They generally start up about the time they start trucking in produce from California and they shut them down in late August before most of the real harvest period. Most markets are more interested in face painting, selling cell phones and crafts than real groceries.
POLL: Can you walk to an actual grocery store?
The new location for the co-op also has virtually no free parking. Living in Sparks, I'm also out of a reasonable walk to the grocery stores due to traffic and distance.
Are there any good Reno restaurants with patios?
Right now most of the patios are closed due to the cold weather. May through October are the better times for patio dining in this area, but the weather can be fickle... I've seen it snow every month of the year here in Northern Nevada.
Best Mexican Food In Salem
Alberto's across from the Fred Meyer store on Market St has excellent burritos. I had the breakfast burrito with chorizo last time I was in and there were chunks of the meat mixed in with the eggs. Their coffee had cinnamon in the blend and was a very pleasant break from the usual 'burnt' coffee served in the northwest (Charbucks...)
The Cost of Cream Circa February 2012
It is $4.99 a half gallon at the Costco here in Sparks, NV. It is very good quality and lasts long enough in the refrigerator for me to use it up. Compared to the supermarkets that are selling lighter cream at $3+ a pint, it is a real bargain.
Reusing deep frying oil? What are "the rules"?
The biggest problem with the cold oil is the chance of it having moisture. ANY moisture in the pot while it is heating up may cause a bleve with potentially deadly results. Slow rewarming with a solid cover will help remove the moisture.
Long Beach with kids?
You are going to luck out on the weather this weekend! Let them pick their own cookies at the Cottage Bakery. There is also a good candy store about a block north of the bakery. After a run on the beach to work off the carbs, an ice cream cone from the small shop at the corner of Bostad and Pacific. The Crab Pot is kid friendly. There are also some good small eateries along the harbor at Ilwaco or pick up a couple of fresh Dungeness crabs from Ole Bob's, some fresh bread and have a picnic on the jetty or up at the lighthouse....

The Corral Drive In in Long Beach had excellent juicy burgers, but the onion rings were strictly frozen food service style. Found good fresh crab at Linda's in Chinook and at Ole Bob's in Ilwaco. Ended up getting most of the groceries at Fred Meyer, Safeway and Costco in Astoria/Warrington. Will be going back in the near future and will try to check out more places.

While you are ordering, fill a teaspoon with Sriracha or whatever hot sauce they have on the table, lick it clean, and say "oh by the way, could you bring some really hot sauce out with that hot dish?--this stuff is awfully mild....."

They are highly destructive--They hammer the riparian areas. All the watercress that I planned on for salads on my last camping trip had been trampled into the mud... This was in an area where there are no cattle.

one hors d'oeuvre for 150-200 people
Check with you local bakery and see if they make oversized (7"x7") dense thin sliced bread. It is usually available in various colors. Make sandwiches with 3 pieces of bread with two fillings (ie, salmon spread and whipped cream cheese). It helps for spreading and assembly if the bread is frozen. When assembled, trim off the crusts and then cut each into 9 pieces (1.5x1.5"). You can make 3-400 of these pretty quickly and they look quite festive.

They were definitely cooked to order, mine were still sizzling when they hit the counter. The Cajun fries are pretty good especially when doused with the Louisiana hot sauce. I think they dip the tops of the biscuits in butter. Very good, but about 2 days worth of sodium and calories in a serving......
turkey stock in advance
I have turkey stock from the last turkey dinner stored in the freezer--that way I have it to make the stuffing and other needs when it is needed--works great even though it may be over a year old. (freezer holds things at -10)
Breakfast On The Holidays?
Crepes stuffed with fruit and topped with Grand Marnier whip cream. Set it up as a buffet with a variety of fresh and frozen fruits and berries. Juice, coffee and bacon filled the menu.
Aebleskivers are also a favorite, but you really need a pan per every three people to keep a flow of fresh ones going. Served with jams, butter and honey with Canadian Bacon or sausage.

It will be interesting to see if any of the Kirkland products will show up on Kimball's shows or magazines in their testing sections. He has a lot of regional New England products that are not in national distribution, and the addition of Kirkland would give use some information in the rest of the country.

Better defining the area you are referring to as "High Desert" may get you some responses. High Desert areas in CA include Alturis/Cederville, Susanville, the Owens Valley, Ridgecrest/Inyokern, Tehachapi/Mojove, Landcaster/Palmdale, Victorville/Barstow, Baker/Zzyzx, 29 Palms/Joshua Tree. etc.
Can I culture creme fraiche with reconstituted dehydrated buttermilk?
Didn't work--8 hours at room temp and15 in the fridge. Still as fluid as the original cream and it has a slight buttermilk taste.
In the past I've mixed heavy cream with Daisy sour cream and it does stiffen up after a few hours in the fridge.
Can I culture creme fraiche with reconstituted dehydrated buttermilk?
I've added 1 tsp to a cup of heavy whipping cream and it is sitting in the fridge-- will report back.

I've cut them into 1/8-1/4" lengths and dried them. They readily rehydrate from even the steam coming off of hot food, or being mixed in with cool sauces like sour cream or salsa.

Fast freezing can be done with any freezer that is sub-zero. Place your meat on a Silpat sheet on a pre-cooled aluminum cookie sheet and leave it in the freezer for 2 hours and then place it in a vacuum bag and seal. The cookie sheet will provide rapid temperature transfer, and the Silpat will keep the food from sticking and allow you to remove and bag it quickly. Do not use any other wrapping while freezing, it will only slow down the freezing process.

Preparing Large Meals in a Small Space
If you have a washer and dryer and the laundry is adjacent to the kitchen you can cover the top of them to create more workspace. Mine are through a set of double doors right in the kitchen and I bought a slab of the poly cutting board that fits across the top of both. I was able to do plating and turkey carving in that area
