I have Scharffenberger, which has a heksher but not for Passover... however ingredients are cacao beans and whole vanilla beans and that's all. So that's good enough for my standards.

I live in the hinterlands and can't find sweetened dark chocolate without soy. But i do have some very good unsweetened chocolate with no added ingredients... I can't find a recipe for a Passover parve dessert that uses unsweetened chocolate, though.

I'm especially looking for less expensive cuts for stews and braising, necks, shoulders.. shanks are good but haven't been inexpensive in a long time. At any rate, I'm more interested in places to shop than in getting that specific about the cut.

K&L Bistro, Sebastopol

Has anybody done a review of K&L Bistro in Sebastopol? They lost their Michelin star, and i read a recent-ish review in the press Democrat saying they'd improved and should get their star back. My husband and I were just there for an anniversary dinner--- I was looking for a place where the food was celebratory, but the prices left me feeling not totally maxxed out. I thought the food we got was as good or better than that at much more expensive restaurants. We didn't get enough different dishes to write a real review, but the cassoulet was absolutely incredible, so stuffed with wonderful duck, lamb, sausages, bacon and beans that i was positively excited over each bite.

They had things I've rarely, more like never seen in other places, like boudin blanc and crepes suzettes.

This place looks and is priced like a cozy neighborhood restaurant, but the food and service are really special.

Patisserie Angelica in Sebastopol

So very worth it.
I've just gotten sheet cakes from them, not the more elaborate ones, and that was more affordable. The cake itself is excellent. I used to get pastries from them when they were still in Santa Rosa, I don't know what their retail situation is now but I've never had anything from there that wasn't fantastic.

By all means, use your cornstarch to make pudding, preferably chocolate.
Or you could make lemon filling for pie.

Telluride Eats Overview-Summer 2010

Sigh. When I was in Telluride, it was before the ski resort was there. I stayed at the Sheridan Hotel, which was maybe a hundred years old. I remember there was a great place that had only a wood-burning oven and made wonderful gooseberry pies. There was an Alpine Bar and Grill. I don't suppose that's still there. I remember that while eating there once, the waitress called me to the phone--- "Who, me?" I said, since I was just a tourist. It was my mother. She had tried to call me at the hotel, but the town operator said, "Oh, she went over to the Alpine Bar and Grill, I'll ring her there."
I'd only been there a few days. Sigh.

I just stumbled upon the store in Santa Rosa, on Mendocino Avenue downtown. I got three flavors to split up with my family. Right now, all I can say is "better than Safeway."
At least the cake part, the frosting was sometimes worse.

Key Lime Bliss-- the cake was okay, the frosting was made with some horrible tasting bright green chemical. It tasted like cleaning fluid.

50/50- orange cake which was okay with cream cheese frosting which was okay though not as good as anybody's homemade cream cheese frosting.

Irish car bomb-- just tasted like too-sweet, slightly chocolate cake, crisco icing, also too sweet, no other flavor.

I can bake my own cakes, or sometimes buy one from Patisserie Angelica or Village bakery, so there is no reason to go back.

There were macarons at the Wednesday night Santa Rosa market just now. She had little tiny ones, so I tasted lemon, chocolate, rosewater and salted caramel. The only trouble is, I've completely forgotten the name of the baker.

I liked them, but I actually prefer the hardier and extremely easy Sephardic macaroons I make myself: egg white, sugar, and ground almonds, that's it. You don't even whip up the egg whites.

This was my favorite of the Antojitos-- everything was meltingly tender, except the rhubarb, which was raw and dressed or marinated-- a new experience for me, and very refreshing.

In spite of the exotic meat and elegant presentation, I was reminded of my grandmother's cooking somehow. It was the long slow braising of the meat that created that grandmother's kitchen flavor.

Thanks, Seattleviking. I could take the monorail... I keep reading that crowds at the festival can get pretty oppressive and require a break. I just didn't want to make a reservation and plan my schedule around the meal; I figure I'll be too distracted for that.

I'm going to Seattle for Folklife for the first time. I'm staying in a motel within walking distance, so i was not going to rent a car. I imagine Folklife will be too crazy (so I've heard) to be able to plan for serious dining, but I don't want to scarf down hot dogs either.

I just shopped there--- It looked like they were putting in tables and chairs, but I neglected to ask about it-- so somebody ask them what their plans are!

Turkey "Carnitas" - possible?

I often make turkey or chicken boneless thigh meat by cutting it up and just putting everything in a 12 inch cast iron frypan, not too much liquid, see how much comes out of the meat first--- by the time the meat is cooked, the liquid boils off and the fat is rendered out, so if you just keep on cooking the meat starts to brown in its own fat, I don't have to add any more.

thanks-- actually I think I've never had or bought creamed corn. Am I weird? I think I forgot to say that I put frozen corn in my concoction. Trader Joes sells roasted kernels and I had that in the freezer.

PaulJ, I wasn't being very chowish that night, I was desperately scouring the cupboard and fridge so I wouldn't have to go out in the rain to buy something. I actually wound up finding an old box of yellow corn meal older than the blue, and I made cornbread with onions, chilis, cheese and beans baked in the middle. It was good for a rainy night.

There's a good Mexican supermarket here, so I know I could get the right stuff and try for something authentic. But first I now still have the blue cornmeal and i have to find a recipe for that!

It's pouring rain, so I'm trying to make dinner from what i have at hand. I have some blue cornmeal, so I was thinking of a vegetarian tamale-pie type casserole. I've seen some recipes where the cornmeal is made into a cornbread batter with egg, and some where it's made into polenta.

I haven't actually made this before-- which way should I go?

Thanks for the timely answer! Perhaps I was thinking about the time I made stock with a salmon head and didn't remove the gills--- it was bitter. I do know ducks don't have gills--- I mean maybe I got subconciously spooked about heads in general.

I'm about to chop the head, feet and wingtips off this duck and put the feet and wingtips in the stockpot, but what do I do with the head? I wonder if the umm, more complicated nature of the head would mess up the broth in some way?
