Season mushrooms and onions

I was taught that I should never season (S P) before cooking mushrooms and onions but to taste after. Is this just a precaution to not over season for does early seasoning negativity effect the end result.

masticating juicer,

I have a champion juicer for general juicing but want to start juicing lots of greens and particulary lemongrass which requires a masticating juicer. I know there is is alot of junk out there so I would appreciate a recomandation

Grinding Pasella dryed peppers

I am going to grind pasella peppers for a bbq sauce. I don't think they ate very hot but even so would yo from the seeds. We are talking about a tablespoon for a gallon of sauce

I know steel cut oatmeal takes time and a little more effort to make.

Is the extra effort worth it. Does steel cut offer something special like a tastier product. I know it is quite popular today but is that based on health fad or is steel cut really special and worth the effort I also question whether it is really more healthy or just requires more work

Freezing lasagna and carrot cake

I made a ton of lasagna for a party that is now off due the weather which is worse than anticipated. I have never frozen left over lasagna before, is average. Noodles raccota, sauce and parmeasian with beef and Italian 2 to 1. I could either try to give it away of save it. I don't think I will hurt by freezing it but I don't know what it will do to the roccata.

I am sure I can freeze the carrot cakes. I jsut thought I would ask before I do something I have never done before.

I think the coating is egg whites but I have had a problem getting the proper browning with it. It does give the sheen I am looking for but that is one of the major problems I have with figuring out this recipe.

Oats - good for lowering cholesterol....but most recipes use oats in sweet food. Anybody suggest savory dishes using oats?

There are lots of them in granola and I like to mix the granola with Greek yogurt. Tastes good and healthy

Latte Art

I have Ranciila Silva which is suposed to be a good cap machine. I have made some nice Cappaccino's which I am roud of. I tried a number of different approachs and have not been able to make a nice design at the end. I either have to thick cream or to thin depending on what direction I am going in. I have tried keeping just below the surface till105 and then down a inch untio 140+. (to thin). I have keep at surface for the whole time and I get some nice cream at the end but to thick. What is the trick.

Thanks I actually practiced with soap all morning and just made a wonderful capaccino with whole milk. I would like it a little stronger for one shot so I will back off on the milk but it was wonderful with a crude rosseta which I will get better at.

Thanks the learning curve is rather steep. I did shot of espresso which turned out ok. I then heated whole milk slightly tilted in the pitcher which is 1/3 full. I brought it to 150 or just under 160 but I am not getting that microfilm they are talking about. I poured the espresso in a larger cup and was hoping for those swirls at the endwhen I added the steamed milk. I need more molk to practice tomorrow. There obviously is more to it than bring up the temp of cold milk to 160. Can you get those swirls with the milk at the end. I have never seen it before today and now I want to be able to do it.

John I got it but they forgot to send the CD. I was probably grinding to fine at 8 so now I am at 10 which seems to work. I made a mess the first couple of times because I didn't get the espresso cup or whatever you call it attached correctly. I might have that solved. I am making 1 shot to 2/3 of the container of 2% milk. I can't seem to get it creamy enough. Is there a trick? Maybe less milk so I have more space to steam.

Thanks I am sold. learning to do it should be fun and I have not heard any negative input. I also think you have answered my question about why I should get the complete package visa the machine and cheap grinder.

Oh I did have krup;s years ago and execpt for expresso I didn;t want to go down that route again.

I love cappuccino's and buy one every day at Starbuck's which is expensive but the corner gas station or Duncan Donut can beat the price but the quality is not there . I have been trying for years to usuccessfully to make one at home with sends mye running for Starbuck's. I certainly want to share it but I am not thinking about just making my friends happy:)

I have the Technivorm which makes a fantastic cup of Joe but that is it's limitations. I paid close to 300 for it and it has zero curb appeal but does coffee in 2 minutes at 200 degrees. Curb appeal is certainly a plus for anything you buy but I want the best espresso machine without going totally commercial. Do you think it is to expensive for home use or maybe for a little or allot less I could get the same quality but less glamour.

I posted here because I have always got honest and good advice. I appreciate your opinion.

I am considering buy the following link. It is alot of money for a coffee machine but is it is as good as I think it might be it would be worth it. I want to start making pate's for the holiday and my cookbook calls for a (pressed pate terrain). Is it really necessary and what does it do? Also if would like to but aa good one, which would you recommend?

Pressure Canning Tomatoes: Do I need an acid?

I total agree. There are all kinds of recipes for non acid foods which require no acidification.
If you are using a water bath it is necessary to use 1 tablespoon per pint or tow for a quart jar.

Do these stove top grills really give a grill taste. They do seem to give nice grill marks.

Now what brand or type would you recommend. I live in Wisconsin and there are days that the kitchen is prefered to the outdoors.

salted cod

I have seen lots of recipes for salted cod or baccala. Is it worth the effort to put it in the frig and change the water several times a day for three days to wash the salt out. Is it really better than fresh. I live in Wis and I know that it is not cheaper

Stove top smokers

I am looking for a stove top smoker. Most that I have found are stainless which really is not a good conductor of heat. What do you guy's think is the best stove top smoker out there. Obviously a good seal is important so my smoke alarms don't go off.

Vacuum sealer

I bought a very inexpensive vacuum sealer at the marker with the zip lock bags but was not totally satisfied with result I don't want to spend hundreds of dollars but I would spend over a hundred to get a machine that will do a good job of sealing my meat and produce for freezing.

Apex EdgePro sharpening system

No but I always appreciate your input on knifes. I am always looking for a edge :) What I would really like is to take a class with professional who could improve my technique.
I do use my mechancial when a knife is really dull but finish with my wet stones. Would you consider the EdgePro a higher end knife sharpener?
