This is what I based it on again I used mostly bisquick with some WW flour instead of the AP flour and baking powder.
No sugar and used the melted butter and honey mixture instead of the coconut oil. And I had more than the 1/2 cup so I added more WW flour to make up for the added moisture but just enough so it was not a sticky mess.
No shredded coconut as I had none.

Made these this morning, blueberry drop scones, I had a honey butter left over so I melted it and uses coconut milk mostly bisquick and some whole wheat flour just what we had on hand as I'm moving tomorrow. Then used frozen but thawed and drained blueberries.

Are you snacking on anything right now? **Springtime Edition**

Lately I have been making a simple nachos then making fresh quacamole. Other than that peanut butter is great just a spoonful or two or Justin's nut butters single serve packs. Target's Butter crunch cashews, freeze dried fruit. And mostly fresh in season strawberries.

Recent cooking fails?

My biggest fails have been equipment failure caused by me. First I have been in a small apartment kitchen for the past four months and a small stove with 4 small burners and 1 rack in the oven. I routinely turn the wrong burner on and this time I had a glass lid on the other burner so by the time I realized my food was not cooking I looked and the glass lid had tiny cracks all over it. I turned off the burner and used a peice of cardboard to move the lid off the stove. It completely shattered and fell apart then but it was all contained so I just left it to cool then threw it away.

My last fail was on Easter Sunday I was making a shank end ham for my family I did not have any thing to cook it in not even a 9x13 cake pan so I bought aluminum roasting pan it came with two of them so I took the paper off the inside of the top pan and the plastic around the outside that held the two together then put the ham in and poured in dr pepper to cook it in and rubbed the outside with brown sugar and crushed pineapple then put it in the 450 degree preheated oven. I put it in and then stood thier watching mouth open, staring at the plastic on the bottom of the pan melt, drip, and then catch fire on the bottom of the oven. Finally realized thier is a fire in my oven and turned off the oven, grabbed a silicone oven mitt patted out the fire, removed the pan opened windows and ran the fan and then I had to run the plastic on the oven rack under cold water to crack it off then took It outside to smash off the rest of the plastic. Then came inside and used a steel bench scraper to remove the still warm plastic from the bottom of the oven. Finally was able to cook the ham again and had a successful dinner.

What's for Dinner #284 - the "Everyone is Irish on St. Patrick's Day" Edition [through March 19, 2014]

I made green pancakes yesterday but topped with strawberries and whipped cream. Then for dinner I par boiled some diced potatoes and made corned beef hash and cooked shredded cabbage with some potato cooking water and butter cooked it down and I also made some of Serious Eats Irish Morning Bread as I had everything to make it. I happen to only have 100% whole wheat flour in my kitchen and I loved the bread I used regular raisins not the golden ones. So moist and slightly sweet.

What new food(s) have you tried recently and how was it?

I agree I just bought some made Truffled Parsley Scrambled Eggs today the later my mom made Popcorn with some Truffle Salt. Both were very good.

MEATLOAF - Home Cooking Dish of the Month for February 2014

I'm not really into Meatloaf, yes if someone else is going to make it I will eat it but I do not order it when out and I never cook it. I do sometimes enjoy meatballs. And right now I could go for Swedish Meatballs. So instead I was thinking a mini meatloaf or meat loaf Muffins with the Swedish Meatball sauce poured over when served.

Your favorite cheese

Buratta I found some down here in myrtle Beach last week at Fresh Market and made one of the 4 oz balls as a topping for a tortilla pizza but it was a waste of a beautiful cheese I ate the other 4 oz with no other than some truffle salt, cracked black pepper and good olive oil and ate it with a spoon. I so want to buy more of it but my budget for food is spent for now and it's $10 for a container of the 2 4oz balls. But it's haunting my dreams I need buratta all the time it's soo good.

Foods/drinks/snacks you sneak into a movie theater...

I always take a big mouth water bottle and fill it with ice and then I can fill with water from the fountain inside the theater so it won't make a mess in my purse I might even sneak in a small bottle or can of diet coke so when I'm done with the water. I have more to drink. But I always buy a small popcorn and if thier is a dollar store close to the theater or. I think ahead. I buy some whopper or any brand malted milk balls or even better the robins eggs during Easter you can buy and. I love to eat them with the popcorn they go in with the popcorn to.

What new food(s) have you tried recently and how was it?

I just tried oysters and I used to not like them at all but I realized I love other shellfish and I should try it again with a little drawn butter and some drops of hot sauce they were soo good I had a half dozen but now I am craving more I want to try the local cluster oysters here in SC since we will be here till may I might as well try some. They are cheap at $20 for a half bushel only problem I know these are used mostly for oyster roasts and I don't even have a grill and I will have to buy a oyster knife and I bet they will be hard to open if opened raw. But I may have to check out the free or $6 oyster roast in myrtle beach area.

Restaurants worth reviewing?

Quality over quantity. Gourmet Buffet has a lot of items on thier buffet and they offer crab legs on thier dinner or Sunday buffets, but often they are either to watery or to dry. Comparing item to item at each place Main mom is always better. Main Moon is consistent in quality and I tend to order to go not have thier buffet and every this is tasty, hot, and made to order.

I think it is. I never ate at the one in Johnstown but as far as what to get in Somerset Main Moon beats Gourmet Buffet as far as Chinese food goes.

Hi I'm from Somerset, yes the a Summit Diner us a great off the Turnpike pick especially for breakfast. Rey Azteca is great for a Mexican restaurant. Main Moon is my pick for Chinese, but if you drive up the road to the Diamond their is a great cafe there Crazy Alice's is only open for breakfast and lunch Monday through Thursday they do dinner along with the breakfast and lunch Friday and Saturday and they have a Amazing brunch on Sunday but you must reserve a table. Coffee and Teas are great and homemade scones and muffins and tarts and cheesecake. Breakfast Wraps and sandwiches, Omelets, French Toast, and Pancakes for breakfast. Wraps, Gourmet Dogs, Sandwiches, soup and stews for lunch. Steak, Veal, Salmon, and Scallops for dinner. http://www.crazyalicescafe.com/defaul...

What cookbooks have you bought lately, or are you lusting after? June 2013 edition [old]

I just bought Gluten Free Girl Everyday and last month I bought the Lee Brothers Charleston Kitchen. I have been following Shauna almost since she started her blog and I have bought all of her books. And just now learning and hearing about the Lee brothers and I "love" love Charleston I had to buy the book.

Savory Pancakes: Home Cooking Dish of the Month (Nov. 2012)

I am wondering if a pancake with canned pumpkin and chopped up bacon would fall into the savory catagory, no sugar would be used in the recipe but woult it be okay to use maple syrup for topping it and maybe a herb butter

What are you baking these days? October 2012, part deux [old]

Gearing up for a 9 day vacation to Myrtle Beach to visit family and enjoy the last little bit of warmth before winter kicks in here in Southwest PA. So not baking anything till we get to Myrtle Beach, I do plan to make the dry mix of my favorite CC cookies and bring that along with the tri mix of CC to bring on the airplane then all me and my niece needs to do is get butter, sugar and eggs and whip up the cookies to sell at a MB Humane Society event, as my niece wants to do something to help out her local shelter like I do up here. And I need to make if its possible there to make my mom a birthday cake while I'm down there in MB with her. Then after we come home on November first Its planning for Thanksgiving and maybe some side baking and more cookies for humane society events to sell for them, I have a party I need to make something for and want to make some kind of bar dessert or cheesecake bars as everyone loves cheesecake, right? But anyone have ideas, want to do something just not plain cheesecake.

Dinner in Richmond's West End

My family and I will be heading to Myrtle Beach for our annual beach vacation and to visit relatives there but we leave western PA this Friday Sept 28 and are staying at the Holiday Inn express in Innsbrook and will be planning a quick trip to Trader Jokes as we have never been in one before and we love to shop for unique food items. But we will need to find a place for supper. Inexpensive is a plus. We all are in the mood for a good Pizza restaurant one that does wood fired authentic Italian margarita pizza with fresh mozzarella. But as long as its not fast food I am game even a nice diner would be okay. Would like to stay in the west end area but could go east on broad St for a good place.

What are you baking these days? September 2012, part deux! [old]

Made PB and banana dog treats yesterday to sell at a event for a dog park in town also made CCC dough and will bake that today. Made some double dark chocolate chip brownie cookies last week and have cut them out and have cookie crumbs and need to do something with it so I will use the cookie crumbs to make a cookie crumb chocolate pudding pie, pro ally two of them. Then we are off on vacation from Sept 28 to October 7. We are taking our two dogs a corgi and a daschshund with us to Myrtle Beach, SC driving 2 days there and back and staying in pet friendly hotels in Richmond VA. So I won't be baking much in our small kitchen at MB just easy breakfasts, quick lunches, and dining out a few times or cooking something easy in that kitchen.

Substitute for canned green chiles

Thanks everyone yes I think I will use 3 chiles, I like spicy foods but the rest of my family do not so much but in this case they are more for flavor than spice and I figured that they are a good substitution but wanted to check first.

Substitute for canned green chiles

I need to make a pork enchilada recipe in which it called for canned green chiles I was just at the store yesterday and forgot to pick them up but I have small green chili peppers I think similar to a banana pepper that is very mild I would ass use I could roast these in the oven like at 500 or under other broiler and then let them sweat in a plastic bag and chop these and use them in place of the canned green chiles, how many small peppers to equal a 4oz can

Its so hot here and muggy to, my dad would think I was mad If I baked anything now and only beingable to use my window AC for a few glorious minutes a day I really don't want to be cooking or baking for very long. On top of that I was sick the first part of the week with a stomach flu, I have only made a Strawberry Coconut Ice cream , good timing though as I proved to my self today that I cannot stomach cow's milk anymore. But I have yet to try the Ice Cream, after Churning I put it in a freezable container and stuck it in my kitchen freezer, I checked on it about 2 hours later and it was softer than it was when I churned it so I quickly stuck it in my big standing freezer in hopes it does freeze more solid. I have two bag fulls of sweet cherries that were on sale, We ate 1 bag already but I am so tempted to make a baked cherry dish, clafoutis are good but I want to do something different.

These sound good if I don't find anything else now just to wait for a cooling thunderstorm then I will bake and the AC will be my reward for my hard work. But I eventually need to make the best ever chocolate chip cookie recipe to sell at a flea market to benefit a new dog park trying to open in town, fortunately I can make the batter, roll out into balls then freeze, and bag and bake when I need to before the 19th when ever it does cool down a bit.

Best Ice Cream Brand

Here in PA we don't have blue bell but I was in the south for 3 months and tried a few blue bell flavors and fell in love with it. I really like the blackberry cobbler, but here I love Turkey Hill, I will buy Haagan Dazs Carmel when its on sale the pints that is. Breyers is pretty good I like the different flavors they have and ones with mix ins are better than plain, hate Edy's and do buy blue bunny if I have a coupon and go with a fruity flavor for milkshakes

Foods you can't keep in the house because you can't stop yourself eating them

Right now I am hooked on burrata and craving it so bad but I'm heading to DeLallo's in Jennette, PA for some on Monday, only place close by to buy it locally. But mozzeralla is standing in pretty good right now.
