Raspberry cupcake recipe
I am looking for a good raspberry cupcake recipe that does not contain whole raspberry's. I was thinking a white cake mix and add raspberry flavoring?
I had a cupcake from one of the cupcake shops in Vegas and they had a raspberry cupcake with champagne frosting. I am trying to recreate this recipe including the frosting, so if anyone can help I would appreciate it.

Cabo, we know nothing...
So, we're going to Cabo next week and would like some recs on where to eat. I don't know much about the layout of the city. We are staying at Club Cascadas de Baja and I understand it is walking distance to everything? Everyone's definition of walking distance is different. We will have a timeshare with a kitchen and hopefully be able to walk to Costco to purchase some food and drink. We are all on some type of budget, so no fancy places, just good food of any kind. Please keep in mind most going are not foodies.

I love to take a graham cracker and spread with cream cheese and top with strawberry jelly. Taste like strawberry cheesecake.

My dad used to crush soda crackers in milk then eat with a spoon. I loved it as a kid, can't eat it now.

Please help a new mom who's new to cooking too
I agree with most about a crockpot. I make chili in it all the time. We like to buy a roast of some kind for Sunday dinner and then use the leftovers for at least 2 more meals in the week such as bbq sandwiches and burritos or nachos. It makes for 2 extra easy meals during the week. (I freeze the meat if it is going to be more than 3 days before using the leftovers)

We have always brined in a 5 gallon bucket without a linning and never had a problem. We always take out a shelf in the fridge to make room for it.
your favourite slow cooker recipes, please
Last week we did a boneless rump roast * 1 1/2 c. water, 2/3 C of soysauce, 1/4 c brown sugar, 1 Tb of lemon juice, 1/2 C Bourbon, 1 Tb Worcestershire (found recipe on About.com) and marinaded it over night. Put in potatoes, carrots, onions and baby portabella mushrooms and 1/2 the marinade.
It was very good and we got 3 meals out of it (about a 4pounder). We had pot roast on Sunday, burritos on Tuesday and bbq beef sandwiches on Saturday (froze it after Tuesday)

Have you cut back on restaurant meals with this economy?
Yes, a lot. I was laid off in September due to the construction of swimming pools declined in Az by 75%, no pools, no fences (what my company did). I now plan 2 week menus as my husband gets paid every 2 weeks. On an occasion I can't take cooking and cleaning anymore and we go out, usually pizza or burgers. Nothing expensive. I miss that a lot, but tell myself this is hopefully temporary. We've been in worse situations before and always came out of them.
I also look for restaurant coupons to help, including fast food. I also join restaurants we enjoy email and get coupons. I received at least 5 coupons since my birthday is coming up.
Homemade maple syrup recipe needed
I should of clarified, I live in Az so no maple tree's in my back yard. My brother is not a foodie, so I thought why not try it and put it with a homemade pancake mix. Neither him or his wife are great cooks. I highly doubt I would be embarrassing myself.
I am trying to stick with a very tight budget and maple syrup is expensive. I thought this might be a nice alternative.

I was thinking of giving homemade breakfast baskets and wanted to make some homemade syrup. When doing a search all of them needed to be refrigerated. I want to be able to put a few of the baskets for relatives under the tree. Do you think it will be okay.

Could you make a great French onion soup in a crockpot? Somewhere I thought I saw it done as the onions cook for so long on low.
Best Homemade Food Gift
This is our favorite to make and give. It is hard to stop eating.
Sweet Crispix Mix
Dry ingredients:
1/2 a box OR 8 cups of Crispix cereal
4 cup of Golden Grahams cereal
1 cup sliced almonds
1 cup coconut
Combine and toss in large bowl.
Syrup Coating:
1 cup sugar
1 cup light corn syrup
3/4 cup of real butter (1 1/2 cubes of butter)
(use two whole cubes if you would like more gooey)
Boil for two minutes, stirring constantly.
Pour into large bowl and coat dry ingredients. Stir to coat evenly.
Place wax paper on cookie sheets and spread mixture out in thin layer
to cool.
Brake into large pieces and store in Zip lock bags.

My husband puts the mayo on the inside, then butters the outside. I find warm mayo gross, he likes it.
Freezing cooked chicken
We cooked some extra chicken breasts Monday night and no one ate them today, so I though about putting them in the freezer to add to a pasta dish down the road, how well does it freeze? Re heats good?

I should of been a tad more specific. My family is very picky...veggies are out, no rice, little pasta...pretty much a meat and potato family. Most replies don't deal with that. We do grill a lot, but that gets old and hot if your the griller.

So, its been 110+ all week and not going to cool down, ok we might make 107 later. I refuse to use the oven. What are some good stove top or even better non cooking recipes for dinner?
How long do these items stay good?
I will be recovering from surgery and am trying to make the trip easy and less clean up as we go. So doing as much as I can at home will help. Less cooking on the road will be best, so I thought maybe pre making the batter would help.
