Apple Quick Bread with Pecan Streusel

Definitely a quick bread, easy prep. Moist and tasty. I reduced the sugar by half in the cake part and it was still sweet enough. Used 3 Granny Smith Apples. After,only 29 mins (convection oven) the streusel started to burn, thankfully the burning smell alerted me to check on the cake and it was already baked/done! I'll make again but with some more tweaks.

BTW the cocktail I'm planning to make states the following : 1½ ounces blanco tequila
1 ounce hibiscus cordial (or high-quality grenadine)
½ ounce fresh grapefruit juice
½ ounce freshly squeezed lime juice
Ice
Lime wheel for garnish (optional)

Delicious and potent! Couldn't find any Meyers lemons though so (I read that they're a cross between a regular lemon and a Mandarin orange) used half lemon and half mandarin juice.

Irish Soda Bread

@ "Samsooni", I just came across your post now & if you want I will send you an authentic Irish Soda Bread recipe, sometimes referred to as Brown Bread over in Ireland. BTW there's no kneading involved either.I'm originally from Ireland and although the above tastes good I would consider the recipe more like a tea/raisin cake... Just my two cents.

Advice on best Loaf Tin

Hello Chow Hounds, I'm hoping someone can advise me on the following. I want to purchase a new loaf tin(s), primary use will be for baking “quick bread” type of loaves e.g. banana, zucchini and sometimes Irish Soda Bread.
Currently using one that always seems to burn on the bottom, when I've used the inexpensive throw away types from the supermarket the loaf never burns, so it’s not the cook or the recipe :) :)
Oh and in case it makes a difference, I use a convection oven to bake. Thank you.

Need a signature dessert! Can I steal yours?

I have two that I make. Martha Steward's: “Grand Raspberry Trifle” I included the link below. I also add sliced peaches & when in season I add macerated blackberries. You can buy a nice trifle bowl at “Bed Bath and Beyond” for well under $20, leads to a nice presentation & will make transport to your next “potluck gathering” easy!
The other dessert is from the Epicurious website: “Warm Chocolate Raspberry Pudding cake” guaranteed to satisfy.... Be sure you use the best chocolate and cocoa you can find, I recommend Valrhona or Callebaut.

Easy Apple Crisp with Oatmeal Streusel

Excellent and so easy to make. Great winter dessert!
2 modifications: I used 6 Granny Smith apples and instead of "packed" light brown sugar I used a 1/4 cup of "Domino brownulated light brown sugar" -"anniebee" that might help with the sweetness.

Yes, Hercules Fancy Grocery @ 27 Morton Street has it for $11.99 a bottle. I later found it in Astoria @ the Keyfood supermarket on 30th Ave for $9.99 a bottle.
