Cooking vacation for chefs
hi all
I want to go away on a guided vacation that is a culinary vacation geared toward professional chefs. I don't work in a restaurant anymore, I am a private chef, and I miss working and learning from other chefs. Any ideas or suggestions about anyone running thaws type of trips? I would love to know. I give susan so much credit for dealing with those 2 boobs. I actually watch the show (dont ask me why) and I am always amazed at the low level of sophistication and class these people have. Susan is an amazing chef with many years of experience and success and handled herself so well. I would have probably laughed in their faces.

Sorry to disagree. I have cooked there and it is a completely professional kitchen. No problem putting out great food from that kitchen and p.s. a kitchen's size is not an excuse for bad food.

I just have to vent! I usually enjoy the Beard House stuff but OMG was this dinner one of the worst meals I have EVER had and as you all know it cost $200 bucks! You can do a lot with vegetables but every course in the meal was really a shame. It could have been great and I know he can really cook but I was totally embarassed for him. Sorry to say this but I was really disapointed. Did anyone else have the same experience that night?

Has anyone else seen this commercial? It is heartbreaking. Burger King goes to a small thai village and makes them taste hamburgers. The voice over talks about how this culture doesnt even have a word for hamburger in their language in an amazed voice. This is the problem with our food culture on the US. The majority of the population thinks you are missing out if you dont eat Whoppers!

I have a layover in Singapore
I arrive in Singapore at 10:35pm on February 19 and have a layover until I leave at 12.10 noontime the next day. Is it possible to leave the airport and eat some stuff at a hawker center and retur. in time for my flight home? I would love some advice on this.

Non-NOBU sushi?
I think you should go to Sumile - 13th between 6 and 7th ave. The sushi is soooooo good. I had one of the best spicy tuna and avocado hand rolls I have ever had. I recently ate here and had the tasting menu which is kaisaki style. So there were many courses of asian inspired dishes and then courses of sushi and sashimi. It was really fantastic.
What do Chowhounds do for a living (besides eat of course)?
I am the sous chef in the executive dining room of a very large media corporation. I love food and traveling to eat in other countries. The company I work for is awesome. They pay to send me on culinary trips! I studied art history in college and grad school and sold american antiques and art for 10 years before I decided to go to culinary school. It was the best decision I ever made. Being in the industry is fantastic. You get to meet interesting people and share creative ideas and make people happy by feeding them great food.

I ate a Knife + Fork last night
The food was excellent. We had the 7 course tasting menu. Unfortunately it was so freakin' hot in the restaurant and the service was really bad. We were given the amuse (a roasted red pepper consomme) and didnt receive our 1st course until 45 minutes later! The whole meal took 3 hours!

ISO places to go for dinner in NYC with 8-10 people. Some foodie types and others who want to expand their palette. Open to anything from New American to Asian. Does anyone have any suggestions?
8 Fresh Peaches from SM Farmer's Market--Ideas?
I just made breakfast and this is what I made. Buttermilk waffles with a peach blueberry compote. I took 2 cups of blueberries and 5 peaches. Sliced the peaches and cooked them with the blueberries with some sugar, a cinnamon stick and a scraped vanilla bean. I came out so good spooned over hot waffles. Try it you will love it.

Try using the berries to make a fruit tiramisu. Here is what you need: seedless raspberry jam, italian lady fingers, heavy cream, mascarpone, and berrys.
Whip the cream and the mascarpone with some sugar and vanilla and a splash of chamboard (if you have it).
Warm up the jam and ad a splah of water to make is spreadable.
In a dish that you will use to serve the final dessert, spread some of the whipped cream mixture then layer in the lady fingers and spread thin layer of the jam on top then cover with more whipped cream and then layer with berries. Repeat this process with the remaining ingredients ending up with a top layer of whipped cream and berries. Refridgerate over night for a for a few hours. Try this recipe it is great!
