What will/did you have for Christmas dinner?

We started with roasted red peppers stuffed with feta, tomatoes bocconcini, a prosciutto salad, marinated mushrooms and eggplants. Followed with risotto alla millanesa, filet mignon with a wild mushroom & red wine sauce, roasted lamb shoulder with roasted potatoes, creamy codfish casserole (phenomenal...), cauliflower gratin, and roasted brussel sprouts. The evening ended with a chocolate mousse and a tangerine crème brulee tart.

Your easiest, lowest-maintenance, delicious New Year's Eve casual party type-dishes

One of my favorite recipes, always impresses my guests. Incredibly simple, and delicious. Pistachios can be changed for walnuts, hazelnuts, pecans, or almonds. I think the color of pistachios looks best though.

Grape truffles with goat cheese and pistachios
Yield: 6-8 servings
Pistachio nuts, shelled, rough chopped 1 cup (1½ pounds)
Goat cheese 8 ounces
Grapes, seedless, stems removed and wiped clean 24 each
1. Preheat oven to 350ºF.
2. Spread nuts on an un-greased baking sheet and toast in the oven for 7-9 minutes. Remove from the oven allow to cool. In the blender or food processor process nuts until finely chopped.
3. Put a ½ tablespoon of the goat cheese in the palm of one hand an in it roll a grape, shaping the mixture around the grape to coat it. Repeat the process with the remaining grapes and chill on a sheet pan for 30 minutes.
4. Roll the cheese-coated grapes in the nut mixture to cover completely and chill for 30 minutes or until the coating is firm.

Top Chef Really Important Things To Do Before You Start the Show

Keep it together. I hate it when people have a meltdown in the kitchen. I'll never understand how blubbery and over-emotional chefs become executives, or sous-chef's if they can't keep cool in these kinds of situations.

This lack of dessert knowledge kills me every season. Learn to make crème anglaise, or pastry cream. They are so similar and basic, and if you know how to make them you can make ice cream, flan, crème brulée.. anything....

1) I'd like to familiarize myself better with spices, and ethic ingredients
2) Use produce, or meat cuts I don't often use
3) Eat more fish
4) Incorporate more beans/grains in my diet
5) Set up a weekly food budget

Gosh. There doesn't seem to be any. I actually reside in Montreal and am looking for the pasteis for my boyfriend in Chicago.

Who knows, maybe I'll start shipping them to you unlucky Chicago folks. ;)

Portuguese, Pasteis de Natas?

I was wondering if anyone knew where I could find pastas de natas in Chicago? Whether it's at a café, or at a Portuguese restaurants. I spent an hour googling it, and it seems to be unavailable in Chicago.

Any help would be great :)
