Actually, the only reason to go is because my cousin has a 20% discount card that extends to booze as well as food, and Flo booze is priced fairly. This pushes it over the edge for me.

I order it a lot too. Had a decent rendition at Le Repaire de Cartouche recently. It was a thick slice of a big, fat one.

yup. The USDA website doesn't count for much as the APHIS (Animal and plant health inspection service) agents have discretion to confiscate whatever they feel like. Its their call.

I had a very good experience at Repaire de Cartouche on Rues Amelot/FdC a couple weeks ago. I did the Lieve a la Royale, but the veal chop was excellent also.

good steak at Le Boeuf Couronné?

SOunds like torture. Showing someone an awesome cote de boeuf but then taking it away and giving them a few little pieces every 15 minutes cannot be counted as actually serving cote de boeuf at all. I wish I could do my job like that and get paid.

Lunch at Ledoyen

I highly recommend to dine at many, many more awesome Michelin restaurants in order to acclimate yourself to their weirdness. Also, I wouldn't read too much into the subtleties you mentioned. Help is more likely thinking about their car payments or their favorite football team, if not focused on doing their job properly.

Healthy Food in Paris?

Maybe not relevant since you'll be in town, but if you hit a massive supermarket in the near suburbs, you'll find more than enough stuff to cook healthy. Might be a good idea to do a haul.

French fries fried in horse fat. Where in Paris?

I notice that horse meat is much more popular in Geneva than in Paris these days. In my neighborhood in Paris, I've seen two boucherie chevaline close down in recent years, but the Romande menus seem to feature horse often, and it's usually one of the tastier things to eat at bistros in and around Geneva. The cuts are very tender and not strong-flavored.

I spend a lot of time in Kazakhstan where a lot of horse is consumed. It's farmed here and usually eaten as horse sausage known as kazy.

For the record, my friend and I kicked the terrine at La Regalade. There was about 500 grams there. We were hungry and had been drinking prior to arrival. It was one of the better terrine grise I've ever had. We ordered one of the better red burgundies from the wine list, and went nuts.

I am sure nobody cared as the place was total mayhem...
