i had another AH-HA moment- instead of graham crackers, use oreos. i scraped off the filling (i know, i broke the first commandment of oreo eating) so it wouldnt mess witht he texture or flavor.

of course, you could try any type of cracker type thing- like chocolate wafers similar to those used in oreos (or you could just use oreos without the filling). i intend to do this on my next batch

white chocolate questions

i normally dont like white chocolate because it doesn't taste good, but i have some chocolate molds that would be perfect for white chocolate- problem is that when i try to melt my chocolate (i did it the same way i melt dark chocolate, a stainless steel bowl over boiling water) it solidified into this chalky white clump.

i don't know anything about white chocolate, is there anything i should know about melting white chocolate into molds?

Charles Chocolates Marshmallows

i tried, tried as i might, to get the marshmallow to set. i tried several different things (even tried cooking the agar agar so get it dissolved) and the mixture would not fluff in the end. just ended up a nasty grey library paste. ill try again, maybe tomorrow (i have an idea to grind the agar agar flakes into a fine powder- that might help). ultimately, though, the way i see it, if you like marshmallows dont be a vegetarian...

Help! i posted this question in the marshmallow recipe page, but im worried no one will see it due to its apperent low activity (last message there was done in '06).

my girlfriend is a vegatarian, and doesnt eat gelatin. for her birthday, i decided to make vegatarian marshmallows! i found a gelatin substitue- agar agar! how do i use agar agar? my first attempt came out so horribly horribly wrong! is it treated like regular gelatin? does it need to be bloomed? do i use the same amounts? help! i have till friday!

actually, i used some ghirardeli (i wont even pretend thats spelled right) chocolate that had, like, 50 or 60% cocoa... though i couldnt find any that displayed its cocoa butter content. any brands that might be readily available in a small town?
