Shrimp
Citeralla on B'way & 75 St. has the best that I know of ( also 75th & 3rd) Gulf shrimp, wild caught. Others are farmed and who knows what pollutant they are grown in, ie from china and indonesia. I will never eat shrimp in a restaurant unless i know where it came from.
high class great food Chinese - Does it exist?
Shun lee West has 2 menus. Tourist and chinese. You must ask for the chinese. next time try the chinese menu. It is better. Also I like the Cafe, next door. Dim sum is good plus regular menu.
Bronx, Yonkers - help!
In Riverdale, there is Jakes steak house on Broadway around 246 street, Nearby is a good barbeque on Mosholu Ave. just west of B,way. On Johnson Ave just south of 235 st. is J. Jade, chinese, very good dim sum.

My two favorite upper west siders are Picholine, near Lincoln Center (near Dizzy's) and Ouest near 84 St. Have never been to Compass.

we were there last Saterday. My wife had a scallop dish in some strange sauce. She couldn't finish it and didn't want to take it home. I had a lobster & pasta dish that was so-so. The quaill ( or some sort of game bird) was good. deserts were not to rave about.

Riverdale is a culinary wasteland. BUT J. Jade on Johnson Ave. has very good dim sum. There is also a good barbaque place on Mosholu ave. and a good Japanese up the block.

I like Shun Lee Cafe on W. 65 st. Not open for lunch. My Chinese friend likes Jing Fong. I haven't been there yet.

Riverdale garden on Manhattan college pky is good as well as Jake's Steak House on Broadway. Roberto's , last time I checked, does'nt take reservations so it coould be a wait on a a buisy night, check with them.

Cocoa, Dutch processed?
Thank you for your reply. Now I understand the difference. I agree that the untreated cocoa is much richer. However, the recipe I am using for a cake calls for dutched cocoa and I'm wondering if it will make a difference, good or bad if I use untreated cocoa?
