maple syrup instead of corn syrup in candy recipe?
Thanks everyone! Glad I checked with CH before trying it out. Will stick to the corn or invert sugar syrup. I guess I'll just have to make candy more than once a year :)
maple syrup instead of corn syrup in candy recipe?
Hooray for holiday baking! I am making chocolate almond roca which calls for a 1 tbsp of corn syrup. I don't have any corn syrup so am thinking of swapping it with maple syrup. I never use corn syrup in any other holiday baking so am reluctant to buy a whole bottle of it just for one occasion. Any thoughts on whether this is an ok substitution?

how to make restaurant style Thai Curry?
Absolutely! I can't find fresh lime leaves where I live so I buy the frozen ones. I can't taste the difference either. I try to keep a can of coconut milk, red curry paste and frozen lime leaves at hand so I can whip up a good thai curry any night of the week with any seafood/tofu/meat/veggies in the fridge. If I'm organized, I buy lemongrass. I also freeze my red curry paste (Maesri) in 1 tbsp portions too if I can't get through the can quick enough.
ISO sourdough biscuit recipe
I tried making sourdough biscuits from my new starter last week and they turned into little hard hockey pucks. I've been feeding my starter for a few weeks now and expanded it 2 days before making the biscuits. Somehow it failed to raised the biscuit dough. What went wrong? and can anyone share their favorite SD biscuit recipe?
Thanks ChowHounders,
Agnes
Leftover ricotta, any ideas?
I made an arugula pizza bianca last night, it was pretty tasty and easy. Just spread ricotta on pizza shell, sprinkle with parmesan and mozzarella and bake in oven. When bubbling, take it out and sprinkle arugula, salt and pepper and drizzle with extra virgin olive oil.
Cabbage overload!
Perfect, I've been getting onions and carrots for the past 2 weeks too!
Cabbage overload!
Thanks for all the great suggestions! I will definitely try some of them over the weekend.
Cabbage overload!
It's the third week in a row that I've gotten a head of cabbage in my CSA basket. Mostly I use cabbage as coleslaw or toppings on tacos but I need some better ideas on how to use it all up.
TIA,
Agnes
Fresh Kale: Ideas??
I'd be interested in your white bean stew - I just got a big bunch of dino kale in my CSA box this week and have never cooked with it before! TIA
What to do with left over yolks?
I took your suggestion and used the curd/whipping cream between a layered lemon cake! I was surprised at how easy and delicious it was to make. definitely a keeper - Thanks!
What to do with left over yolks?
Mmm, I have to try that - Been wanting to try Alice Waters' lemon frosting where you fold lemon curd into sweetened whipping cream. It would be pretty tasty on lemon or chocolate cupcakes!
can a sourdough starter be saved?
Hi everyone,
I'm a beginner bread maker and have had great success with Bittman's no-knead bread recipe. My friend gave me some sourdough starter, it had been in her fridge for about a month with no feedings. I gave it some flour and filtered water last night and waited 12 hours. Nothing really happened, there were a modest amount of tiny bubbles. It smells like sourdough and doesn't have any weird colours or anything. I went ahead with the rest of the recipe (and saved 1/4 cup of starter for the next batch) but the dough hasn't risen at all after 6 hours. Is the starter dead or should I try using the starter again?
TIA,
Agnes
What to do with left over yolks?
Mmm thanks for that suggestion, I had never heard of floating islands before!
What to do with left over yolks?
Help! I'm learning how to make meringues and as a result I'm left with a half dozen egg yolks every time try a new recipe variation. Does anyone have creative suggestions on how to use up yolks?
I'm tired. Need inspiration: kid-friendly food.
Home made macaroni and cheese - I just stir marscapone, fontina and parmesan cheese into hot pasta until it melts into a delicious cheese sauce. You could also throw in some cubed ham and peas to round out the meal. If I'm feeling not so tired, I sprinkle herbed breadcrumbs on top and broil it until golden brown.
Good melting cheese for pasta? Suggestions?
I've tried and really like brie mixed in with garlic, tomatoes, fresh basil and toasted pine nuts.
