Thomas's English Muffins

Recently I noticed Nature's Own English muffins in our Harris Teeter and got some. They're pretty good. Easy to split and with good nook and cranny texture, I really liked them. The flavor is good, too.

I purchased two Honeybaked Hams over Christmas for my brother to give as holiday gifts for clients. Since it was at the last minute I could only get the boneless ones that ranged 4.5 - 5 pounds. Both together cost about $120. Outrageous.

I'm curious as to why it really matters. Not a dig, really.

Warming food in the oven on ceramic plates: How hot is safe, what temperatures are ideal, and should food be covered w/ foil or not?

Ceramic ware is generally fired to about 2400 degrees F in the making process. 300 degrees isn't going to phase it. However, what is a problem is thermal shock - going from hot to cold. Don't take a plate of food directly out of the fridge and put it on a hot rack in a hot oven. That goes for glass/pyrex, too. And when taking it out of the oven avoid putting it on a cold surface.

Very often I'll put a ceramic baker on a sheet pan and put the whole thing in the oven. As the sheet pan warms so does the baker avoiding the whole thermal shock thing. I'd do this with your plate.

Yours don't?

I guess it depends on what you want to do. If I have the oven on already I just pop the griddle in. No more work than preheating a sheet pan for roasting or my cast iron skillet for making cornbread. To each their own.

It doesn't degrade. That would imply that it isn't good or gets progressively worse. It actually is like wine that gets better with age. It acquires character.

My cousin is a beekeeper in Hawaii and he ages part of his honey. The 15 year old honey is amazing. So, I'd say don't worry about it.

I make a similar cinnamon toast pretty frequently - about once a month for my guilty pleasure breakfast. Also with good dark coffee with chicory.

There are crispy ones which come in a orange colored foil package and the soft chewy ones which come in a clear plastic packet. I think people hear have found both to be favorable - depending on the person.

Steam, don't boil those hard cooked eggs.

Steam is steam so I don't know why that wouldn't be possible. This week I steamed some aged eggs with a bit of baking soda added to the water. I'd never used anything other than plain water. I wasn't expecting much of a difference since I kind of doubted the soda would affect a steamed egg, but for whatever reason these were the easiest eggs to peel that I can recall.
