Thanks very much for your suggestions, the idea of using different methods for different knives is very helpful. I also probably spent more than a half hour looking at the Korin website and now will go visit and read about getting some sharpeneing stones.

knife sharpener on NJ shore?

I know what you mean about people damaging knives (as I mentioned to Lizeymom). I have a Sabatier chef knife, a Shun chef knife, a small Globe knife (the one that was previously damaged), and a variety of others.

Do you prefer to sharpen your own knives? Do you use a machine or stone method?

Hope this isn't too late. I'll recommend Harpoon Willies near the river off Rt.70 (opens at 2pm) and Wharfside near the beach in Point Pleasant (opens at 3pm), you might also try Europa South in Point Pleasant - I've heard that it's good but haven' tried it yet.

As for markets, there's Wegmans on Rt.35 just north of the Asbury Circle that's pretty good, it would be best to take Rt. 18 to get there if you're good with directions, the Shop Rite on Rt.34 by Brielle is ok, and there's also a cheese shop in Bay Head that's fun to visit:

Shad Roe?

Great writeup Slammin. Do you know if shad roe at this time of year would be local or from down south?

I dredge the roe sack in a cornmeal/red pepper mix than then pan fry with bacon as you describe, I can't remember where I read of this method. I think I've also done an initial poaching (before pan frying) so that it cooks through. It does explode and send eggs flying! I'll have the whole egg sack pair for dinner and would describe the taste as fishy/salty.

Hi, I tried this recipe yesterday - used ginger slices with some sugar and it all went fine.

Today I had it with melted sweet Gorgonzola on toast - very good, strong blue cheese and toast foundation with light fig flavours above.

Mustard oil - is it safe eat and cook with?

If you find any "strong" mustard oil please post where you found it. I went to the Indian place in Central Square recently looking for mustard oil after the Times article. The owner directed me to a sort of blue and white striped bottle, which I know is good but not very strong, but I chose the one saying "pure mustard oil" - it definitely was not, very little mustard flavour and lingering doubts about what sort of oil it really is.

A while ago, back in the 80s, I innocently bought the "massage" form of mustard oil and used it for cooking - extremely potent, just a drop or two was plenty for most uses. An Indian friend mentioned that it might be unhealthy but I thought it was great!
