Where to find cocoa butter?
Places like Aubut and Mayrand will have it. Barry sells it in powder form and is trying to market it as cooking fat for savoury dishes. Meanwhile, chocolate makers are removing it from their product and replacing it with butter oil. Can you feel the irony?

Is there a method for cooking red cargo rice so it won't come out too chewy or gummy?
... Or this just the way red cargo rice is and therefore inevitable?
I've been cooking and eating red cargo rice for a while now, and although I like it fine mixed in with other ingredients, when I eat it by itself I find too chewy and gummy. This is not a problem I have with brown rices. Even though they do have that sort of texture, it's not as pronounced.
So this my question to you good Home Cooking folk. Is there a method for cooking red cargo rice so it won't come out too chewy or gummy, or do I just have to suck it up?
BTW, I'm aware of the existence of other types of red, brown and black rices and I have bought, cooked and enjoyed many of them. This question is specifically about red cargo rice because I just happen to have four pound bag of the stuff to get through.

P.S. For those who might want to know, I cook the rice the same way as all my other rices. 1:1.5 rice to water ratio, simmer for 15-18 minutes, rest for 10 min, fluff and serve. I pre-soak when I can, but it doesn't seem to make a difference.

I reckon you've only been to Meu-Meu and not to other ice cream places in "frenchier parts". Le Patio and Bo-bec are both as traditional as Ripples and the prices are quite similar. Leo le glacier, Point G and other fancier places are priced similarly to Havre-aux-glaces or Kem Coba. Prices at Meu-Meu are the exception not the rule.

Still no bread delivery on Mondays. And from what I've gathered, no new produce or fish either. Monday is not the time to go to the supermarket.

Julieta Cuisine Latine
Went again last night for another perfect meal. For apps we had the cachapa with shrimp and huitlacoche and the salmon ceviche. The cachapa was just as great as before and the ceviche was very well balanced and tasty. Mains were seared duck breast over shitakes, radish and a plantain puree. Flavours were perfect. It was a very satisfying dish. The only thing it lacked was a bit of garnish to make it more visually appealing. The other main was red snapper filets served skin side up with a coconut milk sauce and and side of quinoa. Very good quality fish. It was both beautiful and delicious. Sorry I don't have more details about the dishes. I wasn't taking notes.
I'm still surprised there aren't more people going to this place. The food is wonderful, the staff is super friendly and the value is amazing. If I lived in the neighbourhood, I would be at Julieta all the time.

El Buen Gusto a.k.a. Délicieuses Pupusas on Beaubien has closed. The windows are papered up and there's an À LOUER sign.
Ripples ice cream (Montreal, Plateau)
I really like Ripples. It's a lot more traditional that some of the places more talked about on this board, but they do make some good ice cream. Is it worth going out of you way for? I don't know. It's certainly worth it if your around those parts. I don't remember their soft serve being anything special.

My understanding is that they do breakfast, lunch and dinner, no brunch. So at lunchtime, you get the regular menu.

Strategies for Dining in Barcelona with a 10 Year Old
Since you're there right now, you might be interested in the De Tapes Per Barcelona event. It's a sort of festival where bars and restaurants try to outdo each other to win the prize for best tapa. It's 2,40€ for a tapa and a glass of Estrella.

Strategies for Dining in Barcelona with a 10 Year Old
One little note on Granja M. Viader: They only make horchata in the summer. If you order it in the winter you will get the bottled stuff. In that case it's better to get the Llett Mallorquina which thay make year-round.
AFAIK, other Granjas in the Ciutat Vella do not make horchata, but there are a number of horchaterias in Barcelona.
And yes, Granja Viader is a great place and a definite must for tourist. Their flam de mato and mousse de crema catalana are really delicious.

I don't know about the cooked to order part. When we went, there were a bunch of pre-cooked waffles at the waffle station. Although when one lady asked the manager if she could get a fresh one, he seemed happy to oblige.
In Montreal for the vict. day weekend, where to get good food?
It's open every day of the year except dec. 25-26 and jan 1-2. Whether individual stalls open is entirely up to them, but I would expect most of them to be open.
Good "French Canadian/Quebecois" food
Max, the restaurants you listed are not traditional Quebecois and offer no traditional dishes. I'm not even certain I would call the current bistro/market cuisine offered at these places modern Quebecois. It's mostly French food with some local ingredients. Traditional Quebecois is not based on this type of French cuisine.
I don't think we even have a traditional Quebecois restaurant in Montreal that's open for dinner.
