Peking Ravioli recipe?

My recipe(sorry for the mixed units)

300 grams Chinese cabbage finely chopped
450 grams minced meat (ground pork is fine, but can be other meats)
1 T salt
100 grams scallions, chopped
2 tsp ginger, finely chopped
2 1/2 T light soy sauce
1 T Shaoxing rice wine
2 T sesame oil
1 T corn starch
water to moisten

Combine all of the above. Add water to make a moist mix. Use a small spoonful in each wrapper and seal tight. Boil, steam or fry!!!

Fennel fronds, garlic shoots, carrots are common additives in place of some of the cabbage and make for delish variations in the flavor!

Handmade, and authentic Chinese noodles

We were visiting Antwerp for the weekend, and we spied this little place near the central station. (#8, Breydelstraat). The menu was short and included 6 types of noodles with broth and toppings, or without broth.Add ins included excellent duck, mushrooms, dumplings(jiao zi).

I had the ripped noodles(pian mien) with duck. The broth was homemade, the noodles were perfect, and the duck tender and divine. My friends and children had the dumplings. They were excellent and authentic.

We lived in Beijing for 7 years, and my husband said this was the best and most authentic Chinese meal he has had outside of China!

Price 8-10 euros. The owner spoke English very well.

2 crusts-

5 1/3 c grapes and squeeeeeeze their pulp, pits into a sauce pan and SAVE THE SKINS....

boil the pulp as is, naturally
.

push through a sieve to remove pits

reunite them with their skins!!!! ahh bliss

enhance their nature with 1 1/3 c sugar and 1/4 c flour, 1 1/4 tsp lemon juice and 1/4 tsp salt

let their beauty fill the bottom crust

dab their luciousness with 1 1/2 tsps butter

clothe them in the top crust

warm them at 425 degrees F for 35-45 minutes

let them rest and cool!!!!!

taste their sun, their sweetness, and their true nature!!!!!!

I found this in The White Trash Cookbook...pg 88...of course paraphrased

oven 350 degrees

Make 1 cup mashed potatoes (unseasoned). These need to be hot for the recipe. Cream 2 cups of sugar with 2/3 cup Crisco until light. Add eggs 1 at a time to sugar Crisco mixture, beating after each addition. Mix potatoes and 1 T vanilla into the mixture. Sift together 2 cups flour, 3 T baking powder,1 T cinnamon, 1 T nutmeg, 1/2 T salt, 3/4 cup cocoa powder. Add the dry ingredients to the Crisco mixture alternately with 1/2 c milk. Mix in 1 c nuts. Bake for 40-50 minutes.

What can I do with mushy canned green beans?

A stew. For example a local fav at the Kibler's

Liege Stew
onion chopped fin
1/2 pound bacon, cut into cubes
left over boiled potatoes, 3 or 4 small, cubed...or you can use the jarred ones
1 can green beans with a little of the juice
any spices you prefer...even Sriracha!

Fry bacon cubes until crisp, add onion and fry until clear, add potatoes, after a few minutes add green beans with a little of their juice. Let stew awhile.

This is a week night dinner at our house. Can be served with add ins like grated cheese, plain yogurt, or other left overs.

What did Santa bring you?

Magimix 4200XL food processor. wow. we made potato and celeriac au gratin, and it sliced them so thin, in such a short time i was amazed. i did not even have to use the plunger to push them into the blade...they kind of sliced under their own weight!

collard greens--any ideas for a vegetarian?

Add smoked Tofu cubes, garlic, and onions.. Smoked tofu is usually firm so it will stand up when cooked with a heavy green.

Favorite desserts from your travels?

San bu San(three no stick) a custard made with egg yolks, sugar, and cornstarch eaten with chop sticks at the Old Beijing noodle restaurant. I have never found a reference anywhere.

No mocking here...

Mama brand Shrimp Creamy Tom Yum Flavour. It is spicy and lemon grassy. I add a few peanuts for crunch. Wow.

Cooking with sage

A traditional Italian dish, I have been told.

Pound a skinless chicken breast until thin. in the center place 1 slice of Fontina cheese(asiago is nice too), one slice of proscuitto, and one fresh sage leaf. Salt and pepper. Roll and place rolled side down in a baking pan. Add a llittle nice white wine to the pan and bake at 350 until the breast is done. Excellent with a side of rice and a tossed salad.

What food gifts did you make / buy this year ?

Standard peanut brittle recipe using a good bridge mix instead of peanuts. (Our work place is a peanut free environment, so this modification was necessary.) I chop the Brazil nuts so they arent too big compared to the rest of the nuts.

Technique on a glass top stove?

We have a glass cleaner especially for glass tops...I know chemicals, and a metal scrapper. It takes time, but it works.

Making Cookies with Preschoolers

If you change your mind about a rolled cookie, and decide on a drop cooking, I have a suggestion. Zip bags. All ingredients go into the bag (you can even premeasure the dry or wet ingredients into each bag and transport this way), add the rest of the ingredients, zip bag closed and SQUISH to mix. Cut a corner, and squish onto sheets, bake. Throw the bags away(I know a bit of a waste, but it makes clean up so easy). You can have squishing groups of two.

lost recipe -- Mimi's stuffed eggplant (Original Moosewood)

3 med eggplants
2 cloves garlic crushed
1 bayleaf
1 c onion chopped
2 med green peppers
2 med tomatoes
1 heaping tsp basil
1/4 tsp each tarragon and oregano
2 c ricotta
1/2 c parmesiano grated
1 c fine bread crumbs
salt pepper and olive oil

Slice eggplants, bake face down in 350 degree oven for 20-25 min. scoop out meat and chop.
Heat olive oil in pan. Saute onion,peppers, bay leaf, peppers and eggplant meat until the onions are translucent. Save half of the parmesiano and bread crumbs for topping. Mix the rest of the ingredients and let rest for 20 mins. Drain off extra liquid,

Put the filling back into the eggplant. Top with extra cheese and crumbs, Bake in 350 oven for 30-35 min.

What frosting would go with this cake?

Buttermilk mixed with powered sugar and drizzled over the top. Lower fat, and delish....

Spam hors d'oeuvres. Seriously.

Spam salad. Cubed, mixed with celery and/or sweet pickles, mayo or Miracle Whip, on saltines....yum?

So What Have You Made From Leftovers That Was As Good If Not Better Than The Original Dish?

To keep with the turkey theme,

Turkey pulled off the bone, reheated in a bit of stock with onions, cumin, and peppers , wrapped in tortillas and smothered in homemade enchilada sauce, baked...yum.

AND leftover sage dressing(baked out of the bird) served as the base for raclette instead of boiled potatoes.. OHMI!!!!

Christmas Eve Traditional Meals

Well, our tradition for 10 years now has been to take the kids to McDonalds, and then the adults come home and have a bit of bubbly and some nice finger food. I think the kids are getting tired of McDs, and this IS the only time we go there, so it does not make it contraban-its special.....but they are developing hounds, so this tradition is on its way out.(I will feel better).

Americans Abroad: How do you celebrate Thanksgiving?

This year we have organized a pot luck. We have even found fresh cranberries for the cranberry relish in the Savueur Turkey edition!!! Everything is avaialble here in Luxembourg, except my family...ah well.

I was in Peace Corps a while back, and wanted to treat some of my friends to Thanksgiving dinner. I could only find chicken (which I had to catch, dress, and roast in a pot on the kerosene burner in my flat.) I was excited because it smelled good, but when we tried to eat it it was like leather....one of those energetic, free range chickens, I guess. The rest of the trimmings were well appreciated, but my Nepali friends could not figure out why I had made the chicken so terrible. LOL
