Making paninis without a grill pan?

I always butter the bread and it turns out great, although I make sandwiches with thick slices of sourdough so the thickness of the bread might have an effect on sogginess with butter...

Measuring Cheese

I use a digital scale to measure cheese, in snacking too. A 1oz serving grated is a lot more cheese than it looks like!

Community gardens (that grow veggies) or allotments in Manhattan?

As far as I know NY doesn't have allotments - only community gardens. But community gardens in which you can produce food, you can find your nearest community garden at this link: http://acga.localharvest.org/search.j...
Good luck!

How to make my stove burner smaller

Sorry I wasn't clear, this is a gas stove and I want to make the heat weaker. The gas stove at my last apartment had two burners with smaller heat elements so that it where I am coming from. Thanks for all the suggestions! I do use a double boiler for melting chocolate but I never thought about using it for anything else... I don't know how well it would work for a grilled cheese ;)

I will look into the 'flame tamer', I'd never heard of that before!

Thanks again everyone! I knew I could count on the Chowhounds!

How to make my stove burner smaller

My stove has 4 units that are all the same size. When I put it on low it still is way too hot! Any suggestions? (I rent... so a new stove isn't really an option... I can't wait til I can buy my own perfect stove!) Any DIY ideas?!
Thanks!

How do you get rid of fruit flies in your kitchen??

Hm, I put banana in the fridge and they turned brown really fast. I haven't quite masteres banana storage. To ripen put in a paper bag, I keep mine on top of the fridge and they seem to ripen in a few days (I guess it depends on how you like your bananas... you can always rip the bunch in half so you don't get too many, unless you like banana bread! Then any left over bananas that get brown you can put in the fridge (they will get more brown but will have the perfect texture for banana bread or a smoothie.

Oh glorious day! Oh wonderful year! Oh lucky me! I finally, finally, finally get to host Thanksgiving. I banish thee jarred gravy (tell me about your single favorite dish)

Homemade cranberry sauce. I was never really a fan until I had some homemade stuff (at a friend's home in London of all places!). Also I love a well roasted turkey... where the meat is still moist (my mom's were always dry). And I am a fan of classic mashed potatoes, especially with roasted garlic. I guess you could say I'm traditional. Well... there was that year in high school when I decided we would have lasagna at thanksgiving...

does anyone still buy instant coffee?? canned vegetables?? condensed soup??

I buy canned beans and canned tomatoes. For all other veggies I stick with frozen (or fresh). The occasional soup, but not usually cans- I tend to get the boxed ones. Roasted pepper and tomato is my favorite! And I have a bit of instant espresso for baking, but I'm not a coffee drinker.

How do you get rid of fruit flies in your kitchen??

I just set out a bit of rose in a glass and a bit of cider vinegar and I didn't get anything. Then I added some dish soap to each one and the cider still had none and the glass of rose collected several and is still collecting more. They're almost gone! Yay!

making ice cream at home help!

I think a double boiler is an excellent idea. I was thinking that last night as I was snacking on the chocolate ice cream we'd made the day before- I think we burned the chocolate by cooking the cream and chocolate instead of letting the chocolate melt in the cream like the recipe said... it's not horrible but it works well with the milkshake light strawberry ice cream. I'm super ready to try again now!

making ice cream at home help!

The volume sounds like a possibility. The bowl was definitely frozen, it had been in the freezer overnight. Perhaps we will try again... Thanks for the help everyone!

making ice cream at home help!

I tried to make strawberry ice cream and when I was making the custard it seemed like it was thick enough but when I poured it into the bowl it didn't seem thick enough and when I ran it through the ice cream machine it didn't thicken or freeze at all. I put it in the freezer and now I have basically a frozen creamy milkshake on my hands. Is it because the custard wasn't thick enough? Anyone done some ice cream troubleshooting before?!

Is there any way I can fix this now? Is it just time for a milkshake? Thoughts on future batches? I got the temperature up to what the recipe said and it coated the back of the spoon...

This was my recipe http://www.foodnetwork.com/recipes/ge... I mashed teh strawberries with a pastry blender and added them to the cream before I chilled it in the fridge. (It still didn't seem thick enough when I put it in the fridge either....

Things I can make ahead for a long camping trip

There will be a kitchen, shared. I don't know how much fridge space I'll get though. I'm planning to buy my fresh veggies at the farmer's market and go to u-pick places on the weekends. I'll also have a camping stove for the weekends I'm actually camping.

Things I can make ahead for a long camping trip

I'm going to be essentially camping (living in a cabin with access to some sort of kitchen) this summer. In the month before this, May, I will have time off for lack of a job and access to cheap groceries (I will be staying near the food coop I am a member of). I am looking for suggestions of things I can make ahead while I have time and access to cheap food. I may try my hand at making jam, but that will probably still not be economical since berries won't be in season yet. I need things that keep well in a pantry (or cabin...) that do not require refrigeration (until after opening, I will have a bit of fridge space).

So far all I have in mind are
- home made granola
- GORP
- stocking up on crackers and dried fruit!

Any further suggestions will be greatly appreciated

Suggestions for Purple foods?

I like dying the angel food cake with berry sauce! Food coloring, in my book, is cheating, but using fruit is brilliant! Thanks! I don't have an angel food cake pan but I might be able to do cupcakes... hmmm.

I had purple carrots in my CSA last year and they were just purple on the outside but orange on the inside. I'll have to go check the co-op and see what is around for me to work with. Does anyone know where you can get blue cornmeal (in New York City)?

Suggestions for Purple foods?

I want to make an all purple/blue meal. So far the things I have in mind (not recipes, just ingredients) are:
- blue/purple potatoes
- eggplant
- blue/purple beans
- berry sorbet
- blueberries

Any other suggestions? Especially for things that keep their color after cooking/ preparing.

Thanks!
