What is your favorite recipe for pork shoulder?
You are very lucky, I have not found any butcher in my area that keeps the pork skin on the pig, unless you are purchasing the whole pig and I do not have the people power to eat something that large.

Is it crazy to start tomato plants (from seeds) now?
I use containers for my plants, I have done container planting for over 13 years and it is amazing what can be grown inside (with the right light) throughout the year. Without lights I would suggest waiting a few more months until the days are longer.
I would also suggest Burpee or Seeds of Change, both have some really good container seeds and they are the only two I have used and was happy with 100% of the time.

Where do you buy your seeds from?
I purchase my seeds from Burpee and from Seeds of Change, you can never go wrong with these two companies and they have a wide selection of seeds to plant throughout the year - based on where you live.
I have been using these companies for over thirteen years to grow my container plants and I have never had a problem with any of the seeds.

Bayou Cast Iron Dutch Oven
Yes, Lodge Logic is preseasoned and has a great web link to help you with taking care of your cast iron in the future. Although the enamel cast iron has the "cute affect" going for it, I prefer the real thing without the enamel. However, I have heard things about the L Series and the Color Series Dutch Oven, as well as found information on this site concerning them, so you may want to take a look- before deciding on which one to purchase. http://chowhound.chow.com/topics/663276
I have had my Lodge Logic for years and I would never purchase anything else. I have tried several other brands over the years and they all fall short. My mum grew up in the South and used Cast Iron cookware, but never took care of it; it was not until I became older that I realized how great cast iron actually is to cook with. I would not trade my Lodge Logic for all the money in the world.

Homemade Ice Cream?
Thank you for the Yam Recipe, never thought of using ginger on them. As far as your Roasted Winter Vegetables, do you cook these the same way?

Homemade Ice Cream?
Full Tilt Ice Cream has won their category in the KING 5 “Best of Western Washington” voting, so if you have not tried the ice cream yet... Make your way to the nearest place (White Center, Columbia City, with a Ballard location in the works) and enjoy a scoop or two!~!!

Homemade Ice Cream?
Evaporated cane juice is pretty much just sugar, but it is less processed (so unlike refined sugar) it retains more of the trace nutrients found in sugar cane (vitamins and minerals). The only difference in the processes used to isolate these substances on an industrial scale is one goes through one processing step more than the other, evaporated cane juice does not undergo the same degree of processing that refined sugar does; but has the same amount of calories as sugar.

What is your favorite recipe for pork shoulder?
I use a Cuban Marinade, other times I use an African Berbere spice dry rub, both work great and give me leftovers when I cook five pounds of meat (no bone in meat).
Then we have Caribbean type of Cuban sandwiches, my version...
Sliced Pork Shoulder/Butt
6 inch Baguette/Crispy Roll
My Aji Verde (Peruvian Green Chili Sauce)
Sweet Banana Peppers or Jalapeno Peppers
Cilantro
Caramelized Onions
Sometimes I just slice the pork cover it with my Aji Verde and put it on the plate along with rice, beans, tortillas or a salad/slaw. But generally I stuff the rolls with the sliced pork and eat the sandwiches until we run out of crispy bread, I use the same bread that is used to make the Vietnamese Banh Mi Sandwiches or 6 inch Crusty Rolls.

Is zucchini worth eating? ;-)
1 - Zucchini helps to cure asthma as it contains Vitamin C, which is a powerful antioxidant, and has anti-inflammatory properties.
Helps to prevent diseases, like scurvy, bruising etc., caused by the deficiency of Vitamin C.
Eating zucchini also helps to support the arrangement of capillaries. Regular intake of zucchini effectively lowers high homocysteine levels. Prevents the risk of having multiple sclerosis (MS).
It contains useful amounts of folate, potassium, and vitamin A, necessary for a human body. Contains Vitamin C and lutein, both of which are good for eyes.
Zucchinis have high water content (over 95%), so they make perfect food for people on diet. One medium-sized zucchini has just 25 calories, making it an ideal stomach-filler.
2 - Zucchini makes great breads or a cakes.
Put in any salad, and top with some Balsamic Vinegar instead of cream based salad dressings.
In a Vegetarian Lasagna, do not forget to add a dash or two of Red Pepper Flakes.
Cut or grate into small slivers and add into a type of slaw.
Use as a side or appetizer, with sliced Jicama and Celery, sprinkled with Cayenne Pepper, Salt and Lime Juice.
I generally like my zucchini sautéed in butter, with onions and garlic and top with some Parmesan or Parmigiano Reggiano Cheese, or in a stir fry with a lot of other vegetables.
However, everyone else in my home - or those visiting ... Prefer to have it deep fried in my cayenne and garlic tempura batter, then dipped in my homemade chipotle mayonnaise.
Basically, it really depends if someone is growing it, or if I am purchasing it from the Market. If they are giving me a few, or giving me a box full - but we can always think of great ways to enjoy the zucchini!~!!

Yays and nays from Trader Joe's, lately [OLD]
Densible,
Just wondering why you travel all the way to Los Angeles, bypassing New Mexico (one in Sante Fe and two in Albuquerque) and Arizona (two in Scottsdale, one in Mesa, three in Phoenix and one in Tempe); both have several stores in these states. New Mexico could be a weekend day drive, to get away for a bit, you would just bring a cooler and plan on stopping somewhere to eat. It would be like me driving to Portland, Oregon from Seatte; with lots of tourist attractions on the way to make a day of it.

Ezell's Chicken-- Lake City Way (SEA)
Howard 1st,
Traitorous or not, we all prefer something good to eat when we are paying our hard earned money. Because of this, we cannot be called disloyal to the local chicken chain. Am I right?
Ezell's is always better during a rush period (ie. lunch or dinner) it is the off hours where I tend to be disappointed with their food not being consistently good.
I have NEVER had their okra... I think it is because I prefer it mixed with onions, jalapenoes, garlic and tomatoes and not fried in cornmeal. Matter of fact, I do not recall EVER trying fried okra... I may have to try this...

Homemade Ice Cream?
Mr. Nelso,
I had no idea that the base was from Snoqualmie - now I know...
Hey, is there anyway I can talk you out of those two recipes for baked Yams and Roasted Winter Vegetables? :: She laughs ::

Ezell's Chicken-- Lake City Way (SEA)
I have been to several of the Ezell's, but the only two that seem to have good chicken consistently is the first on located across from Garfield High School in the Central District and the new store located near the Shoreline area.
Generally, I will drive to Federal Way and stop by Church's, or go to Renton and have Popeye's Chicken - although they are a bit away from West Seattle, they are both worth the trip.

Homemade Ice Cream?
I generally go to Full Tilt Ice Cream in White Center, unless I am near Southcenter - If I am I go to Coldstone; which is located down the walkway from Red Robin. Both make their Ice Creams from scratch, in the store.

SEATTLE - I want BBQ
If I am not cooking my own, I go to Jones Barbeque, for the familiar scent of smoky tomato-sauced barbecue.
The meat is so tender, it just falls off the bone!~!!
The tangy sauce adorns pork, beef, chicken and even house-made hotlinks. They have little to prove with the continued deliciousness of their food, you can try all the others and there will be no comparison, They are the best BBQ in Seattle, in my humble opinion - next to mine...
They also have three locations, one downtown and two in the Central District.

Chicago Style Pizza - Seattle or surrounding for today??
I would suggest Madame K's Pizza in Ballard, they have really good pizza. I have never been disappointed and my best friend went to school in Chicago and tells me the pizza there is spot on.
Also, I would agree with SeaFood2009 and suggest Wallingford Pizza House.

Uwajimaya in Renton - anyone been?
The Renton Uwajimaya is a lot smaller than the store located in The International District, although you can find some of the same foods and produce, there are obviously a lot of products missing; as well as the eating area.
The gift shop area is very small, not a lot to choose from, but the Sake aisle was impressive. No idea where you live, but I will go there from now on, not as many people, but the same great customer service throughout the store!~!!

Injera in Seattle?
Amy's makes them throughout the day every day, mine were fresh when I purchased them. Yes, I purchased 30 total, but I also had a large amount of people over for the six dishes of Ethiopian food I had made also.
You can freeze them, but they are better fresh and you must be very careful when you thaw them, otherwise they will crack and be nother more than the tablecloth under the food to eat later.

Injera in Seattle?
Broksonic,
All this talk about injera in the last few weeks have made me want to cook some Ethiopian food, but not the injera so I went out this last weekend in search of some and found them at the following spots:
Ethiopian Markets/Groceries
Amys Merkato 2922 E. Cherry 206-324-2527
Amys Merkato 11702 15th Ave NE 206-362-1863
Ethiopian Food Grocery 507 13th Avenue 206-320-1115
Warka Grocery 2800 E. Cherry, Ste D. 206-325-1294
I went to Amy's on Cherry and purchased ten large injera for the price of 6.00; actually I purchased 30 for this upcoming weekend when I will make the doro wat chicken, the green and potatoes, the cabbage and potatoes and the berbere stew to go with the injera.
Hope you finally found what you were looking for.

Injera in Seattle?
Broksonic,
I live in West Seattle and there are a lot of places located just south of me in White Center, to purchase Injera at the local African Markets/Grocers, or I travel downtown to the Pike Place Market and purchase them to go at Pan Africa Cafe.
If not in my area I would suggest the following:
Baro Grocery Deli - For all your Eritrean shopping
17002 Aurora Ave N
Shoreline, WA98133
Tel. 206-5422879
Or try www.eritreanseattle.org as well as http://www.ertra.com/shops.htm
Good luck in your search.... Ever thought of making them yourself? I have a really good ORIGINAL ETHIOPIAN recipe if you have the time and you would like to wait for your bread to ferment a few days, before making.
In order to do this, you would also need a Silverstone® Heritage Lefse Grill for this, I would not use anything else...

Annie
