Rehoboth Beach Long Weekend Suggestions?

Fish On in Lewes, owned by the Sodel Concepts, which also owns Blue Coast, in Bethany and a number of others. Matt's Fish Camp, in Northern Bethany is a classic, though high end fry shop. You can bring your dogs, and sit outside at the picnic tables or eat inside at the diner like interior. Great fried oysters, crab cakes, etc. If you bring your dogs, and it's not yet season, you have the beach at the end of the block. Matt's is also owned by the same group.

Pizza in Bloomfield, Belleville, Nutley, area

Two great fairly new additions to the pizza scene in the area. Both on Broad Street in Bloomfield: Pizzaria Rustica, (thin crust, great sauce, a perfect large pie) And Bar Cara, for a personal size pie. Bar Cara is owned by the same people who own Fascino in Montclair. The pizza scene in the area has definitely improved.

Northern NJ (Clifton)

I suggest you try Montclair which is just south of Clifton. Montclair has a huge restaurant scene with some great choices. You may want to look at Baristanet.com for restaurants and reviews in the area. Bloomfield has an emerging restaurant scene as well.

Tell me your bakeware essentials, please!

I bake occasionally, but for over 20 years, I've been using the same stuff.
Jelly roll pan, you need 2. William Sonoma is best.
2 - 9 x 13 pyrex baking pans, they multi task for sheet cakes, or cobbler, or brownies, or for roasting.

2 - pie plates, also pyrex

We've thrown away all our insulated cookie sheets, they screw up the cookies. Ditto for any of our black finished cookie sheets. We have 2 steel rimless sheets from William Sonoma.

Bundt or tube pan. You should have at least one. Easy to make cakes with, just sprinkle powdered sugar, and done.

9 inch round pans, 2. I think I have Wilton, but I don't use them very often.

Flexible spatulas. I think I have 4 or 5. Very useful.

Hand mixer, I have a kitchenaid.

And of course, a Kitchenaid stand mixer. 4-1/2 quart. I've never needed anything more, but really couldn't bake without it most of the time.

A lot of very good choices in Bethany and environs: for upscale choices, stick with Bluecoast in Bethany, Catch 54 in Fenwick or Northeast Seafood Kitchen in Ocean View. All these restaurants are owned by the same folks, who also own Fish On, and Lupe di Mare in Rehoboth.

Crabs: Mickeys, or Blue Crab, in Bethany, or Fenwick Crab House.

Drink on the water: Mango's, just don't eat there. Or Catch 54 in Fenwick, where you can eat and enjoy a fabulous water view.

Man Vs Food

In an interview written last year, I believe I read that Adam does the eating challenges no more than once a week, with a lot of excercise in between. I think he said that he is very conscious about both his weight and his health and it's a tough balance.

Don't remember where the article was, but it came out last year.

I'm a fan. I think he's feeds the guilty pleasure in all of us. Likeable too.

If you want to sit at the bar, you won't get a seat if you get there later than 5, 5.15. The scene is busy from lunchtime on, but gets really crowded from 5 on.

Recently I've discovered some great Chicken Tikka Masala Sauce and Butter Chicken Sauce made by Tiger Tiger. I've been heating up cubed chicken breasts with peas or potatoes or cauliflower in that sauce, it's great, and takes no time at all.

Drinks in or near Montclair, NJ

For pure drinks and entertainment value, none better than Richie Cesare"s near the Walnut St train station. Go there for a drink, then go elsewhere for dinner. It's like the Soprano's meet Montclair. Okay, maybe not a place for a first date, but entertaining nevertheless...

I also vote for Stamna, it's the best Greek in the area, need a reservations.

We prefer the falafel from Falalfel Hut on Bellevue.

Rosario's at Watchung Plaza for fresh Mozzarrella, Bread and other stuff. Their mozzarella brings tears...

Pizza - Go to Mario's in Clifton, on Van Houten. Order the Emma's extra thin. You have to eat it there, it doesn't travel It is real pizza, (not Star Tavern Bar size), Order plain, or with spinach if you must...

Oh, I apologize, of course Chengu 1, I saw it and read "46"!! We love it. I wish they'd change the name, I'm constantly making that mistake when people refer to it. (I usually call it the restaurant next to Cinema 23)

New to Montclair-another UWS transplant

Welcome to Montclair! So there's a lot of food here, some as good as NY, others, not so much.
Start with Bagels: Forget it. There are okay bagels, (Bagels ABroad, Valley Road and Broad Street), but not really good ones. I think the best bagels in the area are in West Orange, on Eagle Rock AVenue, (Bagel Box? Near Pleasant Valley Way).

Sushi: A lot of decent stuff, (Aozora, Neauveau Sushi, etc), but great sushi in the area can only be had at Tomo's Cuisine, on Rt. 23 in Little Falls. Frequented by Native Japanese, only 8 tables, must make a reservation, and he only serves what he has that day.

Chinese: Eh. Don't agree with Chengdu.

Shrimp stock

I keep it really simple. Whenever we make shrimp I throw the shells in a pot, cover with water and boil for about an hour, (though 30 minutes is probably enough).

I let it cool and freeze it. Sometimes I have a pint, sometimes a quart. It never goes to waste. Try it with bisque, fish stew, even steamed clam...better than water.

Meding and Son's Definitely, If you go on a thursday, they have Oyster specials, though the fried oysters there are the best any time.

Also on Rt. 13, Helen's Sausage House, it's in Smyrna, Delaware, not far from Dover. Great sandwiches. It's gotten a lot of press.

Should I buy a Keurig

Hate the coffee it makes.

Frankly, if you're drip machine isn't making good coffee, I would suggest you may not be using enough coffee in the pot. I think that this is a common mistake easily remedied. Of course, your coffee machine could be bad, but you should experiment with quantities of coffee, regardless of the type of pot you use.

Food in Bethany Beach, DE?

I think Mango Mikes and the Parkway are must-to-avoid restaurants if you're looking for food. All the SoDel restaurants are open all year, but they may not all be open every day, (Check their websites).
Mickey's is closed until spring. Bethany Blues is open year round as well.

lobster: boil or steam?

We've done it both ways. Boiling is about 8 minutes, steaming is about 15 minutes. But this assumes you have a pot with a lot of room in it and you aren't crowding the lobsters.

meatballs with a hard outer layer

I bake the meatballs on a cookie sheet. Easier than frying in batches. I use the Joy of Cooking's meatball recipes, (the german meatball with modifications), or Julia Child's meatloaf recipe.

Dry roast pork - what to do with it?

I'd make hash. Then serve with poached eggs.

Any REAL new orleanians want to help me with some gumbo?

Okay, I'm not from New Orleans, I'm a New Yorker who has cooked a number of gumbos. (my favorite recipe to beat all others is Ella Mae's - it can be searched on Epicurious, but it's always faithful). Anyway, the secret is the roux. It takes a long time,, (easily an hour), and needs to get to the color of peanut butter. Slow, slow, slow is the key. You can debate whether to go with Okra, or File to thicken, but the color should be brown and it should be spicy.

Cracking eggs-proper technique?

For a zillion years I used the side of a bowl, or the blunt edge of a knife. Then, last year, I went to a cooking event at a culinary school, where we cooked with chefs. My job was cracking eggs. I barely got through the first egg when I was shown how to crack an egg. The chefs insisted I crack them on the counter. I've been doing that since, and must admit, there is far less chance of getting shell in the bowl that way.

Easy enough to wipe the counter down.

Catch 54 is open and can accomodate 9, (in Fenwick), Northeast Seafood Kitchen in Ocean View,can as well, and so can Bluecoast. These are all owned by Sodel, and are great.

Pasta Carbonara

I use Ruth Reichl's recipe: (I'm paraphrasing), 4 eggs beaten in a large bowl, set aside.
cook pancetta, (or bacon or guancione), about 8 oz.
add 1 pound cooked pasta to the scrambled eggs, add 1 cup parmesan, add pancetta, mix. eat.

it's the best.

I was going to say Katz's on the title of the thread alone! Then you can walk down the street and get a knish at Yonah Schimmel's.

We do a brussel sprouts with bacon and balsamic. Never any leftovers.
