Thanks for responding but golly . . . sending someone to do a search on google is hardly in the spirit of sharing good information. I'm looking for ideas from folk who have found a supplier they really appreciate and would recommend.

Ok neighbours . . . . it is December 1. I've not bought a fresh turkey for a few years and the butcher I last bought one from is long closed. I recall having to place an order in advance.

Obessive Compuslive Knife Sharpening Disorder

I sat down and sharpened every knife in the house before Christmas knowing I would be doing a lot of cooking. The knives I use the most are sharpened 3 or 4 times a year.

My wife and I really enjoy the Golden Palace at Torbram and Northpark. They have a fairly small establishment with a Chinese food buffet. Being a small place they can't have as many dishes out on their buffet as the huge multi room places. This being said what they do have is very well executed. Great place for take out as well.

What do you roast your turkey in? I am reluctant to purchase a roasting pan, and considering a Staub piece instead--but which? Thanks!

I use a 11" x 14" roasting pan and rack from Chicago Metallic. It is commercial restaurant stuff, not expensive. I really try to stay away from Teflon as I've seen a few disasters with the Teflon letting loose and being stuck to the food. (they also have a 12" x 17" version)

Great list. I lie awake running through what I'm going to do when in my head. One of the trickier parts I have is our kitchen is where crowds seem to naturally congregate. As I get down to the wire I'm rushing about somewhat like a restaurant . . . but then uncle Bob has plunked down a box of wine on the counter . . . and yes there is someone else's cell phone and aunt Clara is there with whoever blocking the way so I have to walk around three sides of the island in the centre rather than going through. . . "I'm sure you will be more comfortable in the living room . . . "

That being said I'm thinking chafing dishes might take the stress off a tad.

Shawarmas in Toronto

I was disappointed many years ago when I ordered falafel at a fast food place in Montreal . . . went by the picture thought it was going to be meat. I live off of Kennedy Rd. Heart Lake area never had shawarma . . . what would you have my wife and I try? We have no fear.

I too use zip locks for batteries. I use them for things I want to keep together like a multimeter and instruction manual, lan and telephone connectors and the crimping tool to apply. nuts and bolts for an old bed are in a zip lock and taped to the bed stored in my basement. Er. . . chow related. I buy my spices in pouches and transfer them into small shaker jars . . . the pouches hold more spice than my jars so . . . I tie them off with twist ties and store in a large zip lock in a cupboard. Some of the spices are quite potent but with this system the smells are kept at bay.

A silly thing really but an egg slicer. It's a dollar store thing but how else can you easily slice a hard boiled egg. I've tried a knife but make a mess of it every time.

I purchased a Belgian deep waffle maker about 12 years ago. I've used it twice. The unfortunate thing is that I was thinking of the waffles my mother used to make in a Sunbeam grill press that had reversible plates. One side was for waffles and the other flat. You could lay the thing out flat and do pancakes and bacon and eggs like a restaurant grill or you could use it like a grill press for sandwiches. I think it was used at least once a week and would probably be still in use today close to 50 years later if my mother had not passed away.

Are all pressure cookers made equal?

I use a 5.7 Ltr. Mirro that I picked up 3 years ago for under $30 at the local grocery store. I make stew frequently and I also use it to cook beans. It's a pretty simple device with no pressure meters etc. So this is the bottom of the range but gets stuff done. That being said it is a wonderful to get the tasty but tough cuts of meat fork tender. Fall is here . . . stew season!!!

Whetstone use

Finding the angle the knife was previously sharpened at takes a bit of practice but really there is nothing particularly daunting. The more costly the knife the more certain you may want to be of your skills before starting.

Fresh curd is a good thing. It is hard to credit that there are zero/nil/zap/zonk/nada/zilch cheese curd producing spots in the Toronto Area.

Coffee maker, coffee grinder, kettle, toaster, can opener. I haul out the food processor, stick blender, and rice maker on a fairly regular basis. In descending order of use from not ofter to virtual obscurity . . . blender, stand mixer, waffle maker, indoor electric BBQ

I guess you could make a couple of dozen of these from an old bike inner tube. I use a kinda bit of rubber mat to do pretty much the same thing.

mozzarella in fridge - how long?

Yes cheese can be frozen. It can change the texture a little depending on the type of cheese. I frequently buy large chunks of Parmigiana and break it down into manageable chunks package separately and freeze what I'm not going to use immediately. As far as going bad, if I see mold I cut it off and transfer what is left into a fresh container. This was how I was taught but I'd like the food safety experts to pipe up now.

Too bad you didn't get out to Peter's on Eglinton it is great. Humongous portion sizes and as you mention using Lester's meat. My favorite is the Montreal Deli on Dundas just West of 427. Their old fashioned platter is just the right size for me, probably Lester's meat as well, and great Montreal style service. Wait staff that can get you in, served, and out as quickly as you would like . . . without being rushed.

While I don't tend to get as upset about things as Montrealer70 I have to mention that I can not find one darned thing that I like about Katz' deli. I've gone all of twice because I had business in the area and it is where someone wanted to go for lunch. Both times the meat was dry and you really needed to wash it down with something. . . anything. . . but the tiny glasses they give you for cola ain't big enough . . . you need a big gulp.

Oh. . . I should mention, if it makes a difference, I am an ex-Montrealer

Power Requirement for Chest Freezer?

I'm not an electrician but heck I've taken physics. Our freezer is about 7.5 Cubic Feet. It is rated at 5 Amps. On a 15 Amp circuit that would leave 10 Amps for other stuff. A 100 watt light bulb is 0.83 AMPS so you could run about 10. You really would not want to have your freezer on the same circuit as any of the following. . . hairdryer, kettle, toaster oven or other high wattage or amperage stuff.

Ketchup on Hot Dogs

I've grown to like hot pepper rings on my hot dogs. I like HP sauce but I still put ketchup on my scrambled eggs . . . corned beef hash etc. When I do fries at home I like 1/2 HP and 1/2 ketchup. Growing up in Montreal there were many places that did the hot dogs in a grill press . . . and the buns used to be like white bread on the outside . . . they put butter on them then grilled them in the press till golden brown and crispy . . .mustard, relish, onion, shredded lettuce and all of 75 cents.
