What are you baking these days? August 2015 [OLD]

Today I baked the yogurt cake with rum from the Chocolate and Zucchini site. Not too sweet and goes together quickly.

Best Punch for New Year's

One bottle Southern Comfort, one two liter bottle of Sierra Mist (or Sprite, 7 up) 6 ounces from lemonade and 6 ounces frozen orange juice, four sliced lemons and six sliced oranges. Serve over ice. Also have made it with pineapple juice instead of lemonade trying to avoid the high fructose corn syrup.

Maple Syrup.

I pour a little maple syrup over greek yogurt and walnuts.
Sometimes add maple syrup with mustard to salmon.

St. Louis: clam roll and lobster roll

Cardwell's at Frontenac had a lobster roll on the menu recently so check before you go. Also Bristol's has a lobster roll and if I remember correctly it might be on the bar menu at happy hour.

Hors d'oeuvres

Walnut and Blue Cheese grapes are good. Use a combination of green and purple grapes. Make ahead and chill before serving. If you don't like walnuts use pecans.

Tru Dessert Tasting

My friend and I went to Tru in fall of 2010 for the dessert tasting. We sat in the lounge area, order a nice soup which was served in Versace cups. The service, soup and desserts were fabulous. A real splurge. I also splurged on a box of Tru truffles which I would recommend.

Drop-in guests at holidays

Take brie and cut in one inch cubes, roll in honey and chopped nuts. Then wrap with puff pastry, seal with egg wash and freeze. When your guests arrive take out what you need and pop into the oven. Cook according to the puff pastry directions.

beef tenderloin for a buffet?

I've been to several parties recently that served beef tenderloin as an appetizer. It was cubed and wrapped with half a snow pea and skewered onto half an eggplant. There was a dip on the side that was probably dijon, sour cream and mayo.

Strategy for Pappy's and/or Crown to avoid a long line?

We arrived at Pappy's at 11am on a Friday and there were about twenty people in line ahead of us. When we left at 1145 there were sixty or more waiting. I would suggest earlier. If you have any room for ice cream go two blocks to The Fountain on Locust.

road trip corpus christi, tx to chicago, il

Fifteen minutes north of Springfield Illinois exit 115 is the small town of Elkhart. We stop at the Bluestem Bakery for lunch, cinnamon rolls and cookies. Across the street is a Tea House but we have not tried it. This stop should keep the sugar in check until to arrive in Chicago.

Lunch on Route 55 between Bloomington and Lincoln, IL

Bluestem Bakery is right off 55. Look for the Elkhart Illinois exit number 115 which is fifteen minutes north of Springfield. There is also a Tea House across the street. We always stop by the Bluestem on the way to and from Chicago. Summer hours open Thursday to Sunday.

I have a lot of brie wedges

Cut the brie in bite size pieces, roll in honey then chopped nuts and wrap in small rounds or squares of puff pastry Best to use an egg wash to seal the pastry.. Freeze on a cookie sheet then put in freezer bag. Take out a few at a time and bake according to puff pastry instructions. Nice appetizer to have stashed in the freezer.
