Prepared Food at Farmers Markets [DTW & metro]
I hate to say this....but are you really asking this question in April of 2012 in Michigan? Be happy the Markets are open at all with local prepared food. If this is a problem in July I would say it is worth looking into. As for Eastern Market....yes it is a public market, know who you buy from and if you buy one damn bit of produce from Eastern Market that has a bar code on it...you get what you deserve. I would like to see us talk about who at Eastern Market can be trusted with great product.

Glad to hear about the change in the wine selection....the crap they were selling was horrid but the pizza was OMGWTFBBQ good.

I was there Saturday night myself and enjoyed myself. As I sat down and started looking at the menu, the large amount of Chinese clients and the special menu board I had seen....I knew I had the wrong menu. Excuse me my dear waiter...can I have the OTHER menu? Oh sure.... :)
I had the Yibin Flame Noodle to start with and this is one of those dishes that makes you drive out of your way for. It is simple cold Szechuan noodles with chili oil, herbs and what I believe was ground lamb (don't quote me on that). Even before I got my entree I was pondering a second helping of this.
For the Entree I was aiming for heat so I got the Pork with Jalapeno's. Not great, but better than 95% of the Chinese I ever get. I am looking forward to more visit as I am moving to Canton this Summer.
Oh and the Waiter was top notch on keeping my water glass full....and I was making him work for it as I have just came in from about 6 hours of climbing hills in a forest looking for morels (no luck yet).

Visited Ypbor Yan last night and I was very happy with what I got. Highly recommend, would buy again. POSITIVE: A+++++.(I gotta stop hanging out at Ebay).

Alternative to Caul Fat
I have some Berkshire pig skins in the freezer with about a centimeter of fat underneath it. I use them for homemade Pork Rinds and Lard. Hit up Melody from Melo farms (She has a booth at Eastern Market). If you get her before Saturday she can bring them to the market. Pork belly with skin on is the norm for Porchetta. I crosshatch mine and it comes out beautiful (See attached Photo). I would be careful with a crosshatch if I was using just the skins. I also am in the market for Caul fat and may be able to hook you up with a better source for caul fat. I know a good amount of meat processors. I need some for a Jerk Goatchetta I am planing on.

DTW - Oakland County recs for out of towners
While Curry on Crust is owned by the same people as Neehee's (Which I love)....I have to give CoC a thumbs down. The Wife and I tried three different kinds and none floated our boat at all. The crust is hardly crusty and the flavors were "meh".

Avoid Polonia....it is NOT a suitable alternative for Polish Village Cafe. If you hit up Eastern Market you could get a Pizza at Supino's.

No...the movie I was working on was about a Pasture raised, humanly killed Mangalitsa pig (who we ate last night at Forest Grill).
As for the aged beef....About the only place I would think to check for Dry Aged Beef..or who would no how to get you some would be the folks over at Sparrow Meats in Ann Arbor. I am totally into trying emmetbaratta's option of fairwaypacking shown down below though.

I actually went to Schoolcraft before he taught. I have had the pleasure to sit in a few of his classes though in the last few years. Currently I work with tons of different Charcuterie people all over the US.
Next weekend I am going to be helping in a UCLA's students thesis movie about Mangalitsa pigs. We are all going to be having a dinner at Forest Grill after with one of the pigs we are going to slaughter. Look forward to it...

Well I think the Dos Hermanos in Westland was first owned by the La Casita crew. I saw a few of the original employees from the Westland location show up at the Wixom location. Westland did change hands at one point.

At first when I saw Burrito King I though it was gonna be run by some Gringo's that were going to offer me a Burrito as big as my head, but nope....I found a little hole where a good chunk of the clientele are hard working Hispanic men and women.

I like both of them.....neither are Tex-Mex but closer to the real thing.
