They key to the sausage experience, I prefer the Polish, is to order your sausage and ask them to put sauce, kraut, and onions right on it. Not all stands are equip to do this, but if they have a grill and the containers of condiments right on the grill, you should definitely have them load up your sausage.
They dip the sausage in the secret sauce, then put the hot kraut and onions on it. Way better than getting them cold at the condiment table.

Then you should definitely try 'Dark Side of the Moon' Zanzibar Chocolate swirled with Blue Moon.
Fat Elvis is the best! Although I have been known to have a hot fudge sundae with Espresso Oreo ice cream.
Why was my pan-fried medium-rare ribeye steak moist but chewy?
There could be any number of reasons your steak was chewy. It sounds like you did everything right.
You have to remember a whole ribeye is about 20-24 inches long, and a lot happens over that span. You go from the chuck end, which has that kernel of fat in the middle and a larger cap, down to the loin end which is less fatty, has a smaller cap, and is generally a little chewier. I prefer steaks cut from the chuck end of the ribeye, but I like a little fat with my meat.
The other thing to keep in mind is, its an animal, no two are alike, as much as they try to breed them to be. See the photo below for the differences in Ribeyes from one end to the other.

I don't know that you are going to have too much luck finding live fish in the Milwaukee area. I would check with fish markets in Port Washington, Two Rivers, Sheboygan for fish coming out of Lake Michigan.

I second the Crayfishman suggestion, but he won't have any fresh until about the end of July.
I live about 10 minutes from his business and he has a great product. We did a boil last summer and it was awesome.

Cape Capensis--anyone tried this fish?
It's a whitefish in the Hake family fished off the coast of South Africa. About 7-8 years ago food service distributors were pushing it as a cheaper alternative to Cod or Haddock. It was around for a few years then suddenly it was not available, but I don't know if that speaks to the sustainability of it or if the product just didn't catch on.

No, just two big factors involved, the meat is coming in 'on the hoof', and there isn't as much demand in this area for these two cuts. Too many people get afraid of cuts of meat that they can't just throw on the grill.
The meat is fresh because it comes from what they butcher, but it is also in limited supply every day, so if you have your heart on something, you better get there early.

Wow, reading through this thread, I'm glad I live in central Wisconsin, I've never paid more than $1.89 for fresh oxtails or short ribs at the local butcher.
Quick WI Trip - Door County, Green Bay, Waupaca Updates?
In regards to Waupaca, Simpsons still does a really nice job, and yes they still have the pickled mushrooms. Other places to check out would be the Waupaca Country Club, they have changed hands in the last year and are quite good. I would also recommend the Wheel House, not just for their pizza but the sandwiches are really good, and they also make their own pickled mushrooms. If you are looking for somewhere for breakfast/lunch, I would highly recommend taking a drive to the Frontier in Amherst, they bake their own breads, and they make one of the best Rueben sandwiches you'll ever have.

For Pizza I like Zaffiros or Balistreri's on 68th.

If 'The Restaurant' is over the line, then I would try The Silver Coach or Michelles.
There is also Pagliacci's which is the lounge for The Restaurant and they have a competely different menu. Not as pricey as The Restaurant.

On the east side try Zaffiros on Farwell. Further west in Wauwatosa I've always liked Balistreri's on 68th and Wells. Both are thin crust.
