Oven roast dried oyster?

My dad was asking about is it possible to oven bake dried oyster. He was saying he tried it at china and it is tasty. Anyone ever tried it or have any idea how to proceed. My guess I need to completely rehydrate the oyster first but not sure what to sdo next lol.

And instead of a rack, I tend to use a bed of vegatable and chicken broth as the bed to made a good tasting sauce.

I decided to dry brine the turkey this year and i am thinking about how to deal with the breast cooking time. The most popular method either flip the bird or have a breast foil plate to prevent the overcooking the breast meat.

I am wondering is there good spot to order fried turkey from? Has anyone tried Mr. Bill fried turkey? I tried their stand at maxwell market and their smoke turkey is quite awesome. I look them up ands they does catering too and I noticed their fried turkey is $50. Anyoen try them before?

I am sure i added enough salt. My guess he didnl;t like the semi raw favor of the vegetable. I was making the Tortilla Soup. I am thinking... would roasting the vegetable in oven before putting it in vitamix improve the soup favor?

Good Vitamax soup/smoothie receipt?

My family bought the costco vitamax 6300 last week and we been loving it so far. However, my brother found the soup taste disgusting. Naturally it is vegatable based soup and not as "tasty" as canned soup lol. Anyone here can recommend some good receipt for me to try? I am also thinking of mading coconut/manga smoothie... any idea how to proceed?

Baja Fresh Vs Chiptole, a strange tale

Burrito Ultimo is the best... combo it with Enchilado style and it streamroll ANYTHING chipotle have to offer. In all logic sense it Baja Fresh should win.

Chiptole vs. Baja Burrito
Rice = Tie (Mexican burritos = no rice, just meat + pico or guac)
Salsa = Baja, WAY more different choice and free
Chips = Baja, Free chip with every burrito
Burrito = Baja (more meat and more choice like fish and shrimp).
Price = Tie
Tortillas = Chipotle wins
Vegatable= Baja ; Fire roast vegatable>>>> cold lettuce
temperature of food = Baja ; no cold lettuce

And i don;t care if the place is clean or it is organic, as long as it taste good and it is HOT in temperature, it is a win for me. WAY too many time I have a stone cold burrito at chipotle.

I have to admit it is faster at chipotle but that is about all it does. What do you expect from assembly line burrito builder. AT BJ, they grill their shrimp fresh thus it take time to cook.

It always puzzle me that how come Baja Fresh can't compete with Chiptole, specially it is Baja Fresh that made the hot and fresh burrito out of the grill while Chiptole is just hot water warmed meat. There are not much difference between the price if u consider the monthly baja fresh coupon. My logic is: Better food= more customer.

Turkey done way ahead of schedule? HELP

I have a 12.7 pound turkey and according to calculation it would take around 90 minute to 120 minute to cook it. However, it is only around 70 minute and the breast meat is already at 161 degree, which is done. Is something wrong?

I am thinking of plan of attack. Should I brine it tonight, take it out tomorrow, rub the butter seasoning and put in the the fridge overnight to dry it out or brine it tomorrow night for 8 hours, take it out, add butter, and return it to the fridge to dry it?

Turkey brining and basting question.

Hi all, I got some question on turkey brining and basting question. I know that brining a turkey will made the turkey moist and juicy even after cooking but I am not quite sure on how to brine it. What is suppose to be in the brining solution beside salt? I watch one of the Alton Brown piece but it seem it is a lot of ingredient for brining. Also, any idea how long am I suppose to brine it for? Some people say a day some say 2-3 days. My fridge is not big enough to hold the pot for brining.

As for basting, is it needed or as some people call it evil?

I always tend to use some type of foodnetwork receipt and they always seems to do fine but I want to improve upon it this year. I always some use kind of garlic herb favor butter and rub it all over the turkey and under the skin and it turn out pretty favorful.

Home made Sukiyaki issue

Well... I am actually buying the chinese style hotpot beef at my local chinese super market. One of them is regular fat beef sliced paper thin and they actually have veal beef sliced too.

I know that Wagyu beef would be divine very good for this and perfectly fine for holiday dinner but I felt that Wagyu beef is a bit over price for normal weekend dinner. There is mitsuwa market 40 minute away so if I really want to I can get the beef that are designed for shabu shabu.

Home made Sukiyaki issue

Yes, I mean the meat is tough. I know it is not meant to be cook a long time but isn't it traditionally in japan to keep iot heated during the serving process?

Yes, I increased the sauce ingredient by a bit but ,maybe not enough.

Another question, is it possible to use sugar substitute for Sukiyaki if someone is diabetic or should it taste completely different?

Home made Sukiyaki issue

I was trying a Sukiyaki receipt that I found another day and it was pretty decent.

Sauce was good but the meat is a little rough. I bought the hot pot meat at a near by chinese supermarket instead of using sukiyaki or shabu shabu beef. However, when I try again a few days ago, I used a bigger pot, a but more ingredient like vegetable and mushroom and more meat ( Last time I used 1 pack of beef and 1 pack of pork and this time I used 2 beef and 1 pork) but at a slightly lower grade and used low sodium soy sauce; I also used a fire to continue heating during serving. The end result.... meat is VERY rough, sauce is tasteless.

I understand sliced beef is NOT design for long cooking time but almost every sukiyaki receipt I have seen, even the Bobby Flay one, said to brown the beef first and then add sauce and then the rest of the ingredient. What caused my epic taste failure the second time around? Adding more vegetable AND using low sodium soy sauce probably have something to do with the poor taste sauce. I guess the problem lie with the beef.

I think of two solution. Either use the high grade beef I used the first time around and not having a heating element under the pan during serving OR I can just use the soy sauce mixture to cook the vegetable and stuff and add beef during serving like a traditional chinese type hotpot to ensure the beef is tender but without richness taste of the sukiyaki sauce within the beef. Any suggestion?
