Peruvian Light Green Sauce - Ahi? (Aji?)

Ok everyone, I just returned from Lima last night. As promised I have a couple recipes...one for Chimichurri and one for Huacatay. These are just the base recipes and I've found from talking to people that everyone has their own twist to the base recipes. Enjoy.

Chimichurri
Olive Oil: 1/2 cup
White Vinegar: 1/2 cup
Red Onion: 1/2 cup diced
Garlic: 1 teaspoon diced
Parsley: 1/4 cup chopped
Oregano: 1 teaspoon
Aji Pepper Powder: 1/4 teaspoon (use fresh diced Aji peppers if available. Adjust amount to level of spiciness you prefer)
Salt: 1 1/4 teaspoon
Black Pepper: 1 teaspoon

Preparation:
Combine all ingredients and let rest for a couple of hours so that the flavors can infuse.

Huacatay
1 cup Yellow Aji Chili Paste (Aji Amarillo)
4 tablespoons crushed Black Mint
2 tablespoons chopped green onions
Juice from 1 lime
Salt

Preparation:

Combine all ingredients in a blender and puree.

I just ate at Fiesta today and it was awful. I'm a frequent visitor of Lima, Peru (my gf lives there) and everything I ordered was bland. Aji de Gallina, no spice and was missing 50% of the flavor, Papa a la huancaina....the sauce was horribly boring, Cebiche de Pescado...this was the worst I've ever experienced...the fish had been sitting in the the bowl for a couple days no doubt when it should have been FRESHLY made. Choros a la chalaca...had a cheesy taste..mixed with diced tomates and red onions...should be NO TOMATES and chunky red onions for a authentic flavor. Lomo saltado....they used frozen french fries and really thinly sliced beef and canned tomatoes.

If you are going to open a restaurant to showcase the food of your origin i would suggest not cutting corners. I'm very proud of the Peruvian cuisine and was anxious to take my business counterparts to dinner and left feeling very let down. What a horrible experience.

I must add, the only Peruvian beer they have is Cristal (no Pilsen & Cusquena) and no Pisco Sours due to a lack of a liquor license. They claim to have authentic Peruvian food but it's nothing but a joke.

as i said...it's a North American version. If you search chimichurri online that's the same recipe you get off the american food sites.

The sauce you are talking about is Chimichurri. Cremon....you are posting a recipe for a North American version of the sauce. Peru doesn't have Jalapenos or Serrano chiles and both are far to mild in heat for this sauce. I am going to Lima on Thursday and will post an authentic recipe once I arrive. Cheers.
