Calderada (Ecuadorion Style)
I was wondering if anyone has a recipe for this Ecuadorian-style Calderada. It was a seafood stew recently featured in No Reservations Ecuador and I ate something similar once cooked by my friend's grandmother. I didn't find much on Google except for the Spanish-style Caldeirada.
The stew was mostly seafood, featuring squid, conch, mussels, crab, octopus, shrimp and potatoes.
The broth is what made this stand out. The stock consisted of a reduction of beer and old bread, added to the octopus stewing liquid. It was flavored with saffron and some soy sauce. Hoping someone can help with this. Thanks!
Turtle and gator in Miami?
I am wondering where in Miami I can find turtle and gator, both to purchase and cook at home or to eat at a restaurant.
The only place I have heard of that has gator is the BBQ joint down 8th by the Everglades, but I have not checked it out yet. Any good?
Chili Cook-Offs
I was wondering if anyone had any info for chili cook-offs in the South Florida area. I have always wanted to attend/compete in one but always seem to hear about them after the fact. Any help would be appreciated. Thanks.
Best food in New Orleans?
I couldn't agree more. I was there about a month ago for lunch and it was the best meal of our trip. The food was superb and the 25 cent martinis are always welcome. Service was wonderful, and the turtle soup was simply amazing.
Buying Produce in Miami
Lynus, what is considered "in season" as far as produce is concerned?
Buying Produce in Miami
Thanks for all your suggestions so far! I checked out the Asian Market after work yesterday and found it to be pretty good. Gonna try to check out some of these places over the weekend. I'm not too far from the Winn Dixie on Bird and 147 so I will start with that one and work my way around the area.
Buying Produce in Miami
Hello fellow Chowhounds,
Just moved into the Kendall area and am having a real tough time finding anything decent in the supermarkets around here. Publix and Winn Dixie just seem to have the bare minimum as far as produce goes, and what they have isnt even in great shape most of the time. I like getting creative in the kitchen with new ingredients and haven't had much luck yet.
Does anyone have any ideas or suggestions? I am especially interested in produce but any pointers will be helpful, including meat, seafood, and ethnic ingredients. Thanks!
