Scan Pan? or Best Non-Stick Pan?

I've used a couple Scan Pan pieces for over five years w/o complaint -worked well, easy clean up and use. Generally pleased enough w/ them.

However, about a year or so ago I bought a couple of Cusinart's Greenware skillets that have all but replaced my Scan Pans in rotation. Greatly impressed w/ their non-stickiness (best I've experienced) and how they've held up so far.

So my Scan Pans have been demoted to bench warmer status.

Earth Pan vs Cuisinart Green Gourmet vs Starfrit ?

For their purpose I am more than pleased with Cusinart's Green Gourmet non-sticks -I've been using the omlette/ frying pans with great results. They really work well for me.

However, as another poster has stated most of my cookware is not non-stick pieces -copper, cast iron, stainless steel all have their places and uses. But when the need arises these green gourmet pieces have out preformed anything else I've seen.

Where to find excelsior (wood wool)?

Walmart in the kraft section -should have a choice between dark green and natural wood.

Fried Chicken ... to soak or not?

The front runner so far for pan fried chicken so far is a 5+ day bath in buttermilk, salt, pepper and sirracha (rooster) sauce.

And a fry job in about 25% lard and the rest crisco.

The chicken gets a little of a sour tang to it that is quite pleasant.

Have scanpan pieces and it's pretty good. Much more impressed with Cusinart's greenware non-stick (and it's not break the bank expensive).

Does sushi have parasites?

It is safe to eat saltwater fish raw, however, eating raw freshwater fish is not so much.

Think on it for a moment, there is no trout or carp (or other freshwater fish offered on sushi menus) for a reason. These eggs and parasites will survive the GI tract and make life "interesting". I believe that it is osmotic shock that does marine parasites in the GI tract.

Salmon and eel do not count as freshwater because move between fresh and saltwater, however, I would not be eating either raw while the young had yet to migrate out into the ocean -after they come back into freshwater, acquired marine parasites die and they are safe.

where to get or eat abalone in san diego

For the last few weeks Ranch 99 Supermarket in Kearney Mesa has had live farmed (I would assume from Carlsbad) abalone in the seafood section -small little things, but not that expensive either.

Anyone Tried Poach Pods?

Brushing them w/ oil didn't work out so hot for me, but a quick spray of non stick spray worked quite nicely.

I like this beastie. They come in many colors (if you care) and all but the silver are non-skid silicon(?) skinned. Super convenient.

Can I like Brussel Sprouts?

A bit of trivia that I recall from an organic chemistry class is that there is a chemical in brussel sprouts that causes some percentage of people to find them horrid beyond belief, while remaining undetectable others. The teacher passed a vial around which most people couldn't detect a thing while a few made awful faces when they smelled it. Something about racial genetics, much like lactose intolerance. Some people have an inescapable reason for despising brussel sprouts.

I'm one of those who couldn't smell a thing.
