Not your average Christmas Cookie.
Hi there,
I have a cookie recipe that I have had for about 10 years. I don't know where it came from, but it is a "must have" for my Christmas cookie platter. I call it Coconut/Cranberry Roll Cookies and they are the most requested Christmas cookie I make. Enjoy!
1 1/2 C butter
2 C sugar
1T grated orange peel
2t vanilla
3 1/4 Cflour
1 t baking powder
1/4 t salt
1 1/2 C dried cranberries
1 1/2 C sweetened flaked dried coconut
Beat butter, sugar, orange peel and vanilla ntil smooth. In another bowl mix flour, baking poeder and salt. Add to butter mixture and beat on low until dough comes together (about 5 minutes). Mix in cranberries and coconut. Shape the dough into rolls and refrigerate. (I've even frozen it at this point) Slice off rounds about 1/2 " thick and bake at 350 for 8-11 minutes. Watch closely and take out just when the edges begin to brown. Cool on the cookie sheet for 5 minutes.

Looking for someplace for Father's Day Brunch in Salem - moved from Metro Portland board
Hi,
Brunch spots are not a highpoint in Salem. Busick Court offers a great breakfast, but it is often pretty crowded. La Capital, a French Bistro, opened this year and it did have a brunch. I haven't gone, but it would be great if they offer it. Old Europe offered a brunch over Mother's Day and that is a great place too. Good luck and let us know what you think!

Eating our way thru Istanbul
We had a wonderful lunch at Ciya! It was fairly easy to find and the trip on the ferry was very nice. I had an eggplant/lamb meatball/tomato dish that was out of this world. My friend had iskander kabob. He said it was the best he had ever tasted. I had a pumpkin/walnut/tahinni dessert that was amazing. I'm now in a serious search for a good Turkish cookbook written in English. Any suggestions???

A friend and I are in Instanbul for about 10 days and we have used many of your suggestions, especially Istanbuleats. Thanks to all the posters who have done research for us prior to our visit!
We are going to try Ciya Sofrasu today. We are very excited about it. Hamdi's is a favorite of ours too. We have already eaten there two times. The view is fantastic with the 3rd floor being the best. We would also like to recommend the small restaurants on Hocapasha Soaka near Sirkaci Station. There are many small places that are top-notch. Our number one favorite place is Kesap Osman for Iskander kabab. There is a place kitty corner from that where we have had lentil chorba twice and it also has outstanding firin sutlac.

Turkish Cookbooks
Hi to all 'Hounds!
A friend and I are currently in Istanbul and having a great time eating our way through the city! We too have been looking for a Turkish cookbook that might compare to Madhur Jaffrey's take on Indian cooking. PLEASE help us if you can!
An aside regarding great food, if you haven't already tried Hambi's it is a great place with a fantastic view (3rd floor is the very best).

Hello and welcome to Salem!
We've lived here for a long time and love lots of things about it. I admit that I have the best of both worlds in that we have a small loft in The Pearl District of Portland, so I can get my Whole Foods, TJ's, fine dining etc fix easily. However, there are lots of good places to shop. LifeSource on Commercial is wonderful, Roth's for many things (altho it is expensive) and I like WinCo for staples. It is inexpensive and the produce is great! The turnover is huge and things there are very fresh. We have THE BEST fishmarket around, called Fitts Seafood on 13th Street in South Salem. The best Farmer's Market (in my opinion) is the oldest, on Rural Street in South Salem. It is open all year and features wonderful fruits and veggies!
Restaurants that have been mentioned are very good...La Capital, a new French Bistro is wonderful, as is the Wild Pear. Rudy's has excellent steaks, Amadeus, Da Vincis and Old Euorpe have good continental cuisine. There are some excellent ethnic restaurants in town, and as people have mentioned, the wine country is very close.
What brings you to Salem? Have you purchased a home yet?
I lived in Hingham as a kid and spent summers on the Cape in Harwichport. I'd love to meet up with you and your family to welcome you offically! Let me know when you arrive.

I need some help finding a great recipe. I've lost a recipe for make ahead mashed potatoes that calls for either creamed cheese or sour cream. Does anyone have the recipe? Can you share it?
It is a fabulous recipe to have on hand during the holidays as the casserole can be made a few days ahead and then just warm up in the oven.

tea kettle question?
Hi,
I have a Dacor gas range with 6 burners. It has lots of power and I've just about ruined a Oxo teakettle with the high power from the burners. I'm planning on replacing it with a Le Creuset brand. I've been online doing some scouting work and I find their "Halo" kettle interesting. It uses the words "heat resistent" in the description. Does anyone have any info about it? What about the idea of a Le Creuset teakettle with my powerful range? Does anyone have any other suggestions?
Any help would be gratefully appreciated!

We second (or third) the recommendation for Russell Street! The brisket is wonderful, the smoked turkey great, but the greens are out of this world!

Salem, OR: Where shall we eat?
When did you have dinner at Caruso's? We ate there over a year ago and it was horrible. There were 3 of us and every dinner was over cooked, rubbery and made with plastic cheese. Hopefully, that was just an blip. Was your experience recent?

We have a small apartment in the Pearl and have loved walking and exploring the neighborhood. We really like Sungari Pearl, Wildwood, pub-grub at Bridgeport Brewery, Silk, Elani (spelling?), Paley's Place is amazing, Ken's Artisan Bakery for sandwiches, pizza on Monday night, and we love his morning rolls, DF for Mexican, we love Russell Street BBQ....I could go on and on!

Salem isn't the hot spot for eating that Portland is, that is for sure. Rudy's at Salem Golf Course has wonderful steaks, Amadeus has very good continental cuisine, White's has great breakfasts, Busick Court has wonderful breakfasts and lunch, Burger Basket makes killer burgers, Christos is wonderful pizza, JRs has yummy Mexican, a wonderful Vietnamese place on Silverton Road and Lansing who's name I can't remember, and a fabulous Lao-Thai place on Commercial called Lanxang.

'Northwestern Food' in Salem
I agree with most of the recommendations...Silver Grille and the Bistro are among the th best in the Salem area. I'd like to add Old Europe Inn on Liberty South and Amadeus Cafe on Skyline South. Both take local fresh ingredients and make some great dishes with them!
For "funkier" types...Off Center, Busick Court, Whites, Court Street Dairy Lunch are among our favorites.

No Knead Bread - 1 Year Later
I've been making this bread for over a year and we LOVE it! My husband is thrilled that it is now fall in Oregon and I don't have to watch the weather report to find two days in a row that are not hot!
I love the suggestions of using rice flour and/or non-stick spray for the step that has continued to confound me...the rise on the floured towel. I, too, have thrown out more than one cotton towel! The siltpat, parchment paper/wax paper/non-stick aluminum foil and colander are ideas I may also try.

Our price range is open, but probably more to the moderate end. One over-the-top dinner would be great, but more recommendations in the moderate range. At What Temperature Does Pyrex Self-Destruct? (moved from Home Cooking)
Hi to all the Pyrex People out there!
I made a wonderful find when I was looking for the proper container to bake Mark Bittman's no-knead bread which requires a 450 degree oven with heating the container and lid for 30 minutes prior to baking. I found a glass loaf/bread pan WITH a lid at a Thrift Store in Portland, Oregon. It is obviously old and I just love it, especially since the price was only $7.00. I guess I just assumed it was Pyrex. I just looked at it and it does not say Pyrex, the only mark is a W that is underlined. It has baked numerous loaves of bread at the high temp and I really love it! Any ideas on what brand it might be?
