Powdered Brown Sugar?

You can make powdered sugar by putting regular sugar in a Vitamix and adding a small amount of cornstarch. You can try it with another blender or food processor but it may not get to quite the consistency of powdered sugar, more like a superfine sugar.

New Melissa D'Arabian show-Drop 5 lbs w/Good Housekeeping, on Cooking Channel

Melissa D'Arabian is a Good Housekeeping contributor (editor) already. The nutritionist is from Good Housekeeping, etc. They saved themselves money by hardly going out of their Good Housekeeping pool of people. Now if it was a Food Network show - instead of a Good Housekeeping show on the Cooking Channel, maybe they would have gone more into the Food Network pool of people. The first show just seemed to be common sense information, it will be interesting to see how it progresses.

Jeni's Vanilla Cedar Wood Ice Cream

The Buckeye State is delicious but my favorite is the sweet corn with black raspberry that is available at the end of the summer.

One likes it well done - Prime Rib Dilemma

I just did Prime Rib for 30 people and it came out the perfect medium rare. Anyone who wanted it more done just had to place it in the pan of au jus for a few seconds to turn it gray and they happily ate it. I just made sure the au jus was in a larger shallow pan for this to happen easily. The food was served buffet style and it hardly held up the line at all since the au jus was simmering.

I saw the smoking gun used in a demonstration at Williams-Sonoma. It was very neat and easy.

There's also the food mill - just put in the right disc for the use and do in batches.

Columbus - Need dinner restaurant

Good choice to ask for places to walk to - taxi service in Columbus sucks. The Flatiron is close to the other Hyatt at the Convention Center 12+ blocks away (if you get that far you may as well explore the Short North area). Downtown does empty out after 6:00 p.m. depending on if anything is going on at the Ohio Theater, the Palace, etc. but it is still relatively safe to travel on foot.

Dirty Franks and Little Palace are near each other just two blocks away (one block south on Third then one block east on Rich to Fourth). I prefer Little Palace over Dirty Franks but depending on what you consider chowish . . .

If you want to have a few more choices then two blocks north on Third you come to Gay Street where there is Latitude 41, Tip Top, Due Amici, Plaintain Cafe, Mitchell's Steakhouse (bought by Ruth's Chris a couple of years ago). Columbus is relatively casual, even most upscale restaurants don't frown on nice jeans. If you want a little more upscale then 6-7 blocks south on Third is G. Michael's in German Village (you can still wear jeans) - you will pass Pistacia Vera on your way - a great idea for dessert but they close at 7 p.m. so you can get dessert boxed up.

will brining change my life?

Maybe. Brining does not work well with meats that are already injected with extra water/juice. If you are purchasing meats already packaged at the supermarket read the labels or go to the meat counter and get unaltered meat so you can really see what brining can do. Depending on what liquid is used for the flavored brines seems to be a big influence - apple cider, beer, etc. as opposed to water.

Max & Erma's is now hit or miss - they have been bought out, then going bankrupt and just bought out again in July or August.

Bradley Ogden Dining Solo- A reversal of fortunes

I have eaten multiple times at Bradley Ogden solo and have had great meals there, including the burger. There are so many restaurants I want to try but still love going back to excellent quality experiences of food and service.

Mesa Grill- Don't go SOLO!!

I have eaten solo at Mesa Grill multiple times and never had that kind of service. I would hope that this is not a trend and I will still get great service when I eat there again.

Bobby Flay haters (Flayters?)...this one's for you

I like him. There was him as a guest chef on the one show on the Food Network, then came Grillin and Chillin (which I found out afterward was done in a short amount of time with multiple shows in a day) so it made more sense when they were snarkier to each other or a little slap happy. There was the next one where he was cooking for friends in a loft kind of place with a hostess and would bring up a friend or two to help out with a specific dish - that one could be kind of clunky. Boy Meets Grill is wonderful - I have gotten several ideas from that one - sometimes he grills on gas, sometimes on charcoal. Grill It with Bobby Flay is the new concept with him grilling the same ingredient in a different way from a home griller - some are better than others but I like they way they discuss different ways of doing things on the grill and it looks like some of them give him ideas.

Master Chef Round Three [spoilers]

Gordon Ramsay sliced only one onion yet they had a slicing and a dicing bowl for their cut up onions so obviously they were shown at least once how to dice an onion and they are cutting out techniques that people at home could learn from.
I know in the horrible food network show - worst cook - that they showed all the cuts and how to make them.
The drama is just annoying - it's not suspenseful.

Interesting WSJ story about picky eating as a type of disorder

I remember seeing a show - maybe MTV True Life - I'm a picky eater years ago about three people who were picky eaters - bland food, specific textures, no vegetables, etc. One girl had a boyfriend but they all talked about the secrecy of not letting people know all of their restrictions and how it was hard to meet people/have a relationship. These were all adults who had this same problem since they were children. They talked about an online support group and they did have a get together in real life at a restaurant where the orders were extremely picky and specific. One person was getting help introducing more foods into their diet because of the fear of not getting enough nutrition.

I just did an online search and found a casting site for a major cable network for these kinds of picky eaters that was casting in May and June of this year - must live near Los Angeles.

ice cream maker

Great consistency for frozen lemonade, margaritas, pina coladas, etc. I love the small ice crystals, smoothness of the mixture.

Why is Turkish Ice Cream Chewy?

There was just information on this on Foodography on the cooking channel - the ice cream show. They were trying to replicate the Turkish ice cream without the ingredient that makes it chewy. More airings today and so on:

Will my brined chicken go bad?

Overbrining can result in a mushy texture of the meat so definitely take out of the brine and rinse well.

Good Cocoa Powder??

The specific one she used was Pernigotti cocoa powder - I recognize the packaging.

Calgary: Was I ripped off?

If you find it in the $15-$30 range then it is oil with flavorings. To get real truffle in your oil, you are looking at $60 or more.

I have tried a white truffle oil with flavorings at about $15 and I didn't care for it.

Taste aversion to alcohol?

I also do not like the taste of alcohol. I do use it in my cooking. I have a recipe for drunken meatballs - when I taste it and I like it that means it's done.

I also get more invitations to places because I will be a designated driver that will never just have "one" drink that ends up being five so I am pretty popular.

I think that Hyde Park would work. It's not precisely a "fun" restaurant, but good food in a white tablecloth restaurant and would be big enough, if available.

Female dining solo in Vegas

The Bellagio buffet is good for what it is but I prefer to go to a restaurant where the food is being prepared just for me instead of a steam table. I go to buffets when with a group that wants lots of choices, etc. That said, you could bypass the line at the Bellagio buffet by going up and asking if there is room at the bar to sit.

Best Appetizers in Vegas

The blue cheese souffle at Bradley Ogden is wonderful and it comes as either a side dish or appetizer.

I also like the rock shrimp appetizer at FIX, but the Billy Baldwin Burgers are good too.

Where can I buy Dulce de Leche?

That is the brand that is carried at Williams-Sonoma, when they can keep it in stock (at least in my city).

best burgers in vegas?

Burger Bar - very good (consistent) burgers. I've eaten there 5 times over the past few of years.
Mesa Grill - very good to excellent burgers. I've eaten the burger 3 times over the past couple of years.
Bradley Ogden - my sister said it was excellent, I was too full to try it but when a group of regulars (people who the servers and others in the restaurant know) all order the burger that says something. I will try the burger on my next trip to Las Vegas along with the blue cheese souffle I always get there. (I think Bradley Ogden is only open for dinner.)
BLT Burger - had the sliders. They were good, I could eat here again but I've only tried it once.

Two restaurants under one roof. Could it work?

Something sort of like this is actually kind of working near where I live. There is a bakery that is in use early in the morning until the afternoon (supplies restaurants) then Wednesday through Sunday evenings 5-10p.m. or so pizza is being sold - it's very very good. When it is pizza there are a couple of tables and chairs out on the sidewalk or you can take the pizza to go. They are also doing crepes for dessert.

Vegas Buffet - Mandalay vs. Luxor

The Luxor is downstairs in kind of a basement area - the last time I went one whole side was not available (and didn't have the crowd to sustain it). I haven't been since they renamed it last year.

Mandalay Bay is a middle of the road pick - doesn't have the crepes of Paris, or the exotic choices of others but it is a good choice. The buffet has one wall of windows looking out over their landscaping and a little bit of the pool area and in nice weather some of the windows are open. They always have the omelet station, the carved meats, the fruit, shrimp cocktail, etc. The desserts are in another area on the opposite side of the room so if you can't find them, just ask.
