What's for dinner XXIII?

Since I just started a healthy cooking blog, I am putting myself under enormous pressure to eat that way every single night - and that's a good thing! So last night it was tacos with beet greens, pinto beans, roasted sweet potatoes and avocado.

Healthiest Breakfast Possible

I go back and forth between "good carbs" / soluble fiber breakfasts like oatmeal, and egg white omelets with various combinations of vegetables. My favorite veg additions are spinach, mushrooms, and cherry tomatoes.

I think pizza is definitely the weak link here. The the $8 bowl of spaghetti is the best bargain around - and it's great, not just adequate. The spinach salad with figs is lovely, too.

What do vegans eat on Thanksgiving?

I don't care for Tofurkey, and hated the Celebration Roast thing mentioned above. However, I think vegetarians deserve protein, not just side dishes. I'm going to London soon, and have compiled a list of possible choices. Tending heavily toward vegetarian/vegan places, plus Italian, Thai or Vietnamese. Indian may be out, because I can't eat ghee or coconut milk.

I think the oil crust I posted above is pretty flaky, rather than crumbly. Did anyone try it? You will be surprised how good it is!

From someone who suddenly found themselves with a blocked artery at the tender age of 44, let me just say please stop eating that stuff! I regret every pie crust made with shortening I ever ate ...especially now that I make a healthy one (see above) that's just as good!

can a pie crust taste good without butter?

I have a recipe from Saveur that might be the one you are referring to, Jen. It uses vegetable oil and milk. However, i have adapted it to use part whole wheat pastry flour, and a healthier oil. It is a really, really good crust, way easier than making a butter crust, and people are absolutely shocked to find out it doesn't have butter or shortening. (I don't eat the transfat-free shortening because it's palm oil which is very high in saturated fat - and it doesn't taste as good as this crust).

2 2/3 c. flour (I use about a cup of whole wheat pastry flour, and the rest all-purpose flour)
1 tsp. salt
2/3 c. oil (I use organic canola, or half canola, half macadamia nut oil)
6 T. skim milk

Mix the flour and salt in a bowl. Put the oil in a measuring cup, then add the milk without stirring. Dump that in the flour and mix briefly. Do NOT refrigerate. Shape into 2 balls. Flatten one ball and roll out between two sheets of wax paper. If it breaks apart, just smush it together - this crust is easily repairable. Remove the top sheet and turn the pastry over into the pie pan. Fill the pie, then repeat with the second layer. Cut vents in the top, then brush with a tiny bit of milk and sprinkle with sugar. Bake the pie at 400 for the first 10 minutes, then reduce to 350 or 375.

How do you make your gravy?

A good way to get the fat out if you don't want to use a fat separator is to pour the juices and drippings into a clear measuring cup, then use your turkey baster to remove the non-fatty portion from the bottom of the cup. You can easily see the fat floating on the top, so it's easy to do.

Michael's Genuine report

I went to Michael's Genuine not expecting greatness, but I have to say, I was pretty blown away. The ceviche with avocado was some of the best Icevucge I've had in recent years. The panzanella was perfect, with big chunks of perfectly ripe tomatoes and really tiny, tiny cherry tomatoes, and hearty crusty bread. The butter lettuce salad with hazelnuts and oranges was delicious. My roasted pompano with grilled onions and roasted whole lemon (which you could eat in chunks) was also spectacular, and my dinner companion's pork shoulder melted in your mouth (although I have to say, the portion was way too large!)

For dessert I wanted something light so I got lemon sorbet, which came with bitter chocolate cookies that were spicy and very dry - but in a really good way. They were not on my diet plan but I ate them anyway :) My friend got a chocolate cremolata which was interesting - sort of a football-shaped chocolate thing that looked like ice cream but was way thicker and not that cold. I have no idea how they made it.

All in all, I thought it was a pretty perfect meal.
