Just made the BEST pizza crust I've ever made! Need the perfect sauce
I order my sauce from http://www.pennmac.com/page/27/pizza-baking-supplies A #10 can is $5 which is about a gallon can. They have several brands and they are all good. You will have to try them all. These are the sauces that most pizzarias use. I split the can into freezer bags and freeze the bags and thaw as needed. My flour I get from a local pizza place, All Trumps 50# bag. That you can get online. My pizza stones are in the bottom of the oven. I bought them at Lowes for a few bucks. I grind and make my own Italian sausage from fresh pork, if you can find ground fennel it's better than the store. Pizza is life long journey!!

Where to buy *flour* based tortilla chips?
They are indeed chips made from flour tortillas, not corn. I have made them many times. They are golden brow and light and crispy. Not sure what resturant has them. I like tham as a change of pace at times. They are very easy to make.

Help with Tartar Sauce
I use either mayo or miracle whip, depending on what I have and sweet relish with the Mayo and dill relish with Miracle Whip, and always use prepared horseradish, like cajun. Lemon juice, worchestershire, finely chopped onion and a little tabasco, etc...

I found , quite by accident, that when stir frying your veggies the wok or pan should be hot enough to char the veggies. It definatly gives your dish an authentic tatse. Due to the very hot temps the woks in commercial kitchen have.
Enchilada sauce?
Some enchiladas aren't baked, if they are it is just to melt the cheese on top. All ingredients are heated and assembled and thats it. That way you don't have a problem with stuff drying out.

We almost always had store bought white bread for dinner, unless we had tacos or something where you would'nt want bread. (Sometimes my mom would make pop-overs). My dad would take a piece and tear it in half and spead butter or oleo on it and then fold that peice in half and give it to us kids. My Grandma in Kansas always made bisquits. and my other grandma, also in Kansas made a loaf of bread everyday. to serve for lunch and/or dinner.

I had an older model that i bought around 1980, wore out the motor on and I have a new proffesional model and the original attatchment works with the pro model fine.

I can get them 3 to a package for about 3 bucks. They are about the size of a medium potato. Skin them, cut into 1/4 in. slices dredge in flour then buttermilk the flour again. Cream gravy on the side..Hispanic markets will sometimes have them. The regular stores don't.

I buy 50 lbs, All Trumps high gluten flour from a freind that owns a pizza joint for 15 dollars and store it in a large contaner i bought from a resturant supply . It works for almost everything i make.

Chipotle in Adobo Sauce Uses?
add it to your favorie bar-b-q sauce. Marinade chicken or beef for the grill. I wished you could buy just the adobo sauce, marinade pork with it for pork fajitas , awesome. I make my own adobo sauce but its kinda time consuming.

Why aren't there any women making the pizzas in pizzerias?
Pizza making may be one of those male dominated types of cooking. Like bar be que. Not to say that there arent women bar be que and pizza chefs out there. I would love to go in a place and see a woman tossing a pizza or manning (no pun intended), a smoker.

How do ripen chlles if they are picked to soon
If a chilie has started to turn, say from green to red then it will most likely ripen to a full red. But if not then it will stay whatever color it is. Same as tomatoes

What you want is a sauce for wings, not a buffalo wing sauce. Well maybe a chinese style sauce might be what you want. There are tons of recipes for wings on the net. Search and you will find.
Best Ice Cream Brand
I don't eat that much ice cream but I like the bluebell, My wife from Tennessee swears the Purity dairy in Nashville makes better ice cream. I'm from Texas, she's from Tennesee, so go figure.
