Why did my creme brulee fail???

I use the ratio of 1 egg yolk for every 1/4 - 1/3 cup of cream; I don't use any whole eggs. I found this information doing a search, sorry I don't remember the source.

Dungeness Crab Prices '10

Thanks for this tip! Picked up 4 crabs, 9.93 lbs for $33 which comes out to 3.32/lb. They were in a pot of boiling water in about a half an hour from being picked up. Deeeelicious! I highly recommend these folks!

Bread Dough: Food Processor vs. Stand Mixer

I don't have a stand mixer and prefer the food processor over my bread machine. I use cold liquids to compensate for the warmth the food processor gives off so as not to get the dough so warm it kills the yeast.

I've been there a few times, it was just OK for me, the party I was with liked it a lot. There's also Pappy's on Betteravia, I would equate them with Francisco's.

My favorite breakfast spots are in Arroyo Grande and Orcutt if you're willing to travel.

How come we don't salt japanese/korean rice? or do you?

Where in the Philippines were you? I've never heard of our rice being salted unless it was something like Sinangag (garlic fried rice) or Arroz a la Valenciana (chicken and rice). If a Filipino salted their rice then they surely committed heresy!

I agree, buy an electric frying pan or a hot plate. Sorry but I don't understand your dilemma especially since you don't eat meat/fish which can involve messy clean up. As far as toast, I've done it in a dry pan.

That's exactly what I did when I was cuttting up the carcass for soup. Baked the skin in the toaster oven and had it with vinegar dipping sauce and rice.

bitter melon smoothie?

How does your uncle use the bitter melon he's growing now? The idea of using it in a smoothie or sweet juice doesn't sound appetizing and I LOVE bitter melon! I'm Filipino and we use it in many dishes. One of my all time favorites is Tinola, a chicken soup, lots of ginger and bitter melon. Using the leaves is even more bitter than the fruit. Maybe he could have the broth every day. Good luck to him!

Zojirushi breakmaker question

I have the BBCC-V20 which can make a 2 lb loaf. I looked at some of the recipes in the manual and saw a recipe calling for 5 cups of whole wheat flour. I want to try a recipe for Frisian Sugar Loaf which calls for 6 cups of AP flour. The worse that could happen is I end up mixing and kneading by hand if it's too much for the breadmaker. Thanks for your input!

I concur with other posters that it's all about the local red oak. It imparts a very unique, subtle sweet taste that can't be duplicated with other woods.

Zojirushi breakmaker question

For the life of me I can't find any reference to the maximum cups of flour this machine can handle. I could swear I read it in the manual but now can't seem to find this specific info. My guess is the max is about 4 1/2 cups of flour. Let me say though that I use the breadmaker for mixing and kneading only. I have the larger model that bakes a 2 lb loaf. Could I use a recipe using 6 cups of flour or would I be overtaxing the machine? Thanks for any input!

That's how I would describe it too although I've never oven roasted as you did. Sorry I don't have any fixes for you. I'm only familiar with kobocha in Filipino dishes such as Pinakbet or Diningding; soupy, stewy dishes.

Asian Dinner for Timid Diners

I wonder how many people you are feeding because that's enough food for an army! As someone else mentioned you know your friends best, but by your description of them it sounds like a ton of work for picky eaters. (I'll gladly eat your left overs though!) I especially would rethink the Palabok and Kare Kare. In my experience, they don't go over well with non-Filipinos and especially picky eaters. Good luck and I'd love to hear a follow up report on how it went.
