What is your best scalloped potato recipe?

SCALLOPED POTATOES

1/4 c. chopped onion
1/4 c. butter
1/4 c. all purpose flour
2 1/2 c. milk
5 lg. potatoes, peeled and thinly sliced (5 c.)

To make sauce, cook onion in butter until tender but not brown. Stir in flour, 1 1/4 teaspoon salt, and 1/8 teaspoon pepper. Add milk. Cook and stir until thickened and bubbly. Cook and stir 1-2 minutes more form heat. Place half of the sliced potatoes in a grease 2 quart casserole. Cover with half of the sauce. Repeat layers. Bake, covered, in a 350 degree oven for 45 minutes, stirring once. Uncover, bake about 30 minutes more or until potatoes are done. Makes 4-6 servings.

CHEESY SCALLOPED POTATOES:

Make white sauce and add 1 block of cracker barrel extra sharp white cheese. I made these for Easter and they were a hit. I have made them 2 times since then.

kidney surgery recovery

Nor would I suggest food either. I have been on dialysis and had a transplant almost 2 years ago and have had to watch my diet very carefully. My husband donated a kidney appx 3 years ago and needs to stay away from salt, drink more water, etc. If you live near your Uncle I would suggest doing some of his chores for him. He shouldn't be lifting anything over 10 lbs for at least 6 weeks. Does he like puzzles? What are his hobbies? That is what I would suggest. I don't know if he is on a special diet so I would consider something to keep him busy till he heals completely. Please give him my best!

Do you ever like the crappy better than the excellent?

I personally don't like real maple flavoring. I have tried pure maple syrup and found it quite unappetizing to me. I buy my syrup from Aldi and it is very good. There are alot of *generic* food items I prefer over name brand

Store Brands that are Just as Good as their Brand Name Cousins

I think Aldi's chocolate chips are the best! If you can't afford name brand these are just as good. I buy my baking supplies here every year for Christmas cookies. Their canned veggies are also quite good and less than 1/2 the price of name brand. If you want to save alot of money you can do it here.

What are your favorite sandwich fixin's?

My favorite sammy is homemade w/w bread with real mayo, hot hoagie spread, a touch of onion and loaded with iceberg lettuce! Pretty much a hoagie without any meat or cheese. I could eat this everyday. Healthier for you too. What are your favorite fixin's?

What was the worst food you HAD to eat as a kid?

I agree professor. My husband loves processed food to my utter disgust. He chooses store bought mac and cheese, cookies, bread, etc I love to cook and bake and everybody who comes over wants to move in, they complain their wives don't bake and tell my hubby how lucky he is. When I make him his *stove top* he is the only 1 who eats it. Guess it is a matter of taste. He grew up on processed foods and doesn't know any better. I am slowly changing his way of eating. Just the cost alone of the processed food is enough to keep me away from it. Plus the fact it isn't good for you. My niece who lives with us is 17 and she grew up on processed food and cannot believe I make food from scratch! She hasn't refused to eat any of it yet.

What are you making right now?

I just got done making homemade pizzas. 1 meat lovers for hubby and onion for me. My kitchen looks like a white tornado hit it! I love to cook and bake but the clean up isn't my cup of tea. Yesterday I baked 3 loaves of bread and a pineapple upside down cake to take to our neighbors family. His wife passed away. Hubby will be lucky if he gets leftovers tomorrow!

Recipes You've Never Heard of Outside Your Family

My mom used to make chicken-pork adobo served over rice. Was sooo good. We also used to have scalloped potatoes made with homemade cheese sauce that is seasoned liberally with worchestershire. she would par boil the potatoes then layer them in a casserole dish with tons of carmelized onions and topped with the cheese sauce and baked for appx an hour. To this day I can eat most of the dish myself!

Looking for the best ever whole wheat bread recipe

I love whole wheat bread and bake it all the time but I can't figure out why it doesn't rise much above the pan and is denser than the bread you buy in the store. The flavor is good though. I even substituted applesauce for the oil last time and the bread was delish! Can you share your fav recipe?

What foods say "home at last" to you?

It would have to be my noni's polenta topped with homemade tomato sauce and parmesan cheese. She would spread it out on a huge board on the kitchen table and cover it with the sauce and cheese. We would all sit around the table with our own forks and eat till we had enough. What a feast.

Underipe fruit/veggie in grocery stores

I refuse to buy produce in the grocery stores anymore for that very reason. I do the farmers markets when available and try and freeze as much as I can to eat over the winter months. Most of what we can find at the store we can find fresh at an orchard, farmers market, etc. It is def worth the trip and much more affordable too. Nothing beats fresh produce!

How do you make bacon better?

I actually bake it. Nothing beats the sweet and salty taste of bacon with maple syrup over it! I have never seen Wrightbrand bacon up here in the northeast. I have used many different brands but since I love bacon so much I have yet to meet a bacon I didn't like!

Foods you can't keep in the house because you can't stop yourself eating them

Chex bold party mix. I inhale the stuff. Only the bold one tho. I don't like the other flavors. If it is in the house I eat the whole bag in one sitting!
