Grilled chicken breasts topped with honey mustard, applewood bacon, sauteed mushrooms and onions, then topped with mozzerella and stuck under the broiler for a minute. YUM!

I have a 4 year old daughter so it is "Deceptively Delicious" by Jessica Seinfeld. I also work a lot and I have one called "From our home to yours" which has a lot of recipes in it I have simlified, or I make ahead.
