my buttermilk pumpkin cake is so dense & moist that it's like peanut butter! (do not like)

can anyone tell me how to correct this? the flavor is good, but it's just too "moist" if that makes any sense. would i add an extra egg? more milk?

instruction says to butter & sugar the ramekin, then butter & sugar again. how do you butter on top of that first layer?

wouldn't it scrape the sugar off? is there a method?

Anyone tried making the "Fallen Chocolate Cakes" (Lava/Molten cakes) from Cook's Illustrated recipe? How did they turn out? Read on...

Supposedly they are less dense than the Jean-Georges recipe. I'd like something cakey on the outside and gooey in the middle, but don't want just a puffy cake mostly.
I've found that CI recipes sometimes turn out blander or less interesting than other recipes, so I'm wondering about this one. Thanks!

Adding acid to cream sauce

I tried adding some lemon juice (half a lemon) into my creamy pasta sauce (butter, heavy cream, etc.) and it all separated and curdled. Is it because I added too much lemon juice? Or that I'm supposed to add in the lemon juice after taking the cream off heat? Thanks!!

lunch place in SAC near Carmichael, where 80W splits?

sorry for the confusion - i was looking at a fuzzy sort of map.

when you drive down from roseville area on the 80W, the 80 splits into Capitol City fwy and the other 80... anywhere around that area, not just Carmichael.

Yummy or interesting PIE A LA MODE combos?

I love anything warm with ice cream melting on top and usually order apple pie a la mode. But I recently had some berry pie with ice cream that tasted slightly strawberryish, which really complemented the acidity of the berry filling. Now I'm wondering what other flavors go well together.

I'm imagining a pear tart or pie with ice cream of subtle gingery flavour. mmmmm!!

Where to buy a smaller grid to put on top of bbq grill?

Inventive lunches you can prep once for and eat throughout the week

I loathe flabby deli-meat sandwiches and am starting to tire of my usual salad lunch (though I make my salad with a hundred different ingredients :)
I want to pack my lunch, though.

Last week, I had a bag of corn tortillas and decided to try bringing tacos to work. I grilled a load of cod (marinated), cut it into chunks. Shredded a head of cabbage. Diced onions. Made white sauce. Bought a tub of fresh salsa. Everyday, I packed 2 tortillas and some of each ingredient. I microwaved my tortillas and fish and assembled my tacos at my desk (yes, the fish was a bit...aromatic). Those were some satisfying lunches! Of course, I had other things, like rice & beans, fruit, etc.

I'm looking for some other good ideas along those line. Or even more taco/quesadilla ideas if you have any. Preferably (but not necessarily) low-fat.

For me, it's often Strawberry shortcake with clouds of fresh whipped cream. But I don't have time to make the shortcake. Any ideas for other desserts?

ideas for interesting/gourmet HAMBURGER toppings!

i'm grilling some plain ole hamburger patties tonight and need some great toppings -
one of my coworkers suggested a "spicy CA roll burger":

1) thin layer of sri-racha sauce + mayo
2) avocado
3) cucumbers
4) a little cream cheese

i don't know how that might taste. doesn't necessarily have to be so interesting - anything you've found to be a good combo, particular cheeses, etc. thanks so much!
