LOVE the way your seafood Paella looks. I don't have a Paella pan :0( . I guess there is equipment I need to invest in first. I bought a Le Creuset pan from william & sonoma and they said lots of people use it for that, but it's smaller. I plan on feeding 10 people. Is this over ambitious to think I can do this tomorrow. What other types of seafood normally goes in there? I would rather have more seafood than meat. |

How to make Oatmeal like Jamba Juice I love the Steel Cut oatmeal at Jamba Juice, But can't afford to buy it every morning. I would love to make a batch to have on hand at home. Does anyone know what they do to make it taste so yummy. Also, is there a brand of steel cut oatmeal that is good? |

How to make those pickled sliced jalapeno's in asian reaturants ooooh pickled shallots. I am vietnamese but can't say I have ever had that. Maybe I should make that too since I am already gonna try pickled jalapeno's. Thanks! |

How to make those pickled sliced jalapeno's in asian reaturants I just got back from a trip to Singapore and they had pickled sliced peppers and they were soooooo crispy and yummy. I have searched high and low and can't seem to find a recipe. Is they called something? Than this past weekend we went to a Vietnamese/Chinese restaurant in San Francisco and they had pickled sliced jalapeno's. They were pretty good. Now I have an obsession of trying to remake it to have at home. Anyone tried this before? Is there a recipe online or one you care to pass on? If I make it, how do I have them stay crispy? Hopefully somewhere here knows what I am talking about. I am so suprised I can't find anything online. |

Cooking Porkchops for a potluck Hi want to make pork chops for a potluck christmas party this saturday. I definately know that I want to brine it per the zuni cookbook recipe. But i want to know what I need to do after? what types of methods, flavors or recipes would you recommend? Can I cook this advance? Or should i arrive at party early and cook it there? what is a good internal temp for pork chops? I am trying to avoid any recipes that require fruits :0) |

I want to try and get this out of the way tomorrow. We aren't baking the prime rib until Thursday and won't have the time to make it after the roast is done with the dripping. I read somewhere that I could buy beef bones and sautee and add celery, carrot, onions, etc. But it wasnt very clear. Anyone have a very yummy au jus recipe that they wanna share? |

HELP!!! Tried to make pumpkin puree from sugar pumpkins I baked several small sugar pie pumpkins to make pumpkin pie from scratch. I just pureed it and it taste almost like nothing. Doesn't taste like the can of Libby's Pumpkin Pie mix. Is this normal and I am suppose to add all the spices myself? is it suppose to be sweet at all? Want to make sure I am doing this right, or else I will have to go out and buy Libby's before Turkey Day. Thanks |

Help! Trying to make homemade butter... WHat is wrong with my homemade butter. I am using heavy whipping cream (pasteurized, will expire 7/5/08) to try and make homemade butter. I am using the whisk attachment on my Kitchen aid and it's still at the whipped stage. Per the recipe I should mix it for 5-8 minutes. It's been about 30 minutes and it's still nice and fluffy like whip cream. I even left the cream out to bring to room temperature too! I am mixing it on medium high speed as well. I swore I followed the instructions to the "t", but it's still fluffy. Is it because the cream is about to expire? I didn't throw it away b/c I am hoping you chowhounders' can help me salvage it. Thanks! |

Has anyone tried to make the Strawberry Cupcake Recipe from Sprinkles? I found an online recipe from Sprinkles. It's their Strawberry Cupcake with Strawberry frosting. As anyone tried it? Is it moist? Flavorful? Worth making? I am making cupcakes for a bridal shower this weekend and don't have time to do a prerun. If you have another strawberry cupcake recipe, you can post for me as well. I want to do strawberries specifically because we got a bunch of sweet one's since it's in season. |

Where could I buy those mochi balls that they put in Pinkberry's Shaved Iced Yogurt No they don't have ice cream in them. They are small round balls, maybe the size of a dime or a little smaller. They look like they are made out of flour but they are slightly transparent, has a nice chewy texture, slightly sweetened. |

What type of flour should I dust on Sweet Potato to make Crispy Sweet Potato fries? I've given up on trying to stay on the healthy side when attempting to make sweet potato fries. Have tried soaking them before baking and they still turn out soggy. Even deep fried them and all the fries got clumped together. Someone mentioned on another post to dust them with flour to make them crispy before deep frying. Corn starch or all purpose flour? When I deep fried them should they be at like 450 degrees? I ate them recently at Pacific Catch in San Francisco, and they were soooooo yummy, nice and crispy. Our waiter there says they deep fry them, he believes in canola oil. |

How does Italian Meringue Buttercream taste compared to buttercream? With the IMBC, can I frost cupcakes the night before and they would still remain fresh if I left it out on the counter? Do you have a good recipe for IMBC? I don't like the regular buttercream, I find it wayyyyyyy to sweet and than the butter film that is left in my mouth after I can't handle. |

I plan on making the Magnolia Bakery Cupcakes but think their frosting recipe is way toooooo sweet for my taste bud so wanted to try something different. Is it worth it? VitaMix Blender, is it worth it? I am researching into the Vitamix blender, is it really worth it? I do currently own a regular blender and also a juicer. But was interested in making fruit/veggie drinks, but wasn't sure if it's worth the money. If so, which model is worth investing in? |
