Mexican Food - wheat vs corn tortillas

I live in E Tx and we have a LOT of Tex-Mex eating places. I prefer wheat tortillas just because I think they are healthier but they are usually too dry and stiff,so I often go ahead and get white ones anyway for that reason. I recently found one called La Bandarita wheat tortillas made by olemexicanfoods. It is supersoft and chewy,easy to roll and stays fresh a long time.

Chiles Rellenos Strata

Well I just made this...it tastes wonderful but it never did set like an omelete or custard..it was mushy in the middle and so I cooked it lots longer and the top and corners got crusty and good but the middle remained mushy. Maybe I whished the eggs too much? or maybe I left it a little too long in the fridge? Dunno! Oh well,like I said it tasted great so we ate it on top of homemade tortilla chips. MMMMMM delicious.

Basic Tortilla Chips

A coupla years ago I figured out to do this on my own out of necessity and it made a BIG mess but I did it. and since then I set aside one afternoon a week to make up about 4 freezer bages full and we eat them till they run out (normally about 3 days LOL) They are wonderful. I use white tortillas and my 'kettle cooker' and put paper towel plates all over and plastic bags ready for the cooled ones. They are so great with guacamole and pico de gallo....and they are heaven for nachos under the broiler. oh man.

Oh yeah, I left out the potatoes too...it reminds me too much of a stew with the potatoes. and no cinnamon in the version I made,although I'll have to try that.

Chicken Chile Verde

I made a version of this with pulled pork ribs (country style) and froze it in 2 freezer bags. It came out great..just thawed it out and warmed up a bowl at a time as a side dish at dinner and with homeade fried tortilla chips. It was real tasty for about 3 days. (there's only 2 of us) I hated to see it go and I will definately make it often now that I know how.. It was like a restaurant dish...so good.

best guacamole

I just tried this one except I didn't have any red onion so used white,and no vinegar,since I had both fresh lemon and lime juice handy. It really tastes great.

Admit it... There's Some Dishes at Chain Restaurants You Like

OhNO! bad news Natalie. I eat Totinos pepperoni pizza sometimes (but not often because of the gazillion calories!) and I like the Taco Bell beef stuff (again not often bc calories) although I always get severe indigestion afterwards (hmmm). LOL!

Admit it... There's Some Dishes at Chain Restaurants You Like

I love the Baja beef chalupa at Taco Bell. The fish fillet sandwich (tastes great and soft buns) and chicken nuggets at McDonalds. Burger King has a great spicy chicken sandwich...simple but delicious and if I take it home I add a big piece of fresh lettuce on it. I like Wendy's BLT salad with low fat ranch dressing and the value menu bacon/cheeseburger. And I know Jack-in-the-box gets no love but I have to indulge once in a while in their fried tacos (ask for extra lettuce). Those are my fast-food drive-through weaknesses. I love Red Lobster..Tilapia fish in a bag! I have never went to Chiles but I am trying it this weekend. Good tips here on what to order! THX!

Easy Cheesy Macaroni Tuna Casserole

This is the same as my husband always makes it for us(his favorite dish and it's soo delicious) except he makes it with Cream of Mushroom soup instead of the cheddar cheese. We always have sweet peas with it too!
