Best Sushi: Yasuda, Ushiwakamaru, 15 East?

Ate at 15 last night. Epic. Our friend from the fish market sent special fish for birthday dinner.

Shimizu was in Tokyo recently and visited all of the top sushi places. He made some adjustment to his rice since. It was perfect.

Best Sushi: Yasuda, Ushiwakamaru, 15 East?

I ate at Ichi last night and it was amazing. He is number one in my book based on the fact that he does things that NO ONE else in NYC can do. And he can do everything all the others can.

Last night we had 30 day old shirako, 18 month shiokara, Artic char zuke and all sorts of other crazy things.

There really is no comparison. 15 East is way better than Yasuda. Yasuda was always over-rated. Yasuda trained Mitsuru to be his mini-me and did a great job. Mitusuru serves his nigiri exactly the same way. Oh, and no one mentioned that they only give you 45 minutes to eat.

The two best are 15 East and Ichimura. If you want a well rounded meal. Zensai, sashimi and nigiri. etc.

Nakazawa is good, but nigiri only does not do it for me. Out of 21 pieces, I can remember 3.

Azabu is completely different now. The upstairs too.

I happen to like Seki quite a bit. He does more traditional sushi for me. Not his usual fare and he always has something special for zensai.

To me Masa is more like a high end Seki, not tradional at all.

No one has mention Kuruma. Too expensive for what it is?

Finally went to Nakazawa.

Fast impression.

Really good, but not life changing.

Some hits, some misses.

Hate the chairs at the bar.

Not four star, nor the best. Too many misses.

Hidden Japanese restaurant in East Village

On any given day, Uni from many places can be fantastic. I have had many different ones at this point.

Santa Barbara, San Diego, Malibu, Maine, Russia, British Columbia, Alaska, Chile, Kyushu, Hokkaido, Aomori, Saga and probably a few others.

Depending on the time of the year and water temps, it is a crap shoot.

Of the American uni, Santa Barbara is the most common and consistent. NOTE: the consistency itself of Santa Barbara uni appeals to many people. Saga uni, for example is black and does not look like it tastes, which is super sweet.

Shin was at Park Ave for a few years, it was great. He is at Nobu 57 currently.

Hatsuhana was the only four star Japanese restaurant in NYC for a long time. Back in the 70s there were only a handful to begin with.

I started eating there in 1977. The original head chef has Hiro. He left and Shin became the head chef. Then Shin left to open Nobu and Seki became and still is head chef.

Ichimura worked there for a short time recently after his own restuarant on 2nd Ave, closed after he lost his lease.

Oishi is back there now after Sushi Rose closed.

The most notable chef that was trained at Hatsuhana from the beginning of his career is Yasuda. All of the rest were trained in Japan.

Where's your favorite chicken parmigiana served at?

THe Palm, Pietros and Il Paiolo in Brooklyn when they make it ( but they do not call it that. I think they say Cotoletta.)

THe new chef from Emilia Romagna can fry his ass off. They put red sauce on it and then grated cheese at the table. Perfect.

There is a Sushiden at Narita that is open 24/7 I think. We had a last blast breakfast of sushi and sashimi there just after they got back from getting the fish from Tsukiji.

Amante Restaurant. It is a beach club.

My favorite beach is Salinas and I stay at Malibu Restaurant. The food there is amazing. You rent a lounge and they bring you whatever you want. The service is without peer. Grilled gambas, yummm.

The restaurant at the Hotel Hacienda Na Xanema is really good, but a long drive. (be warned the road up to the hotel is narrow and steep, so your stick shift skills better be good.) That would be a day trip, part of a tour of that side of the island. There are other good places around there too.

Do not go to Paloma. I am sure someone will recommend it.

La Oliva in the old town disappointed last summer.

Others that I have not been to recently that were really good in the past: L'Elephant, Ama Lur, Chiringuito on playa es Cavallet.

I heard that. I would think that the most important part of his training would be the time under Jiro. So to me, the question is what did her learn there? Since the guy in Seattle is former Jiro too, he did not learn anything new there.

SUSHI NAKAZAWA?

The big question is what experience Naka had making sushi? While there is no doubt that as ani-deshi he has tons of experience in the prep, only Jiro and his son served customers per the movie. I assume that he has made sushi during the process of prepping the fish and for family meals. If Jiro is the customer that you have to impress, it could be rather good.
