Sushi In Harlem. Nakajima now at Jado Sushi.

Nakajima just started there a week ago. He is getting top notch fish from Japan. The experience is one of the best in the City.

But remember, you must sit at the bar with him. It is a rather larger place and the food at the tables will be different, just a fact of the biz.

Sushi In Harlem. Nakajima now at Jado Sushi.

For all of you high end sushi lovers, Mr. Nakajima formerly of Sushiden and Shinbashi has now taken the position of chef at Jado Sushi near 114th Street and Frederick Douglas.

I ate there last night and he has picked up where he left off and then some. And the best anago in NYC, maybe anywhere.

And BTW, Nakazawa did not make sushi in Tokyo, he was an apprentice. He learned to make sushi in the US on the west coast.

So no matter how he makes sushi, good or bad, it reflects little on Jiro.

Nothing that would be surprising. Jiro is famous because of the documentary. Ask around Tokyo and the locals that know would not even put him in the top ten.

Where's the best place for knife sharpening?

The problem with the Chefs Choice is that you need to go slowly and be patient. Very few people use it correctly. I have one and am a knife nut. I also have tons of sharpeners and stones. One of my friends got one as a present and called me claiming it was broken. It was not. He was rushing the process and did NOT read the instructions. I schooled him in the correct usage and he was amazed. I get razor sharp results. I have to warn guests who use my knives to be very careful with them as they cut through stuff far easier than they will be used to.

Terado went back to Japan for training. He was the star chef there. New guy is not as talented. It is probably not "bad" though. Just not as good.

There is no comparison.

Ichimura has been doing this for decades and can do it all. And can do things no one else in NYC can.

Nakazawa has been making sushi a few short years and is a one trick pony, nigiri.

Yasuda v 15 East v Ichimura

LOL,for me Yasuda is not even in the top flight of sushi restaurants in the City even when Yasuda was still there. I too had a bad experience there with Yasuda being a dh. And I know him since he first landed in America. But bottom line is that the sashimi sucks and they rush you through dinner and they serve the smallest nigiri in town. Cut every fish the same way.

I also think that Nakazawa is over-rated and is benefiting from fan boy blindness. It is good, but not that good. I do not care if I ever go again.

15 East and Ichimura are two of the best and not comparable styles. Different but both great.

I would throw Ushiwakamaru in there with Hide as third.

And I still love Seki. He does traditonal sushi for me and there are certain things like jellyfish that he does better than everyone else.

4 lunches in Madrid in mid-Sept; interesting food, 100-120 E a couple (w. wine)

I was just in Madrid, been many times. I was with a newbie.

Took her to Botin (old school), O Pazo (best seafood) and Tiridiana ( new school). Wanted to cover all the bases.

All were fantastic.

There are so many choices in Madrid now.

The Forum of the Twelve Caesars was one of the best EVER in NYC. They do not make them like that anymore. Maitre'Ds that were Cordon Bleu trained.

No one has mentioned the Doriental Restaurant. Fantastic Chinese on E52nd.

I spent many a late night at the Brasserie.

And Bukhara for Indian. Without utensils.
