Nightshades, soy, citrus allergies that manifest as skin rash
WOW! First! I think this is an important board and I do hope to gain valuable information from others who may share some secrets on good substitutes or alternatives for foods that I cannot (should not is a better phrase as I do splurge) eat.
I notice that when I eat members of the nightshade family, my skin itches a few hours later. I do have severe eczema of the hands and feet, and thats where the itch/hotness occurs. My allergist confirmed the food allergy with testing but my dermatologist does not support a connection between skin issues and food intake.
If you do not know what the nightshades are, well they include: tomatoes, eggplant, peppers, potatoes (not 100% sure on this one).
If you must avoid, either due to allergy or by choice, the nightshades, what do you use as alternatives to them?

yep as I was eating it I was thinking-" this needs a little bit of lardon", I was "this close" to opening a can of TJ smoked trout filets. Oh well, there is always next Friday.

Salad lyonnaise, or something like that. Poached eggs, toasted english muffins. Homeade dijon dressing. I put the dijon dressing on the hot toasted muffins, topped with poached eggs, and covered with greens. Fork into poached eggs releases runny yolk and adds tons of unctiousness to the dish. Lenten special.
Pickled Daikon like you might get at a sushi place?
Not sure what the appropriate board is for this request but here goes:
I was at a local hibachi/sushi/chinese restaurant a few weeks back. I ordered a sashimi app that consisted of pieces of fluke topped with roe and cilantro. It was served with a spicy ponzu sauce and garnished with pickled daikon and carrots. I love those little pickled veggies, specially the yellow daikon. Its not pickled in a vinegar, at least thats my thought from its taste. Its umami palooza. But I am stumped as to how to procure.
Heres the thing, I have done the search, nothing turned up. I have searched for recipes but they all start off with 'leave the radish out in the sun for a few days until it is limp and wrinkled'--- um, no.
If anyone knows of a source for this wonderful little snack or a recipe that doesn't require sunning it.

Prime Rib Roast Successes and Disasters....
I do an initial high temp 450 for 15 min then decrease temp to 325 for about 1 hour. did this for christmas eve on a 3 ribber and it was very good. Pink throughout, and a nice brown on the cap (my fave). one thing I did forget to do was to let it come to temp before putting into oven, for some reason I took it out of the fridge, seasoned and plopped it in. Could have been bad. but we got lucky

Thanksgiving 2011 -- the Good, the Bad and the Ugly
I went way off the road and made a small boneless prime rib roast. That was the good. Mashed potatoes, peas, oven roasted carrots, and brussels sprouts with walnuts. All good. The bad & ugly- pumpkin pie. Followed recipe on can- Stokely's brand, usually use Libby's- but that wasn't really the problem. It was the crust. I used a raw, premade one that you roll out and fill... The first 1/2 inch or so of the edge was nicely browned, but the rest of it was just this side of raw. I used a glass pie pan, maybe that was the cause? Anyone ever manage to underbake the pie crust of a pumpkin pie? The pumpkin part was cooked fully.

+1 on the Amish in New Wilmington. I graduated from Westminster College which is in New Wilmington and you will encounter Amish everywhere. In Volant I think there is (or was, 20 yrs ago) a little are with local crafts and there was a bakery there, which had Shoefly pie. good luck and have fun.
Biscoff spread + Mascarpone Cheese= Wonderful
Having purchased a 16 oz tub of Mascarpone but only needing half of it for a recipe, I was pondering uses (other than just grabbing a spoon) for it. I have a jar of the Biscoff spread in my cabinet and thought "hey, this could be something!" Oh boy, it sure was. I am still playing with the ratios but haven't found any unfortunately that taste "bad" , just less "good". Have used this as a dip/spread for honey wheat pretzels, toasted bagels, cookies, you name it. It might even be a good frosting for cupcakes but I haven't tested that yet.
I found Biscoff spread at Giant Eagle at the Waterfront in Homestead, Pa. I have also seen it at Wegmans on Rt 29 in Phoenixville, Pa. for those of you looking for it.

No Salt Added Cottage Cheese
Was on vacation in Florida, and found some Friendship brand Cottage Cheese NO Salt Added. It was labeled "all natural" and contained 60 mg sodium per 1/2 cup serving. I love cottage cheese, but can do without the usual 400mg sodium per serving in the regular brands (Breakstones, Light-n-Lively) so I really liked this no salt added kind. Trouble is, vacation is over, I am back in the extreme suburbs of Philly (Berks County), and no one carries CC without added salt. Anyone know of a place that sells it up here?
I do occasionally go to a Trader Joes as well as a Whole Foods, but only every other month or so.
Also- have you all read the ingredients in a carton of CC lately? blech, added color (its white, why add color) and preservatives, which I am sure the salt is part of. This Friendship brand had only the basic CC components, no maltodextrin, no vit.A palmitate, none of the crap. Plus less salt, which allows me to add my own seasonings (lemon pepper, old bay, etc)

Toast a bagel, slather with cream cheese, and then pipe a line of gochujang on top of cream cheese.. oh yeah

So I picked up a bottle of this Korean condiment/marinade base/put in on everything stuff at my local grocery chain. Its from a Asian brand Annie Chungs so its probably toned down in heat but its still wonderful. I find myself adding it to cottage cheese, putting it on sammiches, on eggs, pretty much everything.
FWIW I probably don't plan on using it to make any traditional Korean dishes, I just like the way the stuff tastes when I add it to what I usually eat, which now in the summer is grilled something or other.
If you have any dips, condiment 'enhancements', marinades, or what-have-you that is made wonderful with gochujang , please post them.

+1, the Beverly soda from Italy was the best of all of them. My kids went for the Watermelon flavored Chinese soda. the Ginger ale wasn't bad, either.
Cookie Table
Hi, here are my two cents. I grew up in PGH and remember fondly the cookie tables. I have lived in the Philly area for about 12 years now and I would like to tell you they do exist out this way, although the volume of cookie table cookies at a 'burgh wedding (preferably with reception in a fire hall) is an order of magnitude greater. Anyhoo, I found this article from NPR about cookie tables and I thought I would share. Also- if anyone is looking for a good filling for lady locks ( a true PGH treat) I have one that kicks butt.

Cookie tables are the bomb, especially if it's the bride's mother, gmother, aunts, etc who make the cookies. Lady Locks are a must as well.

I have noticed that there are many things that the KOP Costco has that the Lancaster costco does not. No big cans of whole tomatoes in thick puree, just crushed in juice at the Lancaster store. That dressing sounds wonderful, will keep an eye out for it...

My apologies if you already have this, but stuffed banana peppers? Hot (or mild) hungarian peppers stuffed with hot sausage, baked with red sauce and covered with prov. cheese? Every Pgh restaurant has them on the menu. Also a 'Burgh thing- fried Provolone Sticks..Not Mozzarella. Provolone. Always Provolone. As a dessert- Pecan Ball (fr. vanilla ice cream covered in lightly salted pecans, covered in Hot fudge sauce/wh.cream. On the menu of finer Pittsburgh establishments everywhere- in 1978.

Bad experience Legal Seafood King of Prussia
While i can't say my "bad" experience was service-related, I won't be ordering their whole-belly fried clams again. More than one in my order tasted like the inside of a dirty fish tank. I can see maybe one bad one, but there were quite a few.

I might just go ahead an get take out from the resto in Reading(can someone confirm that it is still open?-Yelp told me it had closed) , but if anyone knows of a source for Rau Ram in the Berks county area, your input is greatly appreciated.
