday because I'm there. Also grew up in the Bronx and not much of the pizza up here is all that great....and don't you hate when people use knives and forks? Still can't get used to that.

Danbury/Ridgefield/Brewster restaurant for special occasion
In no particular order - not sure what type of food you like: Luc's - in Ridgefield - excellent bistro food and they make a mean Martini. Bernard's - Ridgefield - excellent food and ambience, a bit pricey but worth it. *They now have a "farmer's market" menu on the weekends that sounds wonderful. The Elms - Ridgefield - we prefer "The Tavern" - great in the winter, too, with fireplaces etc. Caputo's East Ridge - Always consistently good eats - not Wow menu but traditional Italian/American food - friendly service. Brewster has a couple of places - Capriccio - go for lunch - beautiful views. Rraci's - Brewster on Rte 6 - haven't been for awhile but it used to be fantastic. There are some wonderful ethnic restaurants - Brazilian and Portuguese on Main St. area in Danbury but don't know the names.

Thanks BobB. Beef terminology is really very regional. Just weird that the NYT would be so adament that flap is not any of the aforementioned. I'll go for the skirt and try it this weekend.

Skirt Steak! what to do? what to do?
I hesitate to begin this thread again as the names of cuts in different parts of the country are very different but The New York Times Sunday magazine section had a recipe for Carne Asade - and guess what? It asks for flap steak -- which is not, according to the article, hanger, skirt or flank. Where to get it? I can get hanger and skirt at Caraluzzi's in Wilton (Georgetown area) but what about flap. I am dying to make these. I googled "flap" and hear they have them at Costco's but not a member....anyone know. Thanks
