Kabocha in the Philadelphia/ Bucks County area?

Asian supermarkets, Weavers Way Coop, Mexican veggie vendor in the Italian mkt (The squash is not Mexican though, it's Asian) Essene Market. Kobacha is a superb, caramel flavored squash with dense flesh, I use it for pies,it's better,10 times more flavorful (less wet) than pumpkin. Try the huge Korean supermarket near Lansdale.

Have You Seen Fresh Meyer Lemons Yet?

They make THE best preserved lemons ! Slice them, pack them in kosher salt and fill the jar to the top with lemon juice. Turn every day for a month and voila. No need to refrigerate. I eat them on everything.

Restaurant for BIG Sweet Meaty Crabs????

Anyone know of a restaurant in Phila., South jersey or Delaware that specializes in great crabs? I read a review of a place that sounded great but forgot to bookmark it.

How do you do sour?

Pomegranate molasses ! Sweet and tart and sour . So great in marinade for grilled meats and then brushed on top after cooking.

Bostonhound visiting Philly

I have had the pleasure of eating at Oleana 3 times in the past and can't
rave enough about the spectacular food there, it is in a class by itself ! Worth a trip to Cambridge !

I read that to make the ultimate hummus you have to remove the skins from the chick peas. I tried it once, the resulting h. was ultra creamy, very nice indeed BUT it's only hummus and to me, not worth the trouble.

Sorry you didn't have a good experience at the Dosa Hut. If you specify that you want less spicy
food, they will happily comply. This place is not the Ritz to be sure, the ambience is definitly low key .That said, there is no excuse for dry food. I have always had fine service. I only order the basic south Indian street food options (dosas, uthappam, several chats, breads) and find these dishes as close to food I ate and adored in India as any you can get in the US. For me, this place is a gem !

BEST SOUTH INDIAN (kinda far,SO worth it )

If you adore south Indian cuisine (my favorite food) take a little drive to Trooper,( 5 minutes
outside of Norristown) and get DELICIOUS dosas, (several authentic types,no fusion, no mozzraella,peanut butter or arugula dosa here thank the Gods) and all other manner of south Indian dishes. Many different chats, FANTASTIC breads, uthappam, you name it. They also have several biryanis and rice dishes, weekend specials ,delicious chutneys and sambar. All made to order ,fresh, fresh fresh !

While you're at it, stop in nearby at The Dosa Hut for the BEST south Indian food in the area, maybe the state ! We drive 40 minutes when the craving for a masala dosa overpowers us. It's so cheap, the ridiculous price of gas is offset !

Best Lyonnaise Salad : Cafe Estelle. HUGE (like 1'x1'x1') house made lardon , tangy sherry vinaigrette, poached egg all atop a pile of frisee. One of the best things I have eaten in Philly ever.
The same salad at Parc paled by comparison.

Note to Iron Chef contestants: Take 5 minutes before you go on TV and learn how to use a pressure cooker, all you have to do is watch ANY episode of IC to see that you will have to know this. You could ask your granny or goggle "how to use a pressure cooker." How dumb is it that so many of these accomplished chefs are undone by this?

Anyone made Bittman's Braised Turkey? How was it.?

There are no weights for the turkey parts in this recipe it just says turkey thighs so I'm glad you reminded me that the timing could be off depending on the sizes of the parts. I too find his recipes cavalier in the timing department. Thanks !

I think I would use wine for some of the braising liquid and keep 1/2 of the sausage out for the first hour.
