Summer Oatmeal (cold)

I am glad to see people are enjoying it! We are still chowing away on it, switching out with regular style steel cut oats for breakfast.

We recently tried vanilla yogurt but I found it too sweet with the dried fruit.

A raw broccoli dish has changed my life. Broccoli ceviche, if you will.

I make this all the time for bbqs. I double the garlic and use 1/3 of the oil. People rave about it and it always gets eaten. You can add strips of red pepper or add dried cranberries to change it up occasionally. :)

I love Tiradito de Ají Amarillo and I would love an authentic recipe for the Aji Amarillo sauce. I have access to Peruvian ingredients.

Happy accident - keeping salad greens fresh

I have had good luck with the large round Tupperware fridgesmart bowl. I don't have much "real" tupperware because of the cost, but this was worth it for us. The greens last until we want them.

celery recipes

When I get too much celery from my CSA (which is every time I get celery, really) I cut it into 3 inch lengths and put it in the dehydrator for a few days until leathery. Then, when i want it for soup, I just reach into a ziplock and pull out what I need.

Summer Oatmeal (cold)

I did a search and I didn't see anything like this on Chowhound so I thought I would share. We just came back from vacation, and one of the places we stayed served "Summer Oatmeal" for breakfast. It was a cold oatmeal and was really very good. We have been making it since we got home and love it.

1/3 Rolled Oats (not steel cut, not minute)
1/3 Yogurt*'
1/3 Milk

Mix and refrigerate overnight or longer.

We find 1/3 cup of each is a good breakfast serving. But you can make a cup of each and have several days worth and it still tastes fine when you eat it later. I also add some chia and flax in when I mix it, a pinch of salt and a bit of honey or brown sugar. We eat it with chopped nuts and fruit mixed in but I add that at the table.

*Don't use Greek Yogurt. It comes out with the consistency of spackle.You have to add a lot more milk. :)

your best chicken stock recipe

I have two basic types of stock (big/slow and small/ quick):

For a large batch, which I will usually pressure can and get 12 quarts or so, I use a combination of raw and roasted chicken bones, feet if I can find them, onion, celery, carrot, some peppercorns and sometimes parsley or a bay leaf, depending on mood. I will put the bones in a 20 quart stockpot, cover with cold water, bring to a simmer on the stove top, skim any foam, and once the foam subsides, I put the entire pot with a lid on it in a 200 degree oven for 24 hours. Cool, remove fat, filter, bring back to a boil and then pressure can.

For a small batch of two quarts or so, I will use my electric pressure cooker. Same ingredients (just much less, of course) in the cooker on high pressure for 90 mins with natural pressure release. Cool, remove fat, filter and pour in to quart containers or ice cube trays and freeze. This almost always gives me a perfect gelled stock.

Simple things you can't get right

Most drip coffee pots just don't get hot enough for good coffee. I am the go to coffee person in my group of friends - here is my really simple method. Yes ,it's an extra step but completely makes a difference. It just seems like to much work for most people, I guess, but I only make coffee on the weekends.

1) Put a kettle full of water on the stove and bring to boiling / whistling temperature
2) While the water is heating, grind your beans
3) Put the beans in the filter, and add about 1 cup or so of the boiling water to them, and stir with a chopstick as mentioned in Mr. Taster's comment for French Press.
4) I put the rest of the water into my carafe, to heat it since I have a carafe style pot.
5) After 3 to 5 mins, pour the rest of the water from the carafe to the water reservoir.

Enjoy.
You will get hot, flavorful coffee every time.

Freezing Mac and Cheese

Reviving a really old thread here, but I wanted to report back that I made and froze 5 pounds (uncooked) mac and cheese for a wedding a few weeks ago. I used two of the tips from here (canned alfredo sauce and make it extra soupy) and it worked like a charm. The entire full size steam pan was picked clean.

Dine Out Ft. Lauderdale

I went to Jonny V's last week. Demerits because we had to ask for the Dine Out menu.

I had:

Key West Style Conch Chowder - Good and slightly spicy
Wild Mushroom Pancake "Short Stack" - Excellent. Best part of the meal.
Sage Grilled Florida Dolphin - the dolphin was good. The rock shrimp plantains were better.
Bread Pudding Flan - eh. Good but nothing special.

Has anyone been to Dapur? Their Dine Out menu looks interesting.

Charm City Burger Company, Boca

We ate there last night for the first time and I was completely underwhelmed.

1) I ordered my burger "under" which I assume is rare from the description. I got it medium well. ugh.
2) It took 20 mins to get a burger when there were only four tables full in the place.
3) Most egregiously, after I ordered, I decided to go to the bathroom, use the facilities and wash my hands, since you know, I was eating a burger with them. Their only washroom was out of order, and the cashier told me to walk to Publix.

Sorry, I won't eat a place that has no sanitary facilities. And I definitely won't eat at a place that can't cook a rare burger.

Calypso Restaurant & Raw Bar: Fresh Seafood and Caribbean Flavors in Pompano

I like Calypso - we went for dinner two weeks ago, and I've been there for lunch numerous times. My only complaint is that the service, at least at lunch is true to their "relaxed island style" and has kept me there for a full two hours before.

Food Town in Davie (Stirling Road and Davie Road) has them. Along with just about any other type of oriental noodle you would want.

Anyone make their own vinegar?

Just pour it in a crock or ice tea jar, put it somewhere warm, cover with cheesecloth and feed it a glass of wine every week or every other week. It will smell like acetone for a while and then it will start to smell like vinegar. The mother you are seeing will grow to a large layer of whiteish cellulose layer which you can ignore. It will fall when you feed more wine and create another one. For more details, visit this site which I found when I was starting out.

Hi S. Fla hounds.

I'm in Fort Lauderdale, but getting married in the Upper Keys. I am looking for a wedding cake bakery in South Miami or the Upper Keys that will make and deliver a great and gorgeous cake. I'd like to be able to schedule a few tastings to get my bearings on what we want.

The one place that has been recommended to me in that area is Bobs Bunz, but their tasting policy is really off putting. (Buy a cake, in any flavor you want!" Want to try two flavors? Buy two cakes!").

Any recommendations appreciated.

Dress Codes - what is female equivalent of "jacket required?"

Thank you to you all for the tips. Based on your comments below, I am thinking a nice pair of dressy black pants, a cashmere sweater and low-heeled (1") black leather boots. Plus outerwear, of course.

Thanks for the tip on switching out shoes. That would have not even occurred to me. :)

I appreciate everyone taking the time - we are really looking forward to this trip and a lot of good food (but mostly smaller, less well-known places I already love).

Celery in soup

I finally bought a bag of freeze-dried celery from Penzeys for this reason. It isn't perfect, but for a long-cooking soup or a braise, it works fine.
