Question about cooking with wine

Good afternoon all. It's diet time again and working out calorie counts for recipes. Does anyone know if calorie count is reduced by cooking down a cup of wine?

Making kimchi at home: Bubbling question

I made kimchi for the first time. 4 days in a bar jar with screw top lid. Opened a jar this morning and got bubbly juice everywhere. It's just like when you open a seltzer bottle without letting it settle first.

The kimchi smells ok but did not taste it yet.

Any advice, warnings, danger, help?

Le Gigot is a great rec. Small, classic, local vibe with fantastic food and service. Very quaint, good for conversation. Owner sources her own oysters.

Ive been for pre show apps and wine, also anniversary dinner. Both hit a home run with my wife.

I too thought jewel bako was lovely and the food was fine BUT we definitely had issues with service and attitude.

Pan, upon seating they gave us two glasses of sake in a beautiful low cut glass bowl filled with ice and a floral arrangement. The amuse was a mini sushi sandwich of unagi! Wow was the first words from our mouths.

We had liked to complimentary sake so we asked for a bottle for the remainder of meal. Like I said, always ask first.

Money discussion was a HUGE faux pas but my wife was totally cool about it and if she asked I probably would have told her anyway.

Silverjay, good point. Will remember that expense account comment for next time. Although I will say that yes it was expensive but we felt it was worth it as a rare treat and not a rip off at all.

We loved Kyo ya.
Thoroughly charming and tucked away restaurant.
Attention to detail in the furnishings was just perfect.
Plate presentation was best ive ever seen. Must say though that i'd never been to this type of Japanese place before.
Freshness was incredible. Dishes were original and very stylized.
Service was quiet, smooth and charming.

Other comments:
Was offered by reservationist a 9 or 11 course tasting for $95 / $120. I chose two 11 course tastings. Menu at table said 9 plus a dessert. When I asked the manager at our table if there was a mix up, she politely explained that I must have been mistaken, it was always a 9 or 10 course choice. This was fine and a pleasant conversation. But what was a bit odd and out of order was her explaining the tasting menus AND their prices in front of my wife. This was the same person who took my reservation and knew it was a surprise meal for her birthday. Fortunately my wife is easy and understanding but I was a little annoyed at this.

PS: Always remember to look at the wine list before saying something like " We really liked that complimentary sake you served us upon arrival, yes please do send us a bottle to go along with the rest of the menu. A $90 bottle of sake on top of a $240 meal was a bit of sticker shock. But hey it was my fault AND it was a great bottle.

That being said, it was an outstanding performance by the chef and staff. Chef Sono came over to wish wife happy bday and talk menu and food with us. Bought him a beer too as thanks.

I have to say that this meal cost about the same with tax and tip as our dinner at Picasso at the Bellagio hotel a few years back. I am left with the feeling that a European restaurant gives you much more bang for your buck in terms of atmosphere, setting, theme, etc... Assuming all food quality being the same, which it was. Is is because I am not Japanese and appreciative of such an evening at Kyo ya, maybe. But I do think the next time I drop $420 + on dinner it will be at the more well rounded evening experience of French, Italian, etc... establishment.

Once again, I must repeat that we loved the evening. Tasting spanned 2hrs+ and it was a rare treat. Please go if you have never done such an evening. Go with their flow and enjoy the process. You may never see such fine work anywhere else.

Hey all, got some reservations at Kyo Ya for my wifes birthday dinner. Thanks for all the advice. I am so excited about this meal. Reservationist was very helpful and kind. Asked lots of questions and discussed chefs menu.

The serious food of Babbo, Scarpetta or ABC but the fun atmosphere of Yerba Buena

Planning a dinner for a client and want to send them somewhere for great serious food but also a place to really enjoy the atmosphere and environment. Yerba buena was a bit noisy but the cocktails, setting and crowd made it lots of fun. Food there was excellent. Clients are in their 40's and eat drink everything. A place to spend 2 hours eating drinking and soaking in the room.

Got a hankering for some oysters and a date with my wife. Where to go? Anywhere in city is fine with us. A bit cozier than Grand central oyster bar would be nice.

Downtown romantic anniversary dinner

We love this place for special dinners. Quaint, quiet, superb food and wine. The owner sources her oysters personally. To be honest, we have never eaten from the entree selection. Always make a tasting meal out of the apps and starters with wines along the way. Lots and lots of oysters too.

Sushi Search

This is great info. Wondering whats a great sushi place for anniversary dinner. Would also like a place with great cocktails or lounge. I know this is an unusual request but we need to have some fun and atmosphere too.

Baby has kept us in but now its time for a proper anniversary dinner and we are determined to have a great meal, nice intimate setting, serious cocktails.

Recently went to Yerba Buena Perry and thought that would be a great pic. Also considering sitting at the chef counter at Ushiwakamaru but thats not as sexy.

Not looking for steak house or 4 star with white linens and wine steward.

Ocean beach, San diego. Where to eat.

Went to Ortegas for lunch. Excellent stuff and very nice staff. Chef was friendly and talked recipes. Also loved South Beach bar and grill. Fantastic ceviche (a bit different and sweet), loved the mahi taco and the fried fish taco.

Went to a drive through Robertos (or is it Rolandos?) by Midway and the Stadium. YUK! Needed drive through because we were wearing towels only. Just horrible, salty, bloated and gassy. Not a pretty evening my friends.

Thanks for all the advice. Can't wait to get back to SD one day. Torre pines for the trails and beach, Ocean beach for just plain relaxing and the amazing weather. You people are pretty damn cool too.

Hey all, thanks for the recs. My sister in law (lives here) sent us to Nicks for dinner. Must say that the fish entrees were very very good, price was fair and the view was awesome. Nice sunset walk before dinner and stroll up Newport after. Nicks was very baby and family friendly. You all live in a beautiful town. Would love to come home to OB each day after work. I think we might try 3rd corner for dinner after sunset and wine on the beach. Will also try 2 of the Mexican places as well.
