Wild Boar bacon

Hi Coliwoggle :) , Thank you so much for that wild boar bacon and delivering it so quick, i wish i couldve afforded more than 1 pound...the recipient LOVED it, he couldnt even wait for breakfast, he ate a few deliciously sweet pieces for dinner and raved about it to me and his envious co-workers.BEST. BACON. EVER. He also saved the bacon-fat to make a dish with and was quite grateful to me-the giver of perfect bacon ;). I am thrilled with the awesome quality of Hills foods and how Urban Fare even packaged it all up nice (prettiest meat you ever saw). I hope to try a bit of kangaroo or other exotic meat when I can. I am new to the specialty meats and am on a budget, but i recommend for others to save up and try the unusual varieties, its definately worth it.

By the way, am i able to order a tiny amount like half or quarter pound? i wouldnt mind trying some of that bacon or sampling other meats if tiny orders are allowed.

Wild Boar bacon

Thank you both :) Because I was hoping to give wild boar bacon this saturday, i called Hills in chilliwack, and they said that Urban Fare can special order there products, as well as Tango's in downtown Vancouver. The meat manager Vita at Urban Fare is awesome, she ordered it quick, and will have them even wrap it beautifully to be a gift. I ordered a pound of sliced bacon (about $30) on Tues, and can pick it up on Friday. I will also try the Two Rivers brand at some point. Berkshire bacon sounds good. Thanks for your help and if anyone new reads this, feel free to add more suggestions, im sure i will buy more special bacons in the future. I am thinking of Bacon Freaks bacon club (online) but would prefer to pick up those special flavours of bacon in store rather than pay for courier..if anyone knows where to get other flavours, please let me know.

What is Soul Food?

I believe that the term is from slavery days, when slaves had to make the best of unwanted/leftover parts of veggies and meats (pigs feet and dandelion greens for example). And its also blend of a few ingredients from africa like okra, as well as spices which would be available at the time. At the end of a hard day when slaves got to see their family, food, communion, and music was food for the soul.

vanilla extract /airport question

Hi,
I would like to make (4 or 8 oz.) glass bottles of vanilla extract for my aunts who are visiting toronto from Sweden and the U.S.A. I am wondering if they will be able to bring the vanilla extract back to Sweden and the U.S, or will it get confiscated by customs? I am not a travellor so i have no idea how to go about making this gift in the right size or how they'll be able to legally bring it back home. Thank you for the tips :)

~Vanilla extract~

I just ordered my beans from" http://www.amadeusvanillabeans.com/st...

I got "extract grade" (less moisture content) beans from the same source as their "Uganda Gold" beans..i have very high hopes for these, i plan to make some vanilla sugar and vanilla bean paste as well. Im still undecided about the liquor tho...

~Vanilla extract~

I was thinking that I might like to make homemade vanilla extract, and was wondering, what type of alcohol would product the best results? I have appletons dark rum at home, but am not sure if that is too strong. Also has anyone tried "Uganda Gold" vanilla beans, which apparently contain more vanillan than madagascar beans? Oh, one more question, has anyone filtered vodka through a Brita filter before making their extract?

Thank you all for the tips!

Cheesecake -New York Style

I am trying to make a gluten reduced cheesecake without comprimising the taste..my idea was to make it crustless...Anyway, who eats a cheesecake for the crust? :) Do I need to line to bottom of the springform with parchment paper? I don't know much about gluten free baking, but i plan to put stawberries with vanilla sugar and clear gelatain as a topping, are those gluten free?

BANANA BREAD

cover the loaf with foil for at least 40 mins of baking time...also i found that light colored aluminum pans (especially the cheap disposible ones) turn out an awesome loaf. Wilton also has a great pan in their "recipe right" collection...it is light grey and non-stick. Ive tried fancier pans by my favs are ones i mentioned.

Cheesecake -New York Style

Lots of great tips! :) I might add the teensiest bit of lemon juice to lift the flavor but not enough to make it taste lemony...1/4 easpoon ok or is that too much? I was thinking of adding 3 tsp of flour (no more than that), im guessing the flour binds it all together. I wanted to use 3 vanilla beans but i live in Parkdale, i dont know where to get vanilla beans or paste closeby to King W. /Dufferin, does anyone know?

Chocolate rum banana bread

To lighten the bread, you can add cake flour instead of using just all-purpose flour.

Chocolate rum banana bread

The secrets to a moist loaf are adding instant pudding to the batter, using bananas that are completely dark, and covering the loaf with foil for at least 35 mins of baking. My recipe can be found here: http://www.facebook.com/home.php#!/gr...

and it's posted in the info section. I've never had a dry loaf yet!
