San Pancho and Sayulita Recommendations
I'd like to add the Blue Pig in San Pancho. The owner and chef is the brother of a friend of mine who lives in San Pancho. I met l Greg, the owner, last Sept when I was there visiting my friend.
It's a barbeque place - barbecued ribs and chicken, pulled pork and pulled chicken sandwiches, and the Blue Pig Special, a cheeseburger with cheddar and blue cheese, along with side orders and all the libations you could possibly desire. On weekends they have live music.
I checked out the reviews on line since I haven't eaten there and the posts rave about the place. Check it out.
Why should I buy tilapia?
Thanks for the comments. Just wanted to see what other people had to say about tilapia.
The taste is my concern - not that they eat crap (tommy) - I live in NC where our blue crabs are abundant. I know what they can eat. I wouldn't hesitate to eat anything out of our waters here.
My point was the taste - to me it has no taste. Yes, you can marinate it, etc. Which is what I did when I used to buy it because it was cheap.
Just wanted to see if anybody had any positives about it - apparently not!
Why should I buy tilapia?
Tilapia is in so many recipes now. And highlighted on cooking shows as the fish in their recipes!
As far as I know - all tilapia is farm raised. I used to buy it for a quick low fat meal. It tasted okay.
I then started thinking about it - I live in a coastal state. I can find some really good fish on the coast - not so much where I live mid-state without spending a good amount.
So - I want to hear the positives about tilapia! If there are some.
It's a Chowhound potluck or dinner party.. two dishes (with a caveat) and a wine, beer or cocktail if you wish

Parizade has been one of my favorite restaurants in this area since they opened. Love the food, the atmosphere and the staff.
I'm guilty of having the tendency of ordering the same thing when I go because I don't go enough! Love their paella, the angel hair with shrimp and feta and the lemon linguini (which is my go to lunch dish there).
So glad to see them getting some attention here - they deserve it!

I have never understood this way of thinking. I have many recipes that I've developed over the years - some like my shrimp & grits recipe that rival a James Beard award winning restaurant in my area. I wouldn't hesitate to share the recipe. I just don't get it.

I've recently been watching her show too and yes, I enjoy it. She's knowledgeable, has interesting but not too involved recipes that should interest people. She's so tiny at first I had a hard time believing she was so enthusiastic about her cooking and actually ate it (I know - not reasonable) - but I've gotten over it. I may even get to the point that I start taping them. Give her show a look!

Thanks JB - the price difference is so little between the medium and the large I was wondering - definitely wanted something larger than the smallest one.
So it doesn't matter if they want to cook a smaller amount of whatever meat they choose at times? Sounds like a stupid question, I know, but what I mean is that the whole grill doesn't have to be completely full of meat to use it properly?

That recipe looks very good - I'd use the thawed corn instead of canned.
With this one and the sweet potato one the OP would have a wonderful combo. Definitely take something to grill there - the vegies can all be prepped in advance.

Sick food
+1 on the hot tea with honey and lemon. My Mom used to make hot lemonade with honey for me when I had tonsilitis - just hot water, the juice of a lemon and a teaspoon of honey. Also chicken soup with saltines if he can tolerate them. Popsicles, ice cream (nothing crunchy), sorbet. Anything that he says feels soothing to his throat.
Southwest menu planning help
So what did you end up doing? Your menu sounds wonderful - and after reading it a couple of times grilled sweet potato quarters sounded perfect. A little starch - still very southwest. Basted with a lemon/butter/chili sauce or the cilantro lime dressing. With a hearty salad to go with it like you had planned and the cornbread - a wonderful meal. I may borrow your idea! Delicious!
Dried Beans - What's is the trick?
I try to always soak the beans over night. Especially if using pinto beans for my 2 favorite recipes for a crowd - my Great Aunt Mamie's baked beans and a Drunken Mexican Beans recipe I found in a cookbook of mine years ago.
Drain the beans the next day, rinse them and then proceed with the recipes. Most of the time I'll do this in the afternoon - put them in the crockpot, turn on in the evening and if you have a timer, cook on high for 4 hrs and then simmer for 4 hrs. Yes, takes a long time but are very little fuss and they turn out perfectly - my family and friends absolutely love them. They're a huge hit at parties.
I've also done the short boil method, mainly for black beans. Put in pot, bring to boil and turn heat off, cover, and let sit for an hour. Rinse and proceed with recipe - turns out fine also. This is usually for black bean soup.
I don't have a pressure cooker - I still have images of my Mom's pressure cooker "exploding" when I was a child and she was cooking chicken and dumplings. There was a huge noise - the top twirling thing then flew off and hit the ceiling with gravy spurting all over the place (and on the ceiling). You could here the explosive noise all over the house and what a mess!!! She never replaced the pressure cooker!
Catering question re party for 30-40 people
I think the vegie platter is a very good idea and I'm glad you are serving it. To me it is a staple with the type of food you're serving. They go a long way, are colorful and tasty to boot.
When the host is late serving the meal - also rude? Is it ok for guests to leave?
PH I live in North Carolina - the Raleigh/Durham/Chapel Hill area. Not exactly LA or NYC - but still a nice area.

I would have let her know, offered to bring a hearty pasta salad (that the kids would love too), and maybe some hummus and toasted pita or a vegie dip with some vegies (also very kid friendly) which I'm sure she would appreciate. That's a more than generous offering.

I think everyone should re-read the original post. Apps were served within 45 minutes. 45 min to an hour later people were seated for dinner. The "first course" was served "15-30 min later". Main entree at 9:30.
#1 - there is 15 min time deference - it is not clear
#2 - how many courses were there?
#3 - this as a Saturday night
Main entree served at 9:30 and they leave at 10:00? Before dessert.
When I read this - I see that this was a detailed, multi-course meal. It was a Saturday night. Even leaving 30 minutes after the main course is, to me, very rude! And I don't normally eat dessert.
If people want to get in and out so fast - I suggest that the hosts serve hotdogs and hamburgers or order pizza for this crowd - save the fine dining for guests with a more sophisticated palate. Jeez!!!
Should I tip?
Yes, definitely tip. Don't understand why you are questioning it - there is always a delivery charge on food delivered (at least in my area) - tipping has nothing to do with the delivery charge.

Totally agree with bbqme. Tonali is NOT Tex Mex. Very good food. Have been there many times and I've had no problems with their service.

I make my own - as others have said, it is so easy and so much better.
I will use Bone Suckin Sauce. It's very good and very close to what I make myself. It's becoming easier to find in stores, too.

I'm sorry but I have a problem with them cooking a llama. WHY? Just to have a different sort of animal? Trying to be "exotic" with the choice of meats?
I wouldn't go to what sounds like could be a great fund raising event just because of this. Maybe it should be reconsidered.
