How do YOU roast a chicken?

Cut the backbone out also, wash and dry well, put a lot of kosher salt on the birds skin and let it sit uncovered over night in the fridge. I put some old potatoes/onions/celery (cut up) under the bird and roast @ 475-500 for an hour(depends on the size).

If you re looking for moist meat and crispy skin, this is for you.

We had dinner there last nigth and i was very surprised. It was a Lugaresq quality steak and good sides. Its clearly not cheap, but its good to have a quality steak option in Westchester.

Which location of "The Palm" is best?

Would agree, stick with 2nd Ave if possible.

Steakman- Sans the butchering pre cooking, i use the exact same technique. There s nothing better than the crusty texture v a soft butter interior of a nice ribeye.

Help with Ideas for Christmas Eve – Hot and Cold Seafood Buffet

How many people will be attending?

You can make branzino or stripped bass in kosher salt. If you plan on feeding 10+ people, get a whole(wild) stripped bass and cook it in kosher salt. Or you can serve branzino(one can feed two people) the same way.

Not labor intensive, makes for a very impressive presentation and both taste great!

Looks like i m the odd man out here. I have eaten 3 times(never my choice after the first time) at Del Posto and each time it was good, but far from great.
Four stars, not IMHO, by a long shot. I would not put Del Posto in the same league as Per Se.

Fishtail, Lure, or Esca

Have you been to Esca before? If one is not familar with the menu, it can be a bit difficult. With that being said, i like Esca better than Fishtail and Lure.

Grilling over wood

Here s my .02c.... If i were cooking a chicken, i would get some bricks and place them in the middle of my grill grate, so i had a hot side and a cool side(heat on one side, nothing on the other). I often cook jerk chicken in this manner.
The amount of time it will take your wood to burn down to suitabel embers, will depend on what side logs/chunks you start out with. It will also depend on how dry your wood my or may not be. I would give the wood at least an hour to produce nice managable embers.

You are not alone... 5 years ago, i did some work on the kitchen and replaced the stove. In my research looking for a 48' stove i heard many horror stories about Viking products. I decided on the Wolf and have only had one small issue, and it was covered.

TJ's Frozen Scallops-What am I doing wrong?

I dont think its about frozen or defrosting, its about scallops being placed into a solution(forget the name) before they are frozen. This solution, makes the scallops more plump due to the fact they retain water, therefore they weigh more. The liquid will only come out during cooking, as a result, you will never get seared/browned scallops.

Bobby Vans - What to expect

The lamb chops are some of the best in the city. The Porterhouse for 2 is also a great option. As the previous poster stated, the one on 46th has the best food. Rick one of the owners would agree with that statement.
One reason for many of the italian options, Rick one of the owners worked at Manhattan Cafe & The Palm for many years before BVs. The chicken parm with linguine is also a great option. The baked clams might nt be on the menu, but they will make it for you, one of the best in the city.

Turkey advice

agree 100% , brining is the only way to go. Dont waste your money buying one from Williams Sonoma or some gourment shop, its very easy to make your own.

I would have to agree, with El Tigre. Skate is very easy to prepare and its always good. A black carbon steel and some fat, and you're in business.

Blue Ribbon makes a nice skate dish also.

Had no idea regarding sustainability issues. Its been many years since i have eaten or cooked "chilean sea bass" for obvoius reasons.

Food sucks, the Yankee close Marina Rivaria(sp) owns the place with a corrupt local political figure. Not worth you time or money.

What's the skinny on Walter's Hot Dogs?

I grew up a 12 minute drive from Walters. 20 years ago, i never understood Walters, about 5 or 6 years ago, i went back. The line was still snaked down the street, waited 20 minutes for another weak bland dog. The best thing at Walters is the homemade mustard. Not worth your time.

Peter Lugar Steaks Delivered

Regardless of how you cook it, Lugars oven are a lot hotter than ovens in ones home.
