Moroccan pizza?
Tonight I'll be making two thin crust pizzas. I want to make one "normal" but I want to experiment with the other. I've heard that some sort of pizzaesque flatbread is common in North Africa. Does anyone know what goes on it?

I make something like that with regular lemons all the time. I've never even thought of using the preserved lemons.

your favorite cordial / liqueur / infusion recipe?
I don't know much about liqueurs, but I love infused vodka. Just let flavorful ingredients sit in the vodka for two or three days, then strain the pieces out and pour the vodka back in the bottle. Here are my favorite infusions:
Half of a julienned jalapeno and a pinch of the chile seeds. (If you like pain).
About an inch of horseradish root, peeled then grated. (A great digestif).
The zest of one lemon and a healthy pinch of coriander seeds. (Good aperitif).
A vanilla bean, a stick of cinammon, and a quarter of a nutmeg. (For dessert).
Two star anise and a pinch of anise or fennel seeds. (Tastes like pastis).
I like to buy two one-liter bottles of vodka and a four-pack of grolsch beer (the 16-ounce bottles with re-closeable stoppers). Drink the beer, and then make four infusions.
What else can I do with preserved lemons?
I have a batch of preserved lemons (cut in half and packed in salt and spices) clogging up my pantry shelf. So far I've used them to punch up fish and shellfish dishes, but I'm getting bored. Do you have any creative ways to use preserved lemons?
good marinade for skirt steak
I like to make a paste of olive oil, garlic, black pepper, lemon zest, and thyme or rosemary. I don't usually worry about tenderizing skirt steak, it's plenty tender for me when just grilled medium rare.
Can I make croutons out of regular bread?
That oven trick is a great idea. I usually just saute the cubes, but when I use regular white bread they sometimes end up burned on the outside and pap in the middle.
